I took this Caramel Cake Frosted with Whipped Cream to a luncheon. There wasn't a bite left.

Prep Time: 50 minutes

Cook Time: 25 minutes

Total Time: 75 minutes

Yield: One Three Layer Cake

Ingredients:

  • The Cake:
  • 3 cups cake flour
  • 2-1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1/2 pound (1 cup) butter (at room temp)
  • 2 cups sugar
  • 4 eggs
  • 1-1/2 teaspoon vanilla extract
  • 1 cup milk
  • The Caramel Filling:
  • 1/2 pound (1 cup) butter
  • 2 cups packed light brown sugar
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • The Whipped Cream:
  • 1 cup heavy cream
  • + or - 1/4 cup* sugar

Preparation:

The Cake:
Preheat oven to 350 degrees. Lightly grease bottom of 3-9 inch round cake pans. Line with parchment paper circles. Grease and flour parchment paper and rest of pan. In a small bowl, combine flour, baking soda and salt. Stir with wire whisk. Set aside. Cream butter and sugar. Add eggs one at a time. Completely mixing after each egg. Mix in vanilla. Add flour mixture alternately with the milk. Divide batter between pans. Bake for 25 minutes or until tested done with cake tester. Cool completely** in pans on wire racks.

The Filling:
In a medium pan, melt the butter. Once melted stir in the brown sugar and the milk. Heat for 3 to 5 minutes. Remove from heat and stir-in vanilla.

The Whipped Cream:
Whip the cream with the sugar.

Putting it all Together:
Place on cake layer on a serving plate. Spoon 1/3 of filling onto cake layer. Spread it around evenly and even allowing it to go down the sides. Add the next layer. Spoon 1/2 remaining filling on top. Spread as before. Add the last layer on top. Scrape remaining filling onto top of cake. Allow cake to cool for 15 minutes then frost with whipped cream. Serve immediately or refrigerate.

Notes in the Margin:

* - The filling is very sweet, and so you may not want a very sweet whipped cream.
** - I made my cake layers a day ahead of time. I just covered the cakes, still in their pans, with plastic wrap.

I have to thank Janet, my absolute favorite grocery store check-out clerk, for this quick and easy recipe.

Prep Time: 15 minutes

Cook Time: 35 minutes

Total Time: 50 minutes

Ingredients:

  • 1 - 8 ounce tube cresent rolls
  • 1 Granny Smith Apple, cored and peeled
  • 1/3 cup butter
  • 1/2 cup brown sugar
  • 1 tablespoon plus 1 teaspoon ground cinnamon, divided
  • 1 cup Mountain Dew soda

Preparation:

Preheat oven to 350 degrees F. Lightly grease 9-inch deep dish pie plate or 8-inch square baking pan. Separate dough into 8 triangles. Cut apple into 8 wedges. On large work service, place one wedge into one triangle. Melt butter in microwave. Stir in brown sugar and 1 teaspoon cinnamon. Spoon about 1/2 teaspoon of butter mixture over each apple wedge. Wrap dough around wedge around apple. Place in prepared pan. Repeat until all 8 are done. Sprinkle tops with remaining cinnamon. Carefully, pour Mountain Dew around rolls. Bake uncovered for 30-25 minutes or until tops are brown. Serve warm with whipped or ice cream.

Not only is this Upside-Down Apple Cake pretty, but it tastes fantastic warm with some ice cream.

Prep Time: 25 minutes

Cook Time: 40 minutes

Total Time: 65 minutes

Ingredients:

  • 6 tablespoons butter
  • 1 cup brown sugar
  • 3 apples, peeled, cored and cut into 1/2 thick slices
  • 2 teaspoon cinnamon, divided
  • 1 teaspoon ground cloves, divided
  • 1 teapsoon ground nutmeg, divided
  • one 18 ounce box yellow or white cake mix
  • 1 cup apple juice or cider
  • 2 eggs
  • 3/4 cup apple butter or sauce
  • 1/4 cup vegetable oil

Preparation:

Preheat oven to 350 degrees F. Lightly grease 9x13 pan. Melt 6 tablespoons butter in pan in oven. Remove pan from oven and sprinkle bottom with brown sugar. Place 1 teaspoon cinnamon, 1/2 teaspoon ground cloves and 1/2 teaspoon ground nutmeg into resealable plastic bag. Add apple slices and toss. Decoratively place apple slices over bottom of pan. Mix together cake mix, remaining spices, 1 cup apple juice, eggs, apple butter and vegetable oil. Once ingredients are wet, mix for 2 minutes. Carefully pour batter over apples in pan. Bake for 40 minutes or until tested done. Cool in pan on rack for 15 minutes. Dump onto serving platter. Serve warm with ice cream.

This is my most requested recipe.

Prep Time: 15 minutes

Total Time: 40 minutes

Ingredients:

  • 1 quart of strawberries
  • 1/2 cup sugar
  • --Cake Batter--
  • 1 1/4 cup flour
  • 3/4 cup sugar
  • 1/3 cup butter
  • 2/3 cup milk
  • 2 eggs
  • 2 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • --Sweetened Whip Cream--
  • 1 pint heavy whipping cream
  • 1/4 cup sugar

Preparation:

Early in the day, prepare the strawberries. Wash and cut or pull tops off of strawberries. Make at least two slices from from top to bottom of each strawberry. Put in a covered container. Pour sugar over top, cover and put in the refrigerator. During the day, shake the container occasionally.

Preheat oven to 400 degrees. Grease and flour 9" square pan. In small mixer bowl combine all cake ingredients. Beat at medium speed, scraping bowl often, until well mixed, about 2 minutes. Spread into prepared pan. Bake for 20 to 25 minutes. Cool completely in pan.

Just prior to serving whip cream and sugar.

Cut cake into nine squares. Slice each square horizontally. Place both halves on serving plate. Spoon strawberries on cake. Dollop whipped cream on top and then ladle clear strawberry juice over cream.

Total Time: 1 hour, 10 minutes

Yield: Makes One - 9-inch pie

Ingredients:

  • pastry for 2 crust pie
  • 6 cups peeled and sliced Granny Smith or other tart apples
  • 1 cup packed brown sugar (more or less according to taste)
  • 2 tablespoons flour
  • 1 tablespoon lemon juice
  • 1/2 teaspoon cinnamon*
  • 1/4 teaspoon nutmeg*
  • 1 tablespoon butter
  • milk
  • sugar
  • * 3/4 teaspoon Apple or Pumpkin Pie Spice may be substituted for these spices

Preparation:

Preheat oven to 425 degrees F. Put bottom crust in pie pan. Mix all the rest of the ingredients, except the butter, in a bowl. Pour the mixture into crust. Dot with butter. Place on top crust. Flute edges of pie crust. Cut vents in top crust. Using a pastry brush, paint the top crust with milk. Sprinkle sugar. Bake for 15 minutes. Remove from oven and cover outside edge of crust. Finish baking pie for 25 to 30 more minutes.

Cook Time: 30�minutes

Total Time: 1�hour, 5�minutes

Yield: 12 - 16 pieces

Ingredients:

  • CAKE -
  • 2 cups flour
  • 2 cups sugar
  • 1/2 cup butter
  • 1/2 cup vegetable oil
  • 4 tablespoons cocoa powder
  • 1 cup water
  • ---
  • 1/2 cup buttermilk
  • 2 eggs
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • ICING -
  • 1/2 cup butter
  • 4 tablespoons cocoa powder
  • 6 tablespoons milk
  • ---
  • less than 1 pound box powdered sugar
  • 1 teaspoon vanilla
  • 1 cup chopped nuts, lightly toasted
  • 1 cup flaked coconut

Preparation:

For Cake -
Preheat oven to 350 degrees. Grease a 9 x 13 pan. Combine flour and sugar. Set aside. Put butter, oil, cocoa and water in pan. Bring to a rapid boil. Pour into flour and sugar mixture. Mix well. Add last set of ingredients. Mix well. Put into pan and bake for 30 minutes.

For Icing -
Bring butter, cocoa and milk to a boil in same pan from above. Stir to prevent burning. Remove from heat and add rest of ingredients. Spread on hot cake.

I decided to make this recipe for Five Minute Fudge when I discovered a bag of marshmallows that had seen better days. Plus, add to that I've got some leftover chocolate chips and one too many cans of evaporated milk. It truly doesn't take much longer than five minutes to make this tasty fudge.

Step by Step Photo Instructions Showing How to Make Shortbread

Prep Time: 15 minutes

Cook Time: 30 minutes

Total Time: 45 minutes

Ingredients:

  • 2-1/2 cups flour
  • 1/2 cup sugar, plus
  • 1 cup butter, cold and cut into cubes
  • 1 cup mini chocolate chips

Preparation:

Preheat oven to 350 degrees f. Place flour and sugar in large bowl. Mix with wire whisk. Add cut butter. Use a pastry blend, your fingers or food processor to blend butter into flour/sugar mixture. Hand stir in the mini chocolate chips. Dump mixed ingredients into 9x13 pan. Press down with fingers and level-out. Bake for 25 to 30 minutes or until lightly brown on top. Remove from oven. Cut shortbread into squares and then into triangles while the shortbread is still warm. Sprinkle with sugar, if desired. Cool Chocolate Chip Shortbread completely in pan.

  • 1/2 teaspoon nutmeg*
  • 1/2 teaspoon ginger*

  • 4 eggs
  • 1 cup butter, melted and cooled or 1 cup vegetable oil
  • One 15-ounce can solid packed pumpkin or fresh puree
  • ----
  • 1 cup chopped pecans, lightly toasted
  • ----
  • Optional: Cream Cheese Glaze

Preparation:

Preheat oven to 350 degrees F. Grease and flour bundt cake pan. In a large bowl with a wire whisk, combine first set of ingredients. In a small bowl, combine last set of ingredients. Hand whip until combined. Add wet ingredients to dry ingredients. Mix until just combined. Carefully stir in nuts. Pour into prepared bundt cake pan. Bake Pumpkin Bundt Cake for 45 to 50 minutes. Cool in pan on wire rack for 10 minutes. Remove Pumpkin Bundt Cake from pan and finish cooling on rack.

Top cooled cake with Cream Cheese Glaze**.

Notes in the Margin:

* You may substitute any combination of those spices according to taste as long as they equal 3 teaspoons. Pumpkin Pie or Apple Pie Spice may also be substituted.
** I also topped my cake with a few toasted pecans. I always do this when I'm taking a cake some place and I'm not going to be there while it's eaten. This way people are alerted to the fact that there are nuts in the cake.

Lemon Lime Pound Cake is a very tasty recipe made with a cake mix and baked in a bundt cake pan.

I took this cake to a potluck supper. Before dinner several friends confessed to being too full to even enjoy dinner that evening. It was amazing that although they weren't able to eat much dinner, they were able to eat two pieces of this Lemon Lime Pound Cake!

Prefer to make your cakes from scratch? Try this from-scratch recipe for 7UP Pound Cake, it's similar to this recipe for Lemon Lime Pound Cake. It's the one my mother used to make for me.

Prep Time: 15 minutes

Total Time: 15 minutes

Yield: 12 Servings

Ingredients:

  • 18 ounce yellow cake mix
  • 4-serving size vanilla instant pudding and pie filling mix
  • 4 large eggs
  • 1 cup lemon lime flavored soda
  • 1/3 cup vegetable oil
  • ----
  • 1 lemon, juice and zest, divided
  • 1 lime, juiced and zest, divided
  • 1 cup powdered sugar, sifted
  • Possible additional lemon and/or lime juice needed

Preparation:

Preheat oven to 350 degrees f. Grease and flour Bundt or tube pan.

Place first set of ingredients into large bowl. Add 1/2 zest from both lemon and lime. With electric mixer, mix for 2 minutes. Carefully, pour into pan. Bake for 50 to 60 minutes. Test for doneness with tooth pick. Cool in pan on wire rack for 25 minutes. Invert on rack and cool completely. Once cool place on serving plate.

In glass measuring cup, measure combined juices. Add additional juice, if necessary, to make 1/4 cup. Stir in remaining zest and powdered sugar until smooth. Spoon the glaze over the Lemon Lime Pound Cake. Use a pastry brush, if necessary, to get glaze off of plate and onto cake.

Everyone just loves this Pumpkin Roll Cake made in a jelly roll pan.

Prep Time: 1 hour

Cook Time: 15 minutes

Total Time: 1 hour, 15 minutes

Ingredients:

  • 3 eggs
  • 1 cup sugar
  • 2/3 cups pumpkin
  • 2/3 cups flour
  • 1 teaspoon soda
  • 1 teaspoon pumpkin pie spice
  • 1 cup powdered sugar
  • 8 ounces cream cheese
  • 4 tablespoons butter
  • 1 teaspoon vanilla

Preparation:

Preheat oven to 350 degrees. Mix flour, soda and pumpkin pie spice and set aside. Blend eggs, sugar and pumpkin. Add flour mixture and mix well. Spread onto a well-greased jelly roll pan allowing mixture to taper at one end (helps with the rolling once cooked.) Bake for 10-15 minutes.

Mix remaining ingredients and set aside in refrigerator. Once pumpkin cake is cooled, turn out on a cheese cloth lightly dusted with powdered sugar, roll loosely and let cool (this will help form the roll). Once cooled to room temperature, mix cream cheese mixture to soften. Unroll pumplin cake and spread cream cheese mixture leaving a 1/4" border (the cream cheese will spread and may ooze out the sides once you start to roll. This will save some filling.) Roll pumpkin starting from the tapered end. Powder outside of roll before wrapping in wax paper or foil so not to stick to wrapping and chill for at least 1 hour. When ready to serve slice 1/4" thick and garnish with powdered sugar and cinnamon.

I still can't get enough caramel during this time of year. This recipe for Caramel Cake Frosted with Whipped Cream begins with a delicate cake, topped with freshly made caramel and frosted with whipped cream to cut down on some of the sugar from the frosting. It's the perfect cake for this time of year.

This was my mother's favorite recipe. It's another light cake. Don't let the name fool you; you won't get tipsy from this cake. There's only 2 tablespoons of rum in it.

I came up with this recipe after deciding I wanted more pineapple in my cake. It's a very moist cake. If you like pineapple, you'll like this cake.

Dump cakes use the cake mix in a different way. The cake mix is sprinkled on top of the other ingredients. Then something wet like melted butter is poured on top of the mix. Once baked, the cake mix turns into a crust.

Make your own Mini Tart Shells with this recipe. They're great filled with treats like pecan pie filling to make Pecan Tassies or Lemon Curd to make miniature Lemon Pies.

Step by Step Photo Instructions

Prep Time: 30 minutes

Cook Time: 25 minutes

Total Time: 55 minutes

Ingredients:

Preparation:

In a mixing bowl, cream butter and cream cheese. Gradually add flour until well mixed. Form into a ball and refrigerate for 15 minutes. Remove from fridge. Roll into 2-inch balls and place in 24-cup miniature muffin tin. Preheat oven to 350 degrees F. or 325 F. for a dark pan. Use fingers to smash balls into tart shell shape. Fill shells with approximately 2 cups of filling, as desired. Depending on filling, filled shells are baked from 15 to 25 minutes. Unfilled shells can be baked for 5 to 10 minutes.

Nothing can replace the taste and creaminess of real whipped cream.

Difficulty: Easy

Time Required: less than 15 minutes

Here's How:

  1. Begin with thoroughly chilled cream.
  2. Chill mixing bowl and beaters.
  3. Whip the cream on medium speed.
  4. Add sugar (2 tablespoons to 1/4 cup granulated) and any flavorings while whipping cream.
  5. Cream is whipped when soft peaks form.
  6. For vanilla-flavored whipped cream, add 1 teaspoon of vanilla extract.
  7. For a chocolate flavor add 2 tablespoons cocoa with 2 tablespoons of sugar.
  8. For coffee-flavored cream add 2 teaspoons instant coffee granules and 2 tablespoons sugar.
  9. One teaspoon to 1 tablespoon of your favorite liquor and liqueur flavors work as well.

Tips:

  1. Use cream that has either a 36 to 40 percent milk-fat content (heavy cream) or 30 to 36 percent (light whipping cream).
  2. Don't over-whip the cream. It turns to butter.
  3. Sweeten whipped cream to taste, and depending on what it accompanies.

  • Hand or Stand Mixer
  • Mixing Bowl

Amazingly, this Caramel Apple Salad a.k.a. Snickers Salad is quite tasty despite it's unusual combination of ingredients. I think of it more as a dessert than a salad. Thanks Lori for the recipe.
