Fresh Peach Ice Cream

Enjoy this recipe for Fresh Peach Ice Cream. The peaches in this ice cream are not only pureed, but they are in chunks, too.

Prep Time: 20 minutes

Total Time: 20 minutes

Yield: Makes 1 Quart

Ingredients:

  • 1 pound, 6 ounces skinless peach slices (about 1-1/2 pounds whole), divided
  • juice of one lemon
  • 2 teaspoons peach or vanilla extract
  • 2/3 cup sugar
  • 2 cups light cream (half and half)

Preparation:

In a food processor, combine half the peach slices, lemon juice, extract and sugar. Process until totally smooth. Coarsely chop remaining peach slices. In a large bowl, combine puree and light cream with a mixer. Mix until combined. Stir in peach chunks and place in refrigerator for an hour. Make ice cream according to the ice cream maker's instructions.

Total Time: 70 minutes

Ingredients:

  • 1 cup heavy cream
  • 1 cup light cream (half and half)
  • 1/2 cup sugar
  • 3/4 teaspoon vanilla extract
  • 1 pinch salt
  • 1/2 cup smooth or crunchy peanut butter

Preparation:

Combine all ingredients. Stir until sugar dissolves. Freeze according to ice cream freezer directions.

Makes 1 quart.

I guess I'm a nutty person, because I think most of my all-time favorite desserts are made with nuts. I love all kinds of nuts. I love pecans, walnuts, almonds, macadamia nuts, peanuts and more. I love seeds too, like sunflower and sesame seeds. There's just something about that extra little crunch while eating my favorite treats. Here are just a few of my favorite desserts (and other baked treats) made with nuts.

1. Benne Wafers

Having lived in the south all of my life, I just don't know how I missed out on having Benne Wafers until now. Not only do they have a rich taste, but I really like the nutty texture, too. These are definitely going to be a cookie made regularly in my house.

2. German Chocolate Cake

I think there are two things about a German Chocolate Cake that people find appealing. One is that it's a lighter version of a chocolate cake. It's not densely chocolate which, believe it or not, some people don't enjoy. The second reason is because it's iced with a Coconut Pecan Frosting. I know that's why my daughter loves it. A rich buttery flavor along with a great texture are what make the Coconut Pecan Frosting so enjoyable.

I grew-up eating this cake. It's so sinful, and yet, filled with good things for you. I've had house guests request Tropical Carrot Cake for breakfast. I think this carrot cake recipe is by far the best you'll ever have.

I like this Fresh Blueberry Cheesecake for a couple of reasons. One being it's a dense cheesecake, which is because there's more cream cheese in this recipe than most. I also like the fact that this cheesecake is made in an 9x13 rectangular pan. When many people will be cutting their own piece, it doesn't get as messy. The last reason I like this recipe is that you can never have too many blueberries. Between the blueberries and the cream cheese, this cheesecake is pretty dense in nutrients.

  • 1 cup heavy cream
  • 1 cup light cream* (half and half)
  • 1/2 cup sugar
  • 3/4 teaspoon vanilla extract
  • 1 pinch salt
  • 1/4 cup mini chocolate chips (or chocolate shavings)

Preparation:

Combine ingredients. Stir until sugar dissolves. Freeze according to ice cream freezer's directions. Stir in chips just before storing chocolate chip ice cream.

Makes 1 quart

*1/2 cream and 1/2 milk may be substituted for light cream

There will be no more Harry Potter movies. You may not even care, but you should. If you haven't seen them, you've missed some of the best desserts I've ever seen. Desserts you say? When the students at Hogwarts ate in the great hall the huge tables would be loaded with all kinds of baked goodies. An English Trifle is just one of the desserts to be found on those deliciously decorated tables.

Keep these ingredients on hand and you'll always be able make sugar (and other) cookies.

flour
granulated sugar
brown sugar
butter*
solid shortening
vegetable oil
eggs
baking powder
baking soda
milk
vanilla extract (and other extracts, if desired)
salt
colored sugars (red and green)
colored sprinkles or any other nonpareils
colored icing (either make you own, or buy the already made)
chopped nuts
shredded coconut
M&M's
any other toppings you desire at the store
unsweetened chocolate
food colors

*I know that a lot of chefs prefer unsalted butter for baking. They do it to control the amount of salt in the recipe. Personally, I find the taste of unsalted butter flat. That's why I always use salted butter.

Baking Tips for Quick Breads

There is nothing like greeting your family in the morning with the aroma of freshly baked muffins. It is always such a treat. It's a treat to the baker, too. Muffins and other quick breads are so easy to make. After cookies, these should be the next baked goods kids can easily learn how to make.

I love to keep several different kinds on hand. I display them in a glass cake container on my kitchen counter. Muffins and other quick breads freeze wonderfully. Just tightly wrap them in plastic wrap and then put them in a freezer bag. They should keep for several months.

Quick breads (I'm going to only deal with the sweet breads - not to be confused with veal) are made without yeast. So there's no waiting for dough to rise. Most quick breads are prepared the same way:

  1. Preheat the oven.
  2. Grease the pan.
    • I prefer to use shortening. Butter or cooking spray can also be used. Remember butter does have a tendency to burn, so watch your cooking times. Muffin cups can also be lined with paper cups. Use two cups if you plan to freeze the muffins.
  3. Mix the dry ingredients in a large bowl.
  4. If shortening is used, cut into the dry ingredients.
    • Use a pastry blender or two knives in scissor fashion to mix in the shortening.
  5. Mix the wet ingredients in a medium bowl.
  6. Add the wet ingredients to the dry ingredients. Stir only until combined.
    • This is the most important information for successful quick breads: DO NOT OVER MIX. Mix only until combined. The mixture will contain some lumps. An over mixed batter creates tough and rubbery muffins/quick breads.
  7. Put batter into pans or muffin cups.
    • For 12 small muffins: Fill the cups only 2/3 full.
    • For 9 medium muffins: Fill almost to the top.
    • For 6 huge muffins: Completely fill muffin cups. Be sure to also grease top of pan as muffins will expand making large tops.
    • Very important: Fill any empty muffin cups 1/2 way with water. Muffins tend to burn faster in a pan with empty cups.
  8. Bake.
  9. Test for doneness with a toothpick.
  10. Immediately remove from pan and cool on racks.
  11. Muffins can be eaten warm. Most other quick breads taste better the next day.

Here's a decadent dessert made with layers of chocolate and vanilla cake along with a buttery filling and topped with Kirsch-flavored whipped cream.

4. Blueberry Trifle

The blueberry lovers in your life will like this one. Plus you get to be creative and choose your own favorite liqueur. In fact, almost all Trifles are made with a liqueur or liquor.

5. Harvey Wallbander Crockpot Cake

The Galliano liqueur and orange juice give this Harvey Wallbanger Crockpot Cake a wonderful flavor.

6. Cassata Riviera

You can use either orange juice or orange-flavored liqueur like Cointreau in this recipe.

7. Hard Sauce

This is a sauce recipe to keep on hand. It goes great on Bread Pudding or even on just a plain pound cake.

8. Amaretto Mousse Cheesecake

You get the creaminess of mousse combined with the denseness of cheesecake in this recipe.

I'll confess this is not a traditional Italian Gelato recipe, but it's not technically an ice cream either. It doesn't have any real cream in it to make it an ice cream. Gelatos are typically made with whole milk, which this recipe does have. Rarely does Gelato have sweetened condensed milk in it either.

Regardless of the name, I promise you will enjoy this extremely Creamy Strawberry Gelato.

Prep Time: 15 minutes

Total Time: 15 minutes

Yield: Makes 1 Quart plus

Ingredients:

  • 2 cups strawberries, washed, hulled and quartered
  • 1/2 cup sugar
  • 14-ounce can sweetened condensed milk
  • 1 cup whole milk
  • 1 tablespoon fresh lemon juice

Preparation:

In the food processor, puree strawberries and sugar. Pour in large bowl. Add rest of ingredients. Mix until well combined. Place in refrigerator while preparing ice cream maker. Pour mixed ingredients into ice cream maker. Freeze Creamy Strawberry Gelato according to ice cream maker directions.

I came up with this recipe after deciding I wanted more pineapple in my cake. It's a very moist cake. If you like pineapple, you'll like this cake.

Dump cakes use the cake mix in a different way. The cake mix is sprinkled on top of the other ingredients. Then something wet like melted butter is poured on top of the mix. Once baked, the cake mix turns into a crust.
