Well, it is for me anyway. I just had to bake 3 apple pies for one dinner and a luncheon. The Baking Season begins slightly before Halloween and goes through New Year's. 1 1/2 cups sugar
2/3 cup shortening or butter*
2 eggs
2 tablespoons milk
1 teaspoon vanilla extract
3 1/4 cups flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt

Early in the day or the day before:
In a large bowl cream the shortening and the sugar. Add the eggs, extract, and milk. In a medium bowl mix the dry ingredients with a wire whisk. Add the dry ingredients to the large bowl. Mix with mixer until well combined. With hands, shape dough into a ball. Wrap with plastic wrap and refrigerate for 2 to 3 hours.

Preheat oven to 400 degrees F. Lightly grease cookie sheets. Roll** half or 1/3 dough at a time, keep the rest refrigerated. For crisp cookies, roll dough, paper thin. For softer cookies, roll 1/8 " to 1/4" thick. With floured cookie cutter, cut into shapes. Re-roll trimmings and cut.

Place cookies 1/2 inch apart on cookie sheets. Decorate*** Bake 8 minutes or until very light brown. With pancake turner, remove cookies to racks; cool. Makes about 6 dozen cookies.

Basic Decorators' Icing Recipe and Instructions

Notes in the Margin:

*I've found that if you want "sturdy and tasty" cookies you should use 1/2 shortening and 1/2 butter. Shortening makes cookies sturdy and butter makes them tasty.

** Rolling Hints: Sue B. says: " Roll the dough out BEFORE chilling and then chill. I roll out my sugar cookie dough right after it is mixed up between 2 sheets of waxed paper, place it on to a flat baking sheet and put it in the fridge. Continue until all the dough is rolled out, stacking the dough sheets on top of the first one. You will go through a lot of waxed paper, but the convenience is worth it for me. When you're ready to cut them out, take out one sheet at a time, peel off the top waxed paper, lightly rub some flour onto the dough, replace the waxed paper and flip the dough sheet over. Peel off the now top sheet of waxed paper and you're ready to cut out your cookies. Collect the dough scraps in a plastic baggie so they don't dry out, re-roll when you have enough for a large sheet. I reuse some of the waxed paper sheets for re-rolling the scraps. A couple tips..... If the waxed paper slips on the counter while rolling, wipe the counter with a damp cloth. And while rolling the dough, sometimes the bottom waxed paper wrinkles, flip over the dough and waxed paper, release waxed paper and re-roll. This method of rolling out cookie dough has been a real time and mess saver for me." ShadoeRose says: "I have found that it is difficult to roll if attempting to do so immediately after taking out of the refrigerator. Take a portion of the dough out and put the rest back in the refrigerator as you don't want the dough to get to room temperature. Let the piece you are working with, warm slightly but keeping beneath room temperature. Experiment with different lengths of time of warming until you find the temperature you find the easiest to work with."

***To decorate with colored sugars: Prepare cookies by brushing with heavy cream or an egg white slightly beaten with 1 tablespoon of water. Sprinkle with decorative toppings.

***To decorate with food colors: Mix 1 egg yolk and 1/4 teaspoon water. Divide mixture among several custard cups. Tint each with different food color to make bright colors. (If paint thickens while standing, stir in a few drops of water.) Paint designs on cookies with small paint brushes.

1. Pie

Well, of course, I had to begin with the number one choice in Thanksgiving Day desserts: Pie. The most popular pie is Pumpkin Pie. Another very popular choice is Mincemeat. I also like to have an Apple Pie or a Pecan Pie on the biggest eating day of the year.

Don't forget the Whipped Cream.

2. Bundt Cake

I don't think I've ever been to a gathering of lots of people where there wasn't at least one Bundt Cake. Candied Apples are a fun treat you can also find at your local fairs and carnivals.

Prep Time: 25 minutes

Total Time: 25 minutes

Ingredients:

  • 2 cups light corn syrup
  • 1 cup sugar
  • 1/2 cup cinnamon red hot candies
  • 8 medium red apples on popsicle sticks
  • chopped peanuts (optional)

Preparation:

Put nuts in shallow dish. Line baking sheet with parchment or wax paper. In heavy saucepan, combine syrup, sugar and red hots. Bring to boil over medium high heat, stirring constantly. Cover and cook for 3 minutes to allow steam to melt sugar. Uncover and cook without stirring until soft-crack stage (270 to 290 degrees F. on candy thermometer). Cool 2 mintues then dip apples into mixture to coat. Roll in nuts. Place on prepared baking sheet to harden.

Anyone can decorate this Jack O'Lantern Face Cake.

Prep Time: 15 minutes

Total Time: 15 minutes

Ingredients:

  • Cake mix (your favorite flavor), prepared as directed in 8 or 9-inch round pan
  • White Frosting, store bought or homemade
  • yellow and red food coloring or icing paste
  • Candy corn
  • Black tube icing
  • Black licorice

Preparation:

Mix colors with frosting to make it orange. Frost cooled cake, as normal. Decorate cake. Use candy corn for teeth. Cut licorice to make triangle shaped eyes and nose. Use black tube icing to make verticle lines on face.

You can either make a double layer cake or make 2 8-inch round cakes.

This tasty recipe for Popcorn Treats only has three ingredients.

Prep Time: 25 minutes

Total Time: 25 minutes

Ingredients:

  • 6 ounce package (1 cup) butterscotch chips
  • 1/2 cup smooth peanut butter
  • 4 cups popcorn

Preparation:

Lightly grease 8-inch square pan. In a double boiler or microwave, melt chips and peanut butter. Quickly stir mixture into popcorn. Quickly scoop mixture into prepared pan. Refrigerate until Popcorn Treats are hard. Cut into squares.

Makes 9, more or less, pieces.

Here are some quick ideas for decorating cupcakes for Halloween.

Prep Time: 25 minutes

Total Time: 25 minutes

Ingredients:

  • 24 frosted cupcakes
  • chocolate cookie crumbs*
  • oval shaped cookies
  • various tubes of decorating gels and icings
  • halloween candy
  • gummy treats
  • orange and other colored sprinkles
  • pretzel sticks, optional

Preparation:

Shop at a store with the largest selection of Halloween candy. Choose candy that would look good as cupcake decorations.

I was able to purchase individually-wrapped gummy Halloween finger puppets. For stability, I stuck a pretzel stick down into an already frosted cupcake and then put the puppet on top of it.

For the tombstone cupcakes, I dipped my already-frosted cupcake into a shallow bowl of chocolate cookie crumbs turning it so crumbs covered the entire top. I wrote R.I.P. (Rest in peace) on the top of an oval cookie (Milano) and gently, but firmly pressed the cooking into the cupcake.

For the worm cupcakes, I also began with a cupcake dipped into chocolate cookie dirt. I used a pretzel stick to make a hole in the top of the cupcake. I pushed the worm half way into the hole, so it looked like it was coming out of the dirt.

Some bags of candy corn come with little pumpkins in them. You could make a little pumpkin patch on your cupcakes using these.

*You may either purchase chocolate cookie crumbs or you can make your own. I just threw an 1/2 cup of plain chocolate cookies into a small food processor and processed until they became crumbs. For a tastier "dirt", feel free to use your favorite sandwich cookie. Don't worry, the white icing won't be that visible.

  • One 14.5 ounce angel food cake mix
  • One 15-1/4 ounce can of crushed pineapple, in juice

Preparation:

Mix cake mix and pineapple together in ungreased 13x9 pan. Don't be surprised when it gets foamy. Bake in preheated 350 oven for about 20 minutes or until golden and springs back when touched in middle.

This recipe for a chocolate chip cheese ball is the perfect appetizer served with graham crackers or ginger snaps.

Ingredients:

  • 1 8-ounce package cream cheese, softened
  • 1/2 cup butter, softened
  • 1/4 teaspoon vanilla
  • 3/4 cup powdered sugar
  • 2 tablespoons brown sugar
  • 3/4 cup miniature semi-sweet chocolate chips
  • 3/4 cup finely chopped and lightly toasted pecans, walnuts, almonds or hazelnuts

Preparation:

In a mixing bowl, beat the cream cheese, butter and vanilla until fluffy. Gradually add sugars, beat just until combined. Stir in chocolate chips. Cover and refrigerate for 2 hours. Place cream cheese mixture on a large piece of plastic wrap; shape into a ball. Refrigerate for at least 1 hour. Just before serving roll cheese ball in nuts.

There are a couple of reasons my family and I just love this recipe. First of all, it's the perfect company dish. Guests are always amazed when this is served on a cold morning. Secondly, this is a recipe with some versatility. You get to choose which fruit or fruit combination goes in this dish. You can see some of our favorites below.

Prep Time: 25 minutes

Cook Time: 40 minutes

Total Time: 65 minutes

Ingredients:

  • 2-1/2 cups regular rolled oats
  • 1/4 cup oat bran
  • 1/4 cup steel-cut oats
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon or freshly ground nutmeg
  • 1/4 cup granulated sugar
  • 1/4 cup packed brown sugar
  • ----
  • 2 cups milk
  • 1 egg, beaten
  • 1/3 cup applesauce*
  • 1/4 cup cooking oil**
  • ----
  • 2 cups fresh fruit***

Preparation:

Preheat oven to 400 degrees F. Lightly grease 2-quart souffle dish. In large bowl, combine first 8 ingredients**** and mix with a wire whisk; set aside. In medium bowl, combine next 4 ingredients. Add to oat mixture and stir until just combined. Place mixture into baking dish. Bake uncovered for 20 minutes. Remove from oven to stir mixture and gently fold in fruit. Bake, uncovered, for another 20 minutes more or until top is lightly browned. Spoon into bowls. Serve with yogurt, milk or cream.
Makes 6 to 8 servings.*****

Notes in the Margin:
* The applesauce is used to cut-down on the amount of fat in the recipe. You may use 1/3 cup more oil or even sour cream.
** I've also used melted butter, cooled slightly, instead of the oil.
*** My family's favorite combination so far is 1 cup mashed bananas and 1 cup drained canned peaches. At Christmas, I've used my homemade Cranberry-Orange Relish with fabulous results. Any other fruits canned or fresh should work. Just be sure that the pieces are in sizes that can be eaten with a spoon.
**** To save time in the morning, I combine my dry ingredients the night before in a large mixing bowl that I've covered.
*****My family of 3 has it for 2 days. On the second day, I reheat the oatmeal in the microwave with a little milk mixed in.

Ingredients:

  • 2 eggs yolks
  • 1/3 cup oil
  • 2 cups milk
  • 2 cups flour
  • 1/2 teaspoon salt
  • 1 tablespoon baking powder
  • 2 egg whites, stiffly beaten

Preparation:

Preheat waffle maker. Put all ingredients, except egg whites, in a large mixer bowl. Beat on low until moistened. Increase to medium, mix until smooth. By hand, gently fold in beaten egg whites. Pour 1/2 cup batter over grids. Close waffle maker, bake until steam no longer escapes, about 3-5 minutes. Repeat. Serve Light and Crispy Belgium Waffles while hot with your favorite topping or homemade syrup.

Typically, sheet cakes are baked in a 9x13 pan. Most of the cakes I bake are taken and eaten somewhere else, so sheet cakes fit the bill perfectly. I especially like them when the people eating it are cutting their own pieces.

You can take any recipe for a 2-layer cake and make a single 9x13 cake layer. Typically, they cook in a moderate oven (350 degrees F.) for 30 to 35 minutes or at a lower temperature (325 degrees F.) for up to 45 minutes. It all depends on the denseness of you batter.

According to an email I got from a reader in Dublin, Ireland, Barm Brack "...is a Halloween recipe, and should contain a ring wrapped in greaseproof paper, which is carefully avoided by whoever is cutting the brack for tea on Halloween, so that somebody can find it in their slice. Finding the ring is supposed to mean that you will be married within the year."

Prep Time: 24 hours

Cook Time: 1 hour, 30 minutes

Total Time: 25 hours, 30 minutes

Ingredients:

  • 2-1/2 cups mixed dried fruit (currants, raisins, dates etc.)
  • 1 cup boiling black tea
  • 1 egg, slighly beaten
  • 1 teaspoon mixed spice*
  • 4 teaspoons orange marmalade
  • 1-1/3 cup superfine sugar**
  • 2-1/2 cups self-rising flour

Preparation:

Soak the fruit in the hot tea overnight.

The next day - Preheat oven to 375 degrees F. Grease a 7 or 8-inch square pan. Add remaining ingredients to soaked fruit and mix well. Pour into prepared pan and back for 1-1/2 hours. Let cool in pan on wire rack. Slice and serve buttered with a cup of tea.

*Mixed Spice
**If you can't get Superfine Sugar, just use granulated sugar.

Photo by Carroll PellegrinelliThe Halloween madness is heating-up. Last night I was sneaking around in the dark with my daughter. She decided to Ghost her two best friends. You Ghost someone by leaving a bag of candy at their door, ringing the bell and running away. They also get the official Ghosting notice so they can pass the fun on. Our only problem was that at one of the houses they never opened their door. I had to call, in a funny voice no less, and tell them to look on the front stoop. Still - a fun time was had by all. Share the fun with your kids tonight!
