This recipe for Three Layer Chocolate Cake should be a standard in anyone's baking repertoire.

Prep Time: 20 minutes

Total Time: 20 minutes

Ingredients:

  • 3/4 cup unsweetened Dutch processed cocoa
  • 1 cup boiling water
  • 1/2 cup plus 2 tablespoons butter
  • 2 cups sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1-3/4 cups flour
  • 1-1/2 teaspoons baking soda
  • 1/4 teaspoon salt
  • 3/4 cup milk
  • 1/4 cup sour cream

Preparation:

Preheat oven to 350°F. Grease and flour three 9-inch round baking pans.

Mix cocoa with boiling water in small bowl; stir until smooth. Set aside to cool.

Cream butter and sugar. Add eggs, one at a time, beat well after each addition. Stir in vanilla. Gradually add cocoa mixture. Combine well.

With wire whisk, combine flour, baking soda and salt. Alternately add flour mixture with milk and sour cream to butter mixture. Beat until blended. Pour batter into pans.

Bake 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool cake 10 minutes. Remove from pans to wire racks. Cool completely. Frost cake as desired.

1 cup fruit*
3/4 cup sugar
1/3 cup water

Cook fruit with sugar and water until thick. Smash fruit while cooking.

For a thin syrup - press through strainer. For a thicker syrup, process cooked syrup in a food processor.

Serve warm. Store in refrigerator.

*Berries, cherries, pineapple, mango, papaya, bananas etc.

The day's finally come. With excitement and great sadness, our lives have entered a new dimension. Once my baby put her foot on that first step, she rode out of my life (until 2:40 p.m.) on a big yellow school bus. It's the beginning of 13 years of first days back to school. Will she have a good time? Will she learn a lot? Will she make new friends? Will she be scared? Will she remember I still love her? Of course, she will, because I've put a little love in her lunch box for her first day back to school.

It doesn't take much to say "I love you" in their lunch boxes, lunch bags or brown bags. Here are a few ideas just for you:

Let Them Choose Their Own Lunch Box

Making decisions help make children more confidant. Even better than choosing a lunch box, why not have them help you make one. It's so easy. Just follow these simple step-by-step instructions complete with photos from our guide to Sewing, Debbie Colgrove.

Adding a little note or photo will do the trick.

Make sure it isn't so small they'll miss it, but not too large so that their classmates won't laugh at them. Photographs work good, too. Pictures of your child at an event having fun or them with the family pet, all say love.

Another way to show your love is in the presentation of what's in the lunch box.

Cookie cutters are not just for sugar cookies anymore. Use them to make creatively shaped sandwiches. Even the meat or cheese can be cut in this manner, as well. I've also used them to cut shapes from banana bread. Other quick or sweet breads will work, too. Use colorful (rose, purple, yellow, green and so on) plastic wrap to wrap the food. Colorful napkins add a nice touch.

Any child will feel special when you bake for them.

Here are just some of the goods I plan to add to my daughter's lunch box:
  • Bread
    Whether it's from scratch or a machine, it's still made with love.
  • Brownies
    Nothing beats chocolate and brownies are the best way to get it.
  • Cake Mix Cookies
    There's a tremendous variety of flavors that can be made with this recipe.
  • Golden Treasure Cookies
    Your child will feel treasured with these cookies made with chunks of chocolate and lots of brown sugar.
  • Granola Bars
    These are a healthy and very satisfying treat for any lunch box.
  • Peanut Butter Cookies
    These are my favorite mood food cookies.
  • Scottish Shortbread
    These are a great little treat for the little ones in your life.

These Blueberry Pancakes will brighten-up even the darkest mornings.

Prep Time: 15 minutes

Cook Time: 05 minutes

Ingredients:

  • 1-3/4 cups flour
  • 2 tablespoons sugar
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 2 eggs
  • 1-3/4 cups milk
  • 1/4 cup vegetable oil
  • 1 cup fresh or frozen (thawed and drained) blueberries

Preparation:

In a large bowl, combine dry ingredients with wire whisk. In a small bowl, with an electric mixer, combine eggs, milk and oil. Slowly add wet ingredients to dry ingredients. Hand mix only until large lumps are gone. Gently fold-in blueberries.

Heat griddle or frying pan. Grease pan lightly. Using a 1/4 cup measuring cup to form each pancake in pan. Bake until bubbles appear and edges are brown. Flip pancakes and cook for a minute or so longer.

Makes about 16 4-inch pancakes.

Tres Leches Cake, a Mexican favorite, is made with a mixture of 3 milks: heavy cream, evaporated and sweetened condensed milk. Thanks to Tiburcio for posting her recipe in the forum.

Prep Time: 40 minutes

Cook Time: 25 minutes

Total Time: 65 minutes

Yield: 16 large pieces

Ingredients:

  • Cake ingredients -
  • 9 eggs
  • 1-1/2 cups sugar
  • 12 tablespoons butter, softened
  • 2 cups flour
  • 1-1/2 teaspoon baking powder
  • 1 cup milk
  • 1 teaspoon vanilla
  • 1 teaspoon cream of tarter
  • Three Milks -
  • 2 cups heavy cream
  • 1- 5 ounce can evaporated milk
  • 1- 14 ounce can sweetened condensed milk
  • Cream Icing Ingredients -
  • 2 cups heavy cream
  • 1/3 cup sugar
  • Optional: sliced strawberries for decoration

Preparation:

For cake: Preheat oven to 350. Separate egg yolks and whites, keeping whites at room temp. In bowl of an electric mixer, cream sugar and butter together until pale yellow and fluffy. Add egg yolks and beat until fluffy again, 2-3 minutes on medium-high speed. In a separate bowl, combine flour and baking powder. In a third bowl, mix milk and vanilla. Alternately add the flour mixture and the milk mixture to the butter mixture (a fourth at a time) until all are combined. Beat until smooth after each addition. Beat egg whites with cream of tartar until soft peaks from and, using a large spatula, gently but thoroughly fold into flour and butter mixture. Grease bottom of a 9 x 13 inch metal baking pan. Pour in batter and bake for approximately 25 minutes, until golden brown. Allow to cool. (May also be baked in an 11.5 by 17.5 inch sheet pan for 20 minutes; this size rises very evenly, helpful for inexperienced cooks.

For Milks: Stir the milks together thoroughly; do not beat. Don't refrigerate canned milks before using.

Creamed Icing: Whip cream and sugar together until stiff. When cake is cool, slice or peel off the thin top crust. Ice sides first, creating a small lip on top onto catch milk mixture. Pour milk mixture evenly over top of cake (if necessary, poke holes in cake with a knife or toothpick to facilitate soaking; you will probably need only 3/4 of mixture). Finish icing top. Refrigerate. (if using an 11.5 x 17.5 inch pan, cut cake in half to make 2 equal pieces. Soak first layer, ice top if desired, and place second layer on top of it. Proceed as above. Serves 12.

Sixteenth Birthday Cake Photo by Carroll PellegrinelliYou know how it is, my daughter wanted a store-bought birthday cake for her teenage party. A homemade cake just wouldn't do. She choose a purple cake, with multicolored polka-dots. As you can see, the cake is very cute. Too bad it didn't taste very good. The cake itself was good, but forget the purple icing. Purple icing tasted worse than red or black icing. It was awful!

After eating a slightly spicy meal, I suggested that we needed something cool and creamy like the Pig Pickin' Cake" for dessert. My daughter doesn't care for artificial whipped topping so I came up with this from-scratch version of a Mandarin Orange Cake. My daughter admitted my cake was much, much better than the store-bought cake.

Kourambiethes is a wonderful powder sugar-covered Greek pastry cookie.

Prep Time: 25 minutes

Cook Time: 15 minutes

Total Time: 40 minutes

Ingredients:

  • 2 cups unsalted butter
  • 3/4 cup powdered sugar
  • 1 egg yolk
  • 1 jigger of Brandy
  • 4-1/2 cups (apprx.) flour
  • whole cloves (optional)
  • powdered sugar

Preparation:

Preheat oven to 350 degrees F. Cream butter and sugar. Add egg and Brandy. Gradually only add enough flour to make a soft dough. Chill. Shape dough into crescents or 1-1/2 inch balls. (If using cloves, place one in each cookie before baking.) Place on ungreased sheets. Bake for 12-15 minutes. They won't be brown. Cool for 4 to 5 minutes and then sift powdered sugar over them.

Thanks to Lila for contributing her recipe. She says that "for Easter I put them in pastel cupcake papers. You can substitute orange juice for brandy. If there is no brandy around rye whiskey will do."

For Thanksgiving, I wanted to bake a Blackberry Pie for a dear friend and neighbor. Unfortunately, I was in a hurry and was only able to find one 1/2 pint of blackberries. Since she loves all berries, I was able to improvise and came up with this multi-berry Fruits of the Forest Berry Pie.

Prep Time: 20 minutes

Cook Time: 45 minutes

Total Time: 65 minutes

Ingredients:

  • double 9-inch pie crust pastry
  • 1/2 pint blackberries
  • 1/2 pint raspberries
  • 1/2 pint blueberries
  • 1- 21 ounce can strawberry pie filling
  • milk
  • sugar

Preparation:

Preheat oven to 425 degrees F. Wash and drain berries. Press bottom pie dough into glass pie plate. Place berries in pie crust in even amounts. Pick strawberries out of pie filling. Spread out strawberries amoung other berries. Fill pie shell with rest of can filling. Only fill to just under inside rim of pie plate. (Save remaining filling for other uses.) Cover with either latticed or vented top crust. Paint pie crust with milk and sprinkle with sugar. Bake Fruits of the Forest Berry Pie for 40-45 minutes. Tent edges of pie crust if necessary.

  • 1/2 cup semisweet chocolate chips
  • 1/4 cup dark chocolate*
  • 3 tablespoons butter
  • 1 tablespoon light corn syrup
  • 1/4 teaspoon extract (vanilla or one that better suits what is being glazed)

Preparation:

Place all ingredients in pan over top of pan of hot water. Stir occasionally until chocolate is melted and ingredients are combined.

Drizzle over bundt cakes, cookies, doughnuts etc.

Makes 1 Cup Thick Chocolate Glaze

There's nothing like a bowl of homemade ice cream with its cold, creamy texture balanced with that fresh taste. If you crave making your own homemade ice cream all you need is a good ice cream freezer, a great recipe, the best ingredients and these tips.

  1. Be familiar with the directions of your ice cream maker prior to choosing a recipe.
  2. Make sure ice cream base is cold before putting it in the machine. Refrigerating overnight is preferred, but at least an hour or two will suffice.
  3. Chill ice cream machine bowl and dashers/beaters prior to adding the ice cream base. This depends on your ice cream machine model and make.
  4. Only fill ice cream container 3/4 full. Air is incorporated while mixing the ice cream base and it will rise to the top of the container.
  5. Fruit should be ripe prior to adding it to the ice cream base. Puree or mash at least half, if not all of the fruit, for a deeper fruit flavor. Adding a little fruit extract will also enhance the flavor.
  6. Additives such as chocolate, cookies, whole fruit and/or nuts should be in small chunks and pre-frozen before adding to ice cream.
  7. Don't add those ingredients until the very end of mixing. This keeps them from sinking to the bottom of the container. Mixing by hand prior to putting in the proper freezer container is preferred.
  8. Pre-chill or freeze container to be used for ice cream.
  9. Place ice cream in freezer for a couple of hours prior to serving, if possible.
  10. Allow the ice cream to sit at room temperature for 10 minutes prior to serving. Serve your ice cream in chilled bowls, preferably glass.

Ingredients:

  • Two 8-ounce tubes of crescent rolls
  • Two 8-ounce packages of cream cheese, softened
  • 1 cup (plus) sugar
  • 1 teaspoon vanilla
  • 1 egg

Preparation:

Preheat oven to 350 degrees F. Lightly grease 9 x 13 pan. Separate 1 can crescent rolls. Press triangles together in a single layer on bottom of pan. With electric mixer, combine cream cheese, sugar, vanilla and egg. Spread in pan. For the top layer use last can of crescents. Be sure edges are pinched together. Brush milk over dough. Sprinkle with sugar. Bake for 30 minutes.

Friendship Bread, a.k.a. Amish Friendship Bread is what is made with a gallon-sized resealable plastic of Amish Friendship Bread starter and these directions.

On Making Friendship Bread

Ingredients:

  • Amish Friendship Bread Starter
  • 2 cups flour, divided
  • 2 cups sugar, divided
  • 2 cups milk, divided
  • ----
  • Basic Bread Recipe -
  • 2 cups flour
  • 1-1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon
  • 1 cup sugar
  • 1 (5 ounce) instant vanilla pudding mix
  • ----
  • 1 cup vegetable oil
  • 1/2 cup milk
  • 3 eggs
  • 1 teaspoon vanilla
  • ----
  • 1 cup chopped pecans or walnuts, lightly toasted

Preparation:

Before Beginning, Keep This Information in Mind:

  • To better keep up with the process of making this bread, add the actual dates to this recipe. Day One is the date you first received (or made) the bag of starter.
  • Do not use any metal spoons or bowls with this recipe. It will interfere with the process of fermentation.
  • To keep the bag of Amish Friendship Bread Starter from exploding, check it more than once a day. Be sure to release any excess air build-up.
  • When told to knead the bag, do so carefully. Hold the resealable area in one hand, and use the other hand to knead the starter.
Day One - ______________ - Do nothing.

Day Two - ______________ - Knead the bag.

Day Three - ____________ - Knead the bag.

Day Four - _____________ - Knead the bag.

Day Five - _____________ - Knead the bag.

Day Six - ______________ - Add the 1 cup flour, 1 cup sugar and 1 cup milk to the bag. Knead until well mixed.

Day Seven - ____________ - Knead the bag

Day Eight - ____________ - Knead the bag

Day Nine - _____________ - Knead the bag

Day Ten - ______________ -
Pour contents of resealable bag into non-metal bowl. Add remaining flour, sugar and milk. Stir with wooden or plastic spoon. Place 1 cup of starter in each of 3 resealable 1-gallon bags. Give these to your friends. Use the remaining starter to make your bread.

Making the Bread -

Preheat the oven to 325 degrees F. Grease two 8x4-inch loaf pans. Combine the first set of ingredients (from flour to under pudding mix) under Basic Bread Recipe in a large bowl with a wire whisk. In a medium bowl, combine the second set of ingredients, from vegetable oil to vanilla. Mix well. To the dry ingredients, add the leftover starter and wet ingredients. Mix until just combined. Stir in the nuts. Carefully, pour batter into prepared pans. Bake for 1 hour.

Ingredients:

  • 2 eggs yolks
  • 1/3 cup oil
  • 2 cups milk
  • 2 cups flour
  • 1/2 teaspoon salt
  • 1 tablespoon baking powder
  • 2 egg whites, stiffly beaten

Preparation:

Preheat waffle maker. Put all ingredients, except egg whites, in a large mixer bowl. Beat on low until moistened. Increase to medium, mix until smooth. By hand, gently fold in beaten egg whites. Pour 1/2 cup batter over grids. Close waffle maker, bake until steam no longer escapes, about 3-5 minutes. Repeat. Serve Light and Crispy Belgium Waffles while hot with your favorite topping or homemade syrup.

Easy Chocolate Fondue

Fondue and Crockpots were made for each other.

Prep Time: 15 minutes

Cook Time: 1 hour, 30 minutes

Total Time: 1 hour, 45 minutes

Ingredients:

  • 24 ounces semisweet chocolate chips
  • 1-1/4 C. evaporated milk
  • 1/4 C. sugar
  • 2 t. vanilla extract
  • 1 T. fruit flavored liqueur
  • Dippers: cubed pound cake, fruit, pretzels, cookies, marshmallows, Biscotti

Preparation:

Place ingredients (except dippers) into a crockpot. Cover and cook on high for 30 minutes. Stir well. Cook 1 more hour on low. Use skewers or small tongs to dip into the chocolate.

Orange Desserts

Oranges have always had a special place in my life. It started with growing up in south Florida in the late 60's. My father was a traveling salesman and we'd travel with him whenever we could. I recall stopping at many a fruit stand and getting to eat many varieties of those magnificent golden orbs. Even today we make sure to get our first glass of orange juice at the Florida Welcome Center as we are driving down to the beach. Orange juice is my daughter's favorite juice. She calls it "Papa Juice" because my dad drinks alot of it. The juice manufacturers have really made my life easier, too. Loretta is not a good milk drinker and the juice now comes fortified with calcium. Besides getting her calcium requirements, she also benefits from the vitamin C, potassium, folic acid, and the many other nutrients in orange juice. I just love the fresh and clean smell of oranges. Whenever we peel an orange, half of the rind goes in the trash can (to make it smell better) and the other half is saved for the garbage disposal to freshen that up also.
