Aileen said that this Ritz Pecan Pie was the only Pecan Pie she knew growing-up. It wasn't until she moved to the south that she learned about a Southern Pecan Pie.

I grew-up eating this cake. It's so sinful, and yet, filled with good things for you. I've had house guests request Tropical Carrot Cake for breakfast. I think this carrot cake recipe is by far the best you'll ever have.

Prep Time: 30 minutes

Cook Time: 1 hour

Total Time: 1 hour, 30 minutes

Ingredients:

  • The Cake Recipe:
  • 2 cups sugar
  • 3 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 2 cups grated carrots
  • 1-1/3 cups vegetable oil
  • 4 eggs, slighly beaten
  • 1 cup chopped and toasted walnuts or pecans
  • 1 - 20 ounce can crushed pineapple, drained
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon extract
  • 1/2 teaspoon almond extract
  • The Frosting Recipe:
  • 1/2 cup butter, softened
  • 1 - 8 ounce cream cheese, softened
  • 1 - 16 ounce box powdered sugar, sifted
  • 2 teaspoons vanilla extract
  • 1 cup chopped and toasted walnuts or pecans
  • 1 cup flaked coconut

Preparation:

The Cake Recipe:
Preheat the oven to 350 degrees F. Grease and flour two bread loaf pans. Combine dry ingredients in a large mixing bowl. Add carrots, oil and eggs. Beat well, until mixed. Add other ingredients and stir. Put into baking pans. Bake for 1 hour or until done. Completely cool cakes before frosting.

The Frosting:
Combine butter and cream cheese; cream until light and fluffy. Add sugar and vanilla, mixing well. Stir in pecans and coconut. Spread on each cake. Store cakes in the refrigerator.

Note: This cake freezes beautifully. Place on foil covered baking sheet. Freeze until hard. Remove from freezer and wrap in plastic wrap and then in foil. Return to freezer. Unwrap totally and then defrost cake.

You'll find that this recipe for Pumpkin Bundt Cake is perfect for a fall dessert. It's even better when it's drizzled with Cream Cheese Glaze.

Prep Time: 25 minutes

Cook Time: 50 minutes

Total Time: 75 minutes

Yield: 12 to 16 servings

Ingredients:

  • 3 cups flour
  • 2 cups sugar
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1-1/2 teaspoons cinnamon*
  • 1/2 teaspoon allspice*
  • 1/2 teaspoon nutmeg*
  • 1/2 teaspoon ginger*
  • ----
  • 4 eggs
  • 1 cup butter, melted and cooled or 1 cup vegetable oil
  • One 15-ounce can solid packed pumpkin or fresh puree
  • ----
  • 1 cup chopped pecans, lightly toasted
  • ----
  • Optional: Cream Cheese Glaze

Preparation:

Preheat oven to 350 degrees F. Grease and flour bundt cake pan. In a large bowl with a wire whisk, combine first set of ingredients. In a small bowl, combine last set of ingredients. Hand whip until combined. Add wet ingredients to dry ingredients. Mix until just combined. Carefully stir in nuts. Pour into prepared bundt cake pan. Bake Pumpkin Bundt Cake for 45 to 50 minutes. Cool in pan on wire rack for 10 minutes. Remove Pumpkin Bundt Cake from pan and finish cooling on rack.

Top cooled cake with Cream Cheese Glaze**.

Notes in the Margin:

* You may substitute any combination of those spices according to taste as long as they equal 3 teaspoons. Pumpkin Pie or Apple Pie Spice may also be substituted.
** I also topped my cake with a few toasted pecans. I always do this when I'm taking a cake some place and I'm not going to be there while it's eaten. This way people are alerted to the fact that there are nuts in the cake.

Thanksgiving dinner just isn't complete without this recipe for Pumpkin Pie.

Prep Time: 25 minutes

Cook Time: 50 minutes

Total Time: 1 hour, 15 minutes

Ingredients:

  • 1 unbaked 9-inch deep-dish pie shell
  • 3/4 cup sugar
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon*
  • 1/2 teaspoon ginger*
  • 1/4 teaspoon cloves*
  • 2 large eggs
  • 1- 15 ounce can pure pumpkin**
  • 1- 12 ounce can evaporated milk

Preparation:

Preheat oven to 425° F. Combine sugar, salt, cinnamon, ginger and cloves in small bowl with wire whisk. Beat eggs lightly in large bowl. Stir in pumpkin and dry mixture. Gradually stir in milk. Pour into pie shell.

Bake for 15 minutes. Reduce temperature to 350° F.; bake for 40 to 50 minutes or until knife inserted near center comes out clean. Cool on wire rack. Store in refrigerator.

*If you don't have all of the spices, you can use all cinnamon or nutmeg. You can also substitute 1-3/4 t. pumpkin pie spice for the three spices.

Yield: Enough to glaze Bundt cake

Ingredients:

Preparation:

Beat cream cheese until very creamy. Beat in powdered sugar. Stir in vanilla. Add 3 tablespoons milk. Totally combine. Add more milk to get desired consistency for drizzling this Cream Cheese Glaze on a cake such as a Pumpkin Bundt Cake.

My daughter's teachers just go "nuts" over these candies. To make it even better, for us anyway, is that they're very easy to make. These Chocolate-Peanut Clusters are made using the crockpot.

My sister-in-law delivers tins and tins of Peanut Brittle to her friends and neighbors each Christmas season. She typically makes hers with dry roasted peanuts. The last time I made it with cashews. That was a nice change. I think salted almonds would work too.
