Try something new this Thanksgiving. This recipe for Pumpkin Dump Cake is perfect for holiday.

Prep Time: 25 minutes

Cook Time: 50 minutes

Total Time: 75 minutes

Yield: 24 Servings

Ingredients:

  • 1- 15 ounce can pumpkin
  • 1- 12 ounce can evaporated milk
  • 3 eggs
  • 1 teaspoon nutmeg*
  • 1/2 teaspoon ginger*
  • 1/2 teaspoon cloves*
  • 1/2 teaspoon salt
  • 3/4 cup sugar
  • ----
  • 1- 18.25 ounce yellow cake mix**
  • 1 cup walnuts
  • 3/4 cup or 1-1/2 sticks butter, melted

Preparation:

Preheat oven to 350 degrees F. Lightly grease 9x13 pan. Completely combine 1st set of ingredients. Pour into prepared pan. Sprinkle with cake mix. Gently pat down with spoon. Sprinkle with nuts. Drizzle with butter. Bake for 50 minutes. Cool and cut in squares.

* Or use 4 teaspoons Pumpkin Pie Spice or Mixed Spice.
** Or use the dry ingredients only in this recipe for Basic Yellow Cake Mix

Everyone just loves this Pumpkin Roll Cake made in a jelly roll pan.

Prep Time: 1 hour

Cook Time: 15 minutes

Total Time: 1 hour, 15 minutes

Ingredients:

  • 3 eggs
  • 1 cup sugar
  • 2/3 cups pumpkin
  • 2/3 cups flour
  • 1 teaspoon soda
  • 1 teaspoon pumpkin pie spice
  • 1 cup powdered sugar
  • 8 ounces cream cheese
  • 4 tablespoons butter
  • 1 teaspoon vanilla

Preparation:

Preheat oven to 350 degrees. Mix flour, soda and pumpkin pie spice and set aside. Blend eggs, sugar and pumpkin. Add flour mixture and mix well. Spread onto a well-greased jelly roll pan allowing mixture to taper at one end (helps with the rolling once cooked.) Bake for 10-15 minutes.

Mix remaining ingredients and set aside in refrigerator. Once pumpkin cake is cooled, turn out on a cheese cloth lightly dusted with powdered sugar, roll loosely and let cool (this will help form the roll). Once cooled to room temperature, mix cream cheese mixture to soften. Unroll pumplin cake and spread cream cheese mixture leaving a 1/4" border (the cream cheese will spread and may ooze out the sides once you start to roll. This will save some filling.) Roll pumpkin starting from the tapered end. Powder outside of roll before wrapping in wax paper or foil so not to stick to wrapping and chill for at least 1 hour. When ready to serve slice 1/4" thick and garnish with powdered sugar and cinnamon.

Pumpkin Pancakes are a treat on any fall morning.

Prep Time: 15 minutes

Cook Time: 10 minutes

Ingredients:

  • 2 cups flour
  • 2 tablespoons brown sugar
  • 1 tablespoon baking powder
  • 1-1/4 teaspoons pumpkin pie spice*
  • 1 teaspoon salt
  • 1-3/4 cups milk
  • 1/2 cup canned pumpkin or fresh pumpkin pulp, processed smooth
  • 1 large egg
  • 2 tablespoons plus vegetable oil or melted and cooled butter

Preparation:

Combine dry ingredients with a wire whisk and set aside. In a large bowl, beat milk, pumpkin, egg and oil. Gradually add dry ingredients. Mix only until wet. Batter will be lumpy.

Heat griddle. Brush with oil. Make pancakes using 1/4 cup batter. Cook until top is bubbled and edges dry. Turn and cook for another minute or so. Serve warm with Homemade Butter Pecan Syrup.

*For a fuller-flavored pancake, use 1/2 teaspoon cinnamon, 1/4 teaspoon each of allspice, ginger and freshly ground nutmeg.

My next door neighbor just adores Blackberry Pie, so naturally I had to make her one. Even though I was actually making a Blackberry Pie, I couldn't get the Blackbird nursery rhyme song out of my head.

4. Cherry Pie

Now my favorite fruit pie is a Cherry Pie. The pie pictured is a Rustic Cherry Pie a.k.a. Cherry Galette. Instead of the normal two crust pasty, only one is used. It used without a pie plate. The bottom crust is rolled as usual. I like to paint the pastry with beaten egg. This seals the pastry keeping the filling from seeping through. Place the cherry filling in the middle and then fold-up the edges.

7. Fruits of the Forest Pie

I main ingredient in this Fruits of the Forest Pie is a can of strawberry pie filling. From there I added an additional pint and a half of fresh berries and came up with this recipe. It was very easy to make and was quite tasty.

I'll be the first to admit, I'm a huge peach fan, but not of the normal peach pie. My favorite peach pie is called Peach Pie Surprise. It gets a zing from a little red candy. You have to look in the recipe for the ingredient.

Despite the recipe name, this Fresh Strawberry Pie does have cooked, as well as, fresh strawberries in it. Basically, the name has more due to the fact that the pie is not baked. Make sure your strawberries are hulled before you make this recipe.

I get asked all of the time, "is it time for pumpkin bread yet?" Of course, in the United States, we generally only eat pumpkin in the fall. What most people don't realize is that canned pumpkin is usually carried in their grocery stores year-round.

Prep Time: 25 minutes

Cook Time: 40 minutes

Total Time: 65 minutes

Yield: Two Loaves or 24 Muffins

Ingredients:

  • 4 eggs
  • 2-1/3 cups sugar
  • 1 cup vegetable oil
  • 1 - 15 ounce can solid pack pumpkin
  • ----
  • 3 cups flour
  • 1 teaspoon salt
  • 1-3/4 teaspoons baking soda
  • 2-3/4 teaspoons ground cinnamon*
  • 3/4 teaspoons ground nutmeg*
  • 3/4 teaspoon ground cloves*
  • 1/4 teaspoon ground allspice*
  • ----
  • 1 cup chopped raw nuts (walnuts, pecans, etc), lightly toasted
  • 1/3 cup golden raisins**
  • ----
  • 1/4 cup sugar
  • 1 teaspoon ground cinnamon

Preparation:

Preheat the oven to 375 degrees F. Grease two loaf pans or 24 muffin cups. Combine the eggs, sugar, oil, and pumpkin in a large bowl, and stir until smooth.

In a medium bowl, mix the second set of ingredients with a wire whisk. Add the nuts and raisins**. Add to the egg mixture and mix thoroughly. Fill the loaf pans or muffin cups with the batter.

Mix the last 2 ingredients in a small bowl. Sprinkle over bread loaves or muffin batter.

Bake the bread at 375 degrees F for 1 hour and 10 minutes, or the muffins for 35 to 40 minutes. When the bread is done, a toothpick inserted in the center will come out clean.

Yields 2 loaves or 24 muffins.***

Notes:
* You may substitute 4 1/2 teaspoons of pumpkin pie spice for the starred ingredients. Be sure to note that you still need cinnamon for the topping.
** I don't care for raisins so I add 1/3 cup more nuts instead.
***I've only made the loaves of bread so I don't know if this makes 24 small or large muffins. If you prefer large muffins: fill the cups just to the top with batter. If you have any empty muffins cups, fill half full with water.

You begin by making these sticky buns with store-bought crescent rolls.

Prep Time: 25 minutes

Cook Time: 17 minutes

Total Time: 42 minutes

Ingredients:

  • 1/4 cup butter
  • 1/4 cup chopped nuts (pecans, walnuts or hazelnuts)
  • 1/4 cup firmly packed brown sugar
  • 2 tablespoons maple syrup
  • 8 ounce can crescent rolls
  • 1 tablespoon sugar
  • 1/2 teaspoon ground cinnamon or freshly grated nutmeg

Preparation:

Preheat oven to 375 degrees F. Lightly grease 9-inch round cake pan. Place butter and nuts in pan. Heat in oven for 2 minutes. Remove from oven. Stir in brown sugar and syrup. Spread mixture evenly in bottom of pan. Remove dough from can, but do not separate or unroll. With a serrated knife, cut into 6 large or 12 small slices. Combine sugar and cinnamon in shallow-sided bowl. Dip both sides of dough in sugar mixture. Evenly space rolls in pan. Sprinkle any remaining sugar over top of rolls. Bake for 17 to 20 minutes. Cool for 1 minute. Place plate upside down over pan. Invert pan and plate onto serving platter. Spoon any remaining drippings over rolls. Serve warm.

Well, of course, I had to begin with the number one choice in Thanksgiving Day desserts: Pie. The most popular pie is Pumpkin Pie. Another very popular choice is Mincemeat. I also like to have an Apple Pie or a Pecan Pie on the biggest eating day of the year.

Pumpkin Ice Cream Pie

Pumpkin Ice Cream Pie is a great fall or Thanksgiving dessert alternative for those who live in warmer climates.

Prep Time: 8 hours, 00 minutes

Cook Time: 10 minutes

Ingredients:

  • 36 graham crackers, crushed
  • 6 tablespoons sugar
  • 2/3 cup butter, melted
  • 2 cups fresh cooked or 1 pound can pumpkin
  • 1 cup packed brown sugar
  • 1 teaspoon salt
  • 1 teaspoon ground ginger*
  • 1 teaspoon cinnamon*
  • 1 teaspoon freshly ground nutmeg*
  • 2 quarts vanilla ice cream, softened
  • 1/4 cup chopped pecans, lightly toasted

Preparation:

Preheat oven to 375. Crush graham crackers (3 cups), mix with sugar and butter. Press mixture into 8 or 9 inch pie plate. Bake 8-10 minutes, let cool completely.

Combine next 6 ingredients. Mix well, stir in ice cream. Spoon mixture into cooled crust. Top with pecans. Freeze until firm. Cover with foil to store. Remove from freezer 10 minutes before serving. Decorate with whipped cream, if desired.

*Or use 3 teaspoons pumpkin pie spice.

Pomegranate Nut Cake

Here is a recipe for Pomegranate Nut Cake, which uses a cake mix.

Prep Time: 30 minutes

Cook Time: 1 hour

Total Time: 1 hour, 30 minutes

Ingredients:

  • 1 cup chopped and toasted blanched almonds
  • 4 eggs
  • 4 serving-size instant vanilla pudding
  • 18-1/2 ounce (2 layer) yellow cake mix
  • 1/2 cold pomegranate juice
  • 1/2 cup pomegranate liqueur
  • 1/2 cup vegetable oil
  • ---
  • 1/2 cup butter
  • 1 cup sugar
  • 1/4 cup pomegrante juice
  • 1/2 cup pomegranate liqueur

Preparation:

Preheat oven to 325 degrees F. Grease and flour 12-cup Bundt pan. Sprinkle nuts on bottom of pan. Combine rest of first set of ingredients. Beat for 2 minutes on high with electric mixer. Pour into prepared pan. Bake for 1 hour. Cool in pan on wire rack. Invert onto serving plate. Use skewer to prick holes in cake.

Melt butter in saucepan. Stir in sugar and pomegranate juice. Boil 5 minutes, stirring constantly. Remove from heat and stir in liqueur. Drizzle glaze over top of cake and into holes. Use pastry brush to gather glaze run-off. Continue to brush until all glaze is used on Pomegranate Nut Cake.

Canning Jar Instructions: This recipe makes 6 1-pint jars of cake. As soon as the cake comes out of the oven, poke holes in each cake. Drizzle the glaze into each jar. You might have to move the cake from side to side in each jar to utilize all of the glaze. Be sure to cap each jar and then allow to cool on wire racks. Within 15 minutes or so, the jars will pop making them airtight.

Although not a traditional recipe, you can make this tasty version of French Bread in your bread machine.

Prep Time: 25 minutes

Cook Time: 2 hours

Total Time: 2 hours, 25 minutes

Ingredients:

  • 1-1/3 cups water
  • 2 teaspoons salt
  • 2 tablespoons sugar
  • 4-1/3 cups bread flour
  • 1-1/4 teaspoon active dry yeast

Preparation:

Place ingredients in bread pan in order listed or according to manufacturer's directions. When adding the yeast last, make a small well with your finger to place the yeast. This will insure the proper timing of the yeast reaction. Use the Basic (Standard), Timed Cycles, or according to manufacturer's directions. Makes a 2 pound loaf.

This recipe for Caramel Rum Sauce would be great on ice cream. It's also the perfect glaze for the Brown Sugar Pound Cake.

Prep Time: 10 minutes

Cook Time: 6 minutes

Total Time: 16 minutes

Ingredients:

  • 1/2 cup whipping or heavy cream
  • 1/2 cup butter
  • 1/2 cup dark brown sugar
  • 1/2 cup sugar
  • 2 tablespoons light corn syrup
  • 3 tablespoons dark rum

Preparation:

Combine all ingredients in heavy saucepan. Bring to a boil over medium heat, whisking occasionally. Cover and continue to boil for 1 minute to wash sugars from side of pan. Uncover and boil for 3 to 4 more minutes without stirring. Cool slightly before drizzling* over cake or ice cream.

Notes in the Margin:

*Not only did I drizzle the sauce over my rose-shaped Brown Sugar Pound Cake, but I brushed it over the sides for even coverage. Since my cake was in two pans, I put 1-cup of sauce in a resealable container in the refrigerator to use later on the loaf cake. To serve this cake, I scooped out some sauce on a slice of the cake. I then microwaved the piece for about 15 seconds. Wonderful!

Total Time: 3 hours, 30 minutes

Ingredients:

  • 1 package pound cake mix
  • 3-1/2 ounce package instant vanilla or French vanilla pudding mix
  • 1/2 cup salad oil
  • 4 eggs
  • 1/4 cup Galliano liqueur
  • 3/4 cup orange juice

Preparation:

Beat all ingredients for 2 minutes in mixing bowl. Pour batter into greased coffee can or manufacturer's insert and cover. Bake in covered crockpot on high for 2 to 3 hours. Remove cake and dust with powdered sugar.

Lemon Lime Pound Cake is a very tasty recipe made with a cake mix and baked in a bundt cake pan.

I took this cake to a potluck supper. Before dinner several friends confessed to being too full to even enjoy dinner that evening. It was amazing that although they weren't able to eat much dinner, they were able to eat two pieces of this Lemon Lime Pound Cake!

Prefer to make your cakes from scratch? Try this from-scratch recipe for 7UP Pound Cake, it's similar to this recipe for Lemon Lime Pound Cake. It's the one my mother used to make for me.

Prep Time: 15 minutes

Total Time: 15 minutes

Yield: 12 Servings

Ingredients:

  • 18 ounce yellow cake mix
  • 4-serving size vanilla instant pudding and pie filling mix
  • 4 large eggs
  • 1 cup lemon lime flavored soda
  • 1/3 cup vegetable oil
  • ----
  • 1 lemon, juice and zest, divided
  • 1 lime, juiced and zest, divided
  • 1 cup powdered sugar, sifted
  • Possible additional lemon and/or lime juice needed

Preparation:

Preheat oven to 350 degrees f. Grease and flour Bundt or tube pan.

Place first set of ingredients into large bowl. Add 1/2 zest from both lemon and lime. With electric mixer, mix for 2 minutes. Carefully, pour into pan. Bake for 50 to 60 minutes. Test for doneness with tooth pick. Cool in pan on wire rack for 25 minutes. Invert on rack and cool completely. Once cool place on serving plate.

In glass measuring cup, measure combined juices. Add additional juice, if necessary, to make 1/4 cup. Stir in remaining zest and powdered sugar until smooth. Spoon the glaze over the Lemon Lime Pound Cake. Use a pastry brush, if necessary, to get glaze off of plate and onto cake.
