I you prefer dense cheesecakes this recipe is for you. It is made with 5 8-ounce bars of cream cheese.

Prep Time: 4 hours

Cook Time: 40 minutes

Total Time: 4 hours, 40 minutes

Ingredients:

  • 1-1/2 cups graham cracker crumbs, apprx. 21 crackers
  • 1-1/4 cup sugar, divided
  • 6 tablespoons butter, melted
  • 5 8-ounce packages cream cheese, softened
  • 3 tablespoons flour
  • 1 tablespoon vanilla*
  • 1 cup sour cream
  • 4 eggs
  • 1/3 cup seedless fruit jam or flavored curd

Preparation:

The day before or early in the day, preheat the oven to 325 degrees F. (25 degrees F less if using glass or dark metal pan). Lightly grease (spray and wipe out) 9x13 pan. In food processor, process graham crackers. Add 1/4 cup sugar. Mix. Run processor while drizzling in butter. Press crust mixture into pan. Bake for 12-15 minutes. While baking, beat cream cheese and 1 cup sugar. Add flour and vanilla*. Mix well. Add sour cream. Mix. Add eggs one at a time. Combine until just combined. Don't over beat. Pour mix over crust. Drop tablespoons of jam on top. Draw knife through mixture to create marble effect. Bake for 40 minutes or until done. Center should wiggle a little. Completely cool on wire rack. Refrigerate 4 hours or overnight.

*When making curd flavored cheesecakes, juice and zest of 1 lemon or orange maybe used instead.

This bread machine recipe for Cheddar and Bacon Bread is great for a brunch or with a salad for dinner.

Prep Time: 20 minutes

Cook Time: 2 hours, 30 minutes

Total Time: 2 hours, 50 minutes

Ingredients:

  • 1-1/3 cups water
  • 2 tablespoons vegetable oil
  • 1-1/4 teaspoon salt
  • 2 tablespoons plus 1-1/2 teaspoons sugar
  • 4 cups bread flour
  • 3 tablespoons nonfat dry milk
  • 2 teaspoons dry active yeast
  • 2 cups shredded cheddar or swiss cheese
  • 8 slices bacon, crumbled
  • -or- 3 tablespoons bacon bits*

Preparation:

Place ingredients in bread pan in order listed or according to manufacturer's directions. The cheddar cheese and bacon are added at the fruit and nut signal. Depending on your machine this could be anywhere from 30 to 40 minutes into the cycle. Remember, when adding the yeast last, make a small well with your finger to place the yeast. This will insure the proper timing of the yeast reaction. This bread is processed at the Basic (Standard) cycle or according to manufacturer's directions. (Note: I've done it on the Rapid Cycle, but the cheese and bacon is completely incorporated into the bread. You still get the great flavor, but the nice texture is gone.

* Imitation or real bacon bits may be used. They can be found in the salad dressing section of the grocery store. If you use real bacon bits, use 1/2 cup.

While at my daughter's church choir Christmas party, I was talking to the other mothers about homemade gifts. One mother said she always gives her neighbors Dark Chocolate Chess Pies. Of course, my initial thought was "I want to be her neighbor." My next one naturally was to get her recipe.

How to Make a Chess Pie with Photo Instructions

Prep Time: 25 minutes

Cook Time: 30 minutes

Total Time: 55 minutes

Ingredients:

  • 2 9-inch unbaked pie crusts in glass baking dishes
  • 1 cup butter
  • 6 ounces dark chocolate
  • 3 cups sugar
  • 2 tablespoons flour
  • 6 eggs
  • 2 teaspoons vanilla
  • 12 ounce can evaporated milk
  • Optional: Whipped Cream

Preparation:

Preheat oven to 400 degrees F. Bake pie crusts blind by either using pie weights in pie crusts or prick holes in bottom and sides to prevent bubbling. Bake for 8 minutes. Remove from oven to rack. Decrease oven temperature to 375 degrees F.

In large saucepan on low melt butter and chocolate, stirring occasionally. In medium bowl, combine sugar and flour with wire whisk. In another bowl, whisk together eggs, vanilla and evaporated milk. Add a couple of tablespoonfuls of the melted chocolate mixture to the egg mixture and stir. Add both sugar and egg mixtures to pan of melted chocolate. Stir to combine. Increase heat to medium and stir constantly for 10 minutes.

Evenly divide filling between the 2 pie pans. Bake for 30 minutes.

Makes 2 Pies. (One to share and one to eat?)

Serve with whipped cream.

  • 1 pound powdered sugar (XXXX Confectioner's Sugar)
  • 2 egg whites
  • 1/2 cup solid shortening

Preparation:

Mix all the above ingredients together and spread on a cool cake. This recipe is very old, but I use it on my wedding cakes and just cakes for the children.

You may a cocoa to it to change the style. If you do you will need to add a little more Crisco!

Of all of the desserts you can bake, cookies can be the easiest and the most fun. Right after Dad taught me to make coffee (there are some priorities), Mother taught me how to "cream my butters and sugars". Children are taught at an early age, like I was, to make cookies. If you are intimidated by baking, this is a great place to start.

Most cookies are made from the same basic ingredients. The dry ingredients consist of all-purpose flour, baking powder, baking soda and salt. The sweetness comes from granulated and/or brown sugar. The fat is either softened butter or margarine and sometimes shortening. Eggs and vanilla extract are also used. For different flavored cookies you can add any or all of these: chocolate, cocoa, nuts, raisins, oatmeal, spices or extracts.

Making the dough is pretty consistent with all cookies. Mix your dry ingredients in a medium-sized bowl. In a large bowl, cream your butters and sugars, then add your slightly beaten eggs and vanilla. To this mixture, slowly add the dry ingredients until well mixed. Usually at this point the extra flavorings are added to the dough. Then the dough is prepared the way dictated by the cookie type.

Most cheesecake recipes call for a cookie crumb crust. You may either purchase the crumbs or make your own. I prefer to use the food processor to turn my cookies into crumbs. While the cookies are processing, I'll drizzle my melted butter into the bowl. This way the machine will do the work in combining the butter and crumbs.

When I don't feel like cleaning the food processor, I'll put my cookies into a resealable plastic bag and push out the air when sealing the bag. I use a rolling pin and roll it over the cookies in the bag to make the crumbs.

I get asked all of the time, "is it time for pumpkin bread yet?" Of course, in the United States, we generally only eat pumpkin in the fall. What most people don't realize is that canned pumpkin is usually carried in their grocery stores year-round.

Prep Time: 25 minutes

Cook Time: 40 minutes

Total Time: 65 minutes

Yield: Two Loaves or 24 Muffins

Ingredients:

  • 4 eggs
  • 2-1/3 cups sugar
  • 1 cup vegetable oil
  • 1 - 15 ounce can solid pack pumpkin
  • ----
  • 3 cups flour
  • 1 teaspoon salt
  • 1-3/4 teaspoons baking soda
  • 2-3/4 teaspoons ground cinnamon*
  • 3/4 teaspoons ground nutmeg*
  • 3/4 teaspoon ground cloves*
  • 1/4 teaspoon ground allspice*
  • ----
  • 1 cup chopped raw nuts (walnuts, pecans, etc), lightly toasted
  • 1/3 cup golden raisins**
  • ----
  • 1/4 cup sugar
  • 1 teaspoon ground cinnamon

Preparation:

Preheat the oven to 375 degrees F. Grease two loaf pans or 24 muffin cups. Combine the eggs, sugar, oil, and pumpkin in a large bowl, and stir until smooth.

In a medium bowl, mix the second set of ingredients with a wire whisk. Add the nuts and raisins**. Add to the egg mixture and mix thoroughly. Fill the loaf pans or muffin cups with the batter.

Mix the last 2 ingredients in a small bowl. Sprinkle over bread loaves or muffin batter.

Bake the bread at 375 degrees F for 1 hour and 10 minutes, or the muffins for 35 to 40 minutes. When the bread is done, a toothpick inserted in the center will come out clean.

Yields 2 loaves or 24 muffins.***

Notes:
* You may substitute 4 1/2 teaspoons of pumpkin pie spice for the starred ingredients. Be sure to note that you still need cinnamon for the topping.
** I don't care for raisins so I add 1/3 cup more nuts instead.
***I've only made the loaves of bread so I don't know if this makes 24 small or large muffins. If you prefer large muffins: fill the cups just to the top with batter. If you have any empty muffins cups, fill half full with water.

  • 6 slices whole wheat bread, torn in small pieces
  • 3/4 ounce bran or oat bran cereal
  • 1/2 teaspoon baking soda
  • 2/3 cup non-fat dry milk
  • 5 packages (equivalent to 10 teaspoons sugar) of artificial sweetener
  • 1-1/2 teaspoons honey
  • 4 teaspoons vegetable oil
  • 3 eggs
  • ----
  • 1 banana
  • 1 cup unsweetened applesauce

Preparation:

Preheat oven to 375 degrees. Very lightly grease muffin cups. Mix first 8 ingredients. Stir in last 2 ingredients until just combined. Put in muffin pan. Bake for 15 to 20 minutes. Makes 12 small muffins. For 4 servings: 1 protein, 1 fat, 1 bread, 1 fruit, 1/2 milk and 15 optional calories.

There are a couple of reasons my family and I just love this recipe. First of all, it's the perfect company dish. Guests are always amazed when this is served on a cold morning. Secondly, this is a recipe with some versatility. You get to choose which fruit or fruit combination goes in this dish. You can see some of our favorites below.

Prep Time: 25 minutes

Cook Time: 40 minutes

Total Time: 65 minutes

Ingredients:

  • 2-1/2 cups regular rolled oats
  • 1/4 cup oat bran
  • 1/4 cup steel-cut oats
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon or freshly ground nutmeg
  • 1/4 cup granulated sugar
  • 1/4 cup packed brown sugar
  • ----
  • 2 cups milk
  • 1 egg, beaten
  • 1/3 cup applesauce*
  • 1/4 cup cooking oil**
  • ----
  • 2 cups fresh fruit***

Preparation:

Preheat oven to 400 degrees F. Lightly grease 2-quart souffle dish. In large bowl, combine first 8 ingredients**** and mix with a wire whisk; set aside. In medium bowl, combine next 4 ingredients. Add to oat mixture and stir until just combined. Place mixture into baking dish. Bake uncovered for 20 minutes. Remove from oven to stir mixture and gently fold in fruit. Bake, uncovered, for another 20 minutes more or until top is lightly browned. Spoon into bowls. Serve with yogurt, milk or cream.
Makes 6 to 8 servings.*****

Notes in the Margin:
* The applesauce is used to cut-down on the amount of fat in the recipe. You may use 1/3 cup more oil or even sour cream.
** I've also used melted butter, cooled slightly, instead of the oil.
*** My family's favorite combination so far is 1 cup mashed bananas and 1 cup drained canned peaches. At Christmas, I've used my homemade Cranberry-Orange Relish with fabulous results. Any other fruits canned or fresh should work. Just be sure that the pieces are in sizes that can be eaten with a spoon.
**** To save time in the morning, I combine my dry ingredients the night before in a large mixing bowl that I've covered.
*****My family of 3 has it for 2 days. On the second day, I reheat the oatmeal in the microwave with a little milk mixed in.

I just love Thumbprint Cookies because of their versatility. The jams may be any flavor you choose. You can also use lemon curd or chocolate icing if you prefer. You can make these with or without the nuts and just roll them in sugar. I even made some rolled in green-colored sugar and filled them with strawberry jam for the Christmas holidays.

Prep Time: 25 minutes

Cook Time: 15 minutes

Total Time: 40 minutes

Ingredients:

  • 1 cup butter or margarine, softened
  • 3/4 cup sugar
  • 2 large eggs, whites and yolks separated and reserved
  • 1 teaspoon vanilla extract*
  • 2 cups flour
  • 1/4 teaspoon salt
  • 1-1/4 cups finely chopped nuts**
  • 1/2 cup jams, preserves or curds***

Preparation:

Beat butter until creamy. Gradually add sugar. Add egg yolks (reserving egg whites for later) and extract. Mix out 1 cup of flour and add salt to it. Gradually add to butter mixture. Add other cup of flour gradually. Cover and chill at least 1 hour or overnight. Also make sure reserved egg whites are covered and refrigerated, too.

Preheat oven to 350 degrees F. Very lightly grease 2 cookie sheets. Set counter for the rolling process by setting out low-sided bowl with lightly beaten and reserved egg whites and another low-sided bowl for the nuts. Roll dough into 1 to 1-1/2 inch balls. Then roll each ball into egg white and then nuts. Place on cookie sheets 2 inches apart. Press thumb into each cookie before baking. Bake for 15 minutes. Cool 1 minute on cookie sheet. Move to wire racks for cooling. Press centers again with thumb. When cookies are almost cool, fill centers with jam.

* You may also coordinate the extract with your choice of nuts. Blanched almonds with almond extract, walnuts with black walnut extract, pecans with butter pecan and so on.

**Sugar maybe substituted for the nuts. I rolled some cookies in color sugar, in raw sugar and in regular granulated sugar. The sugar seemed to work better without rolling them in the egg whites, but they better kept their shape with the nuts.

*** When I used a denser preserve, I put some in a glass bowl and heated (5 or 10 seconds only) it in the microwave to thin it out a little. Also, you can make it really easy on yourself by purchasing jams and/or jellies in squirt bottles. If you cool the cookies completely, the holes can be filled with flavored icing instead.

Makes about 3-1/2 dozen.

Fair and Carnival Desserts

Falling leaves and cool evenings signal that my favorite time of year is here. Every weekend there is some type of festival or fair. Fairs are the best part about fall. Ever since my daughter saw a picture of a Ferris wheel, she has asked daily "is today the day we go to the Ferris?" Luckily, she doesn't see the local papers. She'd want to be at the "Ferris" every night. In our area there are at least four fairs within an hour's drive over the next few weeks. Well, last night was our night to go to the "Ferris".

It was a beautiful evening at the North Georgia State Fair. There is just something about the bright lights, walking on straw, riding rides and smelling funnel cakes that brings out the kid in me. Speaking of being a kid, it was my daughter's first fair and she loved it. She had three goals in mind when she got to the fair. One was to ride the "Ferris", which we did - twice. The second goal was to eat a corn dog, and she did. The last goal was to win a goldfish. (She needed a goldfish so she wouldn't be alone in her room anymore.) For one dollar, she got seven ping pong balls. To win a goldfish, the ball must be thrown into one of the little fish bowls that are stacked in a pyramid shape. Her daddy and I threw two balls each - and missed. She had the remaining balls, and got the fish with the second ball.

Dark Chocolate Orange CheesecakeThere aren't any artificial sweeteners in this cheesecake and yet it can be considered not bad for you. "Why?" you ask. First of all, we, especially women, need to get more calcium into our diets. This cheesecake has 2-1/2 pounds of cream cheese in it. It's also made with eggs: protein. (Cream cheese is also a source of protein.) It has the zest and some of the juice of a real orange in it. (Good source of vitamin C.) Plus the cheesecake is topped with dark chocolate, which is full-of antioxidants. There's only 1 cup of sugar in the entire recipe. There is a little more in the crust, but it's not that bad. Run to the store right now and get the ingredients for this Dark Chocolate - Orange Cheesecake and you can eat healthy, too.

Chocolate Crepe Recipe

Here is the basic recipe for making chocolate-flavored crepes.

Prep Time: 1 hour, 08 minutes

Cook Time: 02 minutes

Total Time: 1 hour, 10 minutes

Ingredients:

  • 4 eggs
  • 1 cup flour
  • 1/2 cup milk
  • 1/2 cup water
  • 1/2 teaspoon salt
  • 2 teaspoons sugar
  • 1 teaspoon vanilla
  • 2 tablespoons melted butter
  • 2 tablespoons chocolate syrup

Preparation:

Measure all ingredients in to blender jar; blend for 30 seconds. Scrape down sides. Blend for 15 seconds more. Cover and let sit for 1 hour. (This helps the flour absorb more of the liquids.)

Regular Crepe Pan Directions:
Heat crepe pan. Lightly grease. Measure about 1/4 cup batter into pan. Tilt pan to spread batter. Once crepe has lots of little bubbles, loosen any edges with spatula. Flip crepe over. This side cooks quickly. Slide crepe from pan to plate.

Makes 12-14 crepes.

This Cinnamon Bundt Cake is lighter than most Bundts and the glaze tastes like the inside of a cinnamon roll.

Prep Time: 25 minutes

Cook Time: 55 minutes

Total Time: 80 minutes

Ingredients:

  • 18 ounce yellow or white cake mix
  • 4 serving size instant vanilla or French vanilla pudding
  • 4 eggs
  • 3/4 cup vegetable oil
  • 3/4 cup milk or water
  • 1 tablespoon cinnamon
  • ----
  • Glaze
  • ----
  • 1/3 cup water
  • 1/2 cup sugar
  • 6 tablespoons butter
  • 1 tablespoon cinnamon

Preparation:

Preheat oven to 350 degrees F. Grease and flour Bundt or tube pan.

Combine cake ingredients. Mix for 2 minutes. Place batter in cake pan. Bake for 50 minutes to 1 hour.

Remove from oven and cool cake in pan on wire rack for 10 minutes.

Combine glaze ingredients over low to medium heat, stirring occasionally, until sugar and butter are melted.

Carefully dump cake onto serving place. Poke holes in top of cake. Evenly pour glaze over warm cake. Use spoon or pastry brush to completely cover cake with glaze that has dripped onto the plate.

Don't cover cake while still warm.

Serve with whipped cream.

Serves 24 or less depending on slice size.
