Basic Bread Pudding

It's amazing such simple ingredients can made such a rich dessert. Thanks to Aileen F. for sharing her recipe for Basic Bread Pudding.

Prep Time: 35 minutes

Cook Time: 45 minutes

Total Time: 1 hour, 20 minutes

Ingredients:

  • 5 eggs
  • 3/4 cup sugar
  • 2-1/2 cups milk
  • 2-1/2 cups heavy cream
  • 1 tablespoon vanilla extract
  • 3/4 teaspoon cinnamon or freshly gound nutmeg
  • 1/4 teaspoon salt
  • 8 cups day-old French bread, divided
  • 3/4 cup raisins* or other dried fruit
  • 1 cup chopped and lightly toasted nuts (pecans, walnuts, hazelnuts etc)
  • 2 tablespoons butter
  • 3 tablespoons cinnamon-sugar mixture**

Preparation:

Preheat oven to 325 degrees F. Grease a 13x9 pan. With hand mixer or wire whisk beat eggs until lemon colored. Add sugar and beat until dissolved. Next add milk and cream. Combine. Add vanilla, cinnamon and salt. Stir in 6 cups of bread. Allow to rest for 20 minutes. Stir in dried fruit* and nuts. Dump bread mixture into prepared pan. Top with remaining bread. Press bread down. Brush dry bread pieces with melted butter. Sprinkle with cinnamon-sugar mixture**. Bake for 45 minutes or until edges are done and center still shakes a little. Allow to cool for 30 minutes before serving.

*If you want more flavorful raisins, plump them. Cover the raisins with very warm water and allow sit for 10 minutes. Instead of water, liquor or juice can also be used. If using room temperature liquid, soak raisins for 25 minutes.
**Instead of purchasing the cinnamon-sugar mixture, you can make your own. Mix 2 tablespoons of sugar with 1 tablespoon cinnamon. More or less cinnamon may be used. Just be sure to keep to the total amount the same.

Servings depending portion size, apprx. 12 to 16.

Serve warm with a Hard Sauce
or a Caramel Rum Sauce.

Pain Perdu is a deep-fried version of French Toast.

Prep Time: 35 minutes

Cook Time: 4 minutes

Total Time: 39 minutes

Ingredients:

  • 5 eggs
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 2 tablespoons orange flower water or orange juice
  • 1 teaspoon grated, fresh orange rind
  • 8 half-inch thick sliced of day-old French or Italian bread*
  • 1 cup butter-flavored shortening
  • powdered sugar

Preparation:

In a large bowl, beat eggs, salt, and sugar until frothy. Add milk, orange flower water and orange rind, mix until combined. Place bread in a shallow baking pan. Pour egg mixture over bread; let soak for 1/2 hour.

In a heavy skillet, melt shortening. Fry bread 2 minutes on each side or until golden brown. Drain on paper towels and keep warm.

Serve either with powdered sugar or your favorite syrup.

* Some people prefer the bread with the crusts removed. I thinks the crust is the best part.

Scrape the glaze back into the measuring cup that held the juice. Then carefully pour glaze onto the cake. This particular cake, a Lemon Pound Cake was baked in a NordicWare Rose Bundt Pan. Since the pan makes special ridges in the cake, it's best to fill those areas first with the glaze. With different shaped cakes, the glaze may be drizzled over the top and allow for it to drip down the sides. Another option is to "paint" on the glaze using a pastry brush. There are even other cakes where holes are poked into the cake allowing for the glaze to go down into the cake as well.

Thanks to Fr. Dominic for allowing us to use his recipes for this Sweet Crust Pizza. They are from his outstanding pizza cookbook called: Thursday Night Pizza, Fr. Dominic's Favorite Pizza Recipes, Reedy Press, 2010.

One way to use this Sweet Pizza Crust is to make an Apple Pie Pizza.

Let Dough Rise for at Least: 2 hours

Total Time: 2 hours

Yield: Two 12"-14" Medium-Thick Crusts

Ingredients:

  • Sweet Crust
  • 1 package active dry yeast
  • 1/4 cup brown sugar
  • 3/4 cup lukewarm water
  • 1/2 cup lukewarm milk
  • 1-1/2 teaspoons salt
  • 2 tablespoons melted butter
  • 3-1/2 to 4 cups flour

Preparation:

In a medium-sized bowl, stir to dissolve yeast and brown sugar in warm water; let stand for about 5 minutes. Stir in milk, salt, and melted butter. One cup at a time, add 3 cups of flour, mixing each time until flour is thoroughly incorporated. Turn dough out onto a lightly floured board and knead for 5 to 8 minutes, adding small amounts of flour to keep the dough manageable. Lightly oil the surface of the dough and place in a medium-sized clean bowl and cover with plastic wrap. Let Sweet Crust Pizza rise in the refrigerator for at least 2 hours or overnight.

Makes two 12" to 14" Sweet Crust Pizzas medium-thick crusts, or three smaller ones

Note from Fr. Dominic: "This is a basic sweet dough recipes, really --- if you added an egg you could make dinner rolls! --- but makes a nice crust for dessert pizzas."

Thanks to Lynn B. for submitting this recipe for Hearts-Filled-With-Love Cookies, a double layer, rolled cookie filled with either raspberry or strawberry jam.

Prep Time: 24 hours

Cook Time: 10 minutes

Total Time: 24 hours, 10 minutes

Ingredients:

  • 2-1/2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup shortening
  • 1 cup sugar
  • 1 well-beaten egg
  • 2 tablespoons evaporated milk
  • 1-1/2 teaspoon vanilla
  • Strawberry or seedless Raspberry Jam
  • powdered sugar

Preparation:

Sift flour, baking powder and salt. Set aside. Cream together shortening and sugar. Add egg, evaporated milk and vanilla. Mix well. Gradually add flour mixture until completely combined. Form into a ball. Put in an airtight container overnight in the refrigerator.

Preheat oven to 350 degrees F. Roll-out dough and cut-out with a heart-shaped cookie cutter. Bake on lightly greased cookie sheets for 8 to 10 minutes.

When cool, assemble cookies. Place a teaspoon of jam on the bottom of a cookie, then cover with another cookie. The tops of the cookies should be facing outward on both top and bottom. Sprinkle with powdered sugar.

  • 2 pound powdered sugar
  • 1 cup butter, melted
  • chocolate almond bark

Preparation:

Mix all ingredients together except for chocolate. Shape into 1-inch balls. Melt chocolate in microwave and dip balls in being sure to cover completely. Put on wax paper to harden.

Looking for a cool and creamy cake, which would be perfect served on a warm evening? Try this recipe for Mandarin Orange Cake made from-scratch. It's very similar to the Pig Pickin' Cake.

Prep Time: 25 minutes

Cook Time: 30 minutes

Total Time: 55 minutes

Yield: 12 - 16 servings

Ingredients:

  • 2-1/2 cups flour
  • 2-1/4 teaspoons baking powder
  • 3/4 cup butter, room temperature
  • 2-1/2 cups sugar
  • 4 eggs
  • 11-ounce can mandarin oranges, undrained
  • 2 cups whipping cream
  • 3.4 ounce (4-serving size) box instant vanilla pudding
  • 8-ounce can crushed pineapple, undrained

Preparation:

Cake:
Preheat oven to 350 degrees F. Grease and flour two 8-inch round cake pans. In a small bowl, whisk flour and baking powder. Set aside. Cream butter and 2 cups of sugar. Add eggs one at a time until all combined. Add entire can of mandarin oranges. Beat into batter, slightly crushing up oranges. Slowly add flour mixture until well mixed. Divide batter between 2 pans. Bake for 25 to 30 minutes. Cool in pans for 2 minutes. Remove from pans and completely cool on wire rack. Place on cake layer on serving plate. Ice with 1/3 of frosting. Place second layer on top. Ice top of cake with 1/2 of remaining frosting. Ice the sides of the cake with final amount of frosting. Refrigerate for at least one hour prior to serving. Store leftover cake in refrigerator.

Frosting:
Whip cream with remaining 1/2 cup of sugar and pudding mix until stiff peaks form. Hand stir-in pineapple and juice.

I used to use a small zester for zesting. Once I found the Microplane my other zester went into the trash. Using the Microplane is effortless.

If either zester isn't available, just use a paring knife to peel the lemon. Be sure to not get the pith, or white portion of the lemon. (The white portion is very bitter.) Then cut the lemon peel into very small pieces.

Orange Chess Pie Photo by Carroll PellegrinelliI brought this Orange Chess Pie to a potluck luncheon. Several of the women had never even heard of a chess pie. Never the less, they all loved it. I kept hearing over and over, it was perfect because it's not too sweet. Unfortunately for my family, I was only allowed to bring home a tiny sliver. It didn't matter, because this Orange Chess Pie is so easy to make that I can make another one in no time.

Total Time: 1 hour, 45 minutes

Ingredients:

  • 24 ounces semisweet chocolate chips
  • 1-1/4 C. evaporated milk
  • 1/4 C. sugar
  • 2 t. vanilla extract
  • 1 T. fruit flavored liqueur
  • Dippers: cubed pound cake, fruit, pretzels, cookies, marshmallows, Biscotti

Preparation:

Place ingredients (except dippers) into a crockpot. Cover and cook on high for 30 minutes. Stir well. Cook 1 more hour on low. Use skewers or small tongs to dip into the chocolate.

This is my most requested recipe.

Prep Time: 15 minutes

Cook Time: 25 minutes

Total Time: 40 minutes

Ingredients:

  • 1 quart of strawberries
  • 1/2 cup sugar
  • --Cake Batter--
  • 1 1/4 cup flour
  • 3/4 cup sugar
  • 1/3 cup butter
  • 2/3 cup milk
  • 2 eggs
  • 2 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • --Sweetened Whip Cream--
  • 1 pint heavy whipping cream
  • 1/4 cup sugar

Preparation:

Early in the day, prepare the strawberries. Wash and cut or pull tops off of strawberries. Make at least two slices from from top to bottom of each strawberry. Put in a covered container. Pour sugar over top, cover and put in the refrigerator. During the day, shake the container occasionally.

Preheat oven to 400 degrees. Grease and flour 9" square pan. In small mixer bowl combine all cake ingredients. Beat at medium speed, scraping bowl often, until well mixed, about 2 minutes. Spread into prepared pan. Bake for 20 to 25 minutes. Cool completely in pan.

Just prior to serving whip cream and sugar.

Cut cake into nine squares. Slice each square horizontally. Place both halves on serving plate. Spoon strawberries on cake. Dollop whipped cream on top and then ladle clear strawberry juice over cream.

Here are three methods to melt chocolate.

Difficulty: Easy

Time Required: 10 minutes

Here's How:

  1. Melt in the Microwave: Place unwrapped chocolate in a microwave-safe dish.
  2. Heat until melted (about 1 to 2 minutes for one chocolate square).
  3. Add 10 seconds per extra square.
  4. Melt in the Double Boiler: Place unwrapped chocolate in top pan.
  5. Melt over hot water.
  6. Stir for 10 to 12 minutes until melted.
  7. Melt in the Saucepan: Place unwrapped chocolate in pan.
  8. Melt over very low heat.
  9. Stir constantly.

Tips:

  1. Moisture can cause chocolate to become stiff and lumpy.
  2. Add 1 teaspoon of shortening for each ounce of chocolate.
  3. Stir chocolate until smooth again.

I took this cake to my daughter's school for a teacher's appreciation luncheon. The woman in charge of the luncheon emailed and said that several of the teachers asked for the recipe. She must of enjoyed it also, because she made this Easy Orange Cake for her family that night.

Step by Step Photo Instructions

Prep Time: 20 minutes

Cook Time: 40 minutes

Total Time: 1 hour

Yield: 24 Servings

Ingredients:

  • 8- 1 ounce squares of unsweetened chocolate
  • 1 cup butter
  • 5 eggs
  • 3 cups sugar
  • 1 tablespoon vanilla
  • 1-1/2 cups flour
  • 1 teaspoon salt
  • 2-1/2 cups chopped pecans or walnuts, lightly toasted

Preparation:

Preheat oven to 350 degrees F. (or 325 degrees F. for glass or dark metal pan). Grease a 9 x 13 pan.

Melt chocolate and butter in a saucepan over low heat; set aside. In a mixer, beat eggs, sugar and vanilla at high speed for 10 minutes**. Blend in chocolate mixture, flour and salt until just mixed. Stir in the nuts. Pour into prepared pan.

Bake Ultimate Brownies for 35-40 minutes. (Don't over bake.) Cool and frost if desired, but that is not necessary.

** It's not required, but this is when it's very nice to own a stand mixer.

This is one of the best brownie recipes.

Truffles (not to be confused with the fungus pigs snort after) are what sweet lovers fantasize about. They are opulent orbs of smooth chocolate. Truffles must be eaten ever so slowly to get every flavor sensation, as they slide past your lips and into your mouth.

As magnificent as truffles are, don't be intimidated. You can easily make your own. A typical recipe starts with heavy cream, which is brought to a boil, and then combined with chocolate (semi-sweet, bittersweet, unsweetened or white) to make the ganache. After the ganache is cooled completely, it's time to make the orbs. Once formed, they are frozen until firm. Next, the truffles might be dipped in some melted milk chocolate and tossed in cocoa powder. Other truffles might be rolled in ground nuts, toasted coconut, or chocolate jimmies. Truffles are best stored in the refrigerator. It is a guarantee; they will not be there very long.

In making these chocolate wonders, here are a few tips. Always use the type of chocolate called for in the recipe. As an example, semi-sweet and bittersweet chocolate are not the same. Bittersweet has more cocoa in it, which will make for a stronger chocolate flavor. Another tip is to buy the best chocolate you can. The higher quality chocolate, the better the truffle. Get the best cream you can, as well. Gourmet grocery stores usually offer creams with a fat count of 40 percent. Regular grocery store whipping or heavy cream has a 36 percent fat count. The last tip deals with forming the orbs. There are many ways to do this. One way is to take two teaspoons and scoop up the ganache. Then roll it in a ball. Another way is to use a pastry bag and just squirt out was is needed. Then, with your hands, round out the balls. Lastly, there is the "just scoop out some ganache, and roll it between your palms" method. Try all of the methods, and use the one that works the best for you.

Once you've mastered the simple art of making truffles, there is little else to be done for a wonderful presentation. Metallic candy wrappers or miniature muffin cup liners make great holders. You can serve them, in their holders, on a doily lined silver tray. They also make perfect gifts. Place the truffles, in their wrappers, in a pretty box. Close the box and add a silk bow. This is one gift you'll know that will be greatly appreciated.

Here is a tasty fall recipe for Apple Spice Cake.

Prep Time: 20 minutes

Cook Time: 40 minutes

Total Time: 1 hour

Ingredients:

  • 3 medium apples, peeled, cored, thinly sliced
  • 2 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon ground allspice
  • 2 cups cake flour
  • 2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 3 large eggs
  • 3/4 cup apple schnapps, apple juice, milk, water or a combination

Preparation:

Toss apple slices with spices and set aside. Preheat oven to 350 degrees F. Grease 9x13 pan. In a medium bowl, combine flour, baking powder and salt with a wire whisk. In a large bowl, cream together butter and sugar. Add eggs one at a time. Add flour mixture alternately with apple schnapps. Stir in apple slices. Bake Apple Spice Cake for 30 to 38 minutes.

Amount of servings will depend on how many slices cut.

Optional: Serve Apple Spice Cake with a dollop of whipped cream and spinkled with cinnamon.
