This is the perfect brownie for me. It's tall and cakey, and yet, it's still richly moist. They are perfect just as they are. Be sure and not to leave out the nuts. They'll enhance your eating satisfaction.

You can make different colored and flavored popcorns with this recipe for Glazed Popcorn. Try the patriotic version below.

Prep Time: 25 minutes

Cook Time: 10 minutes

Total Time: 35 minutes

Ingredients:

  • 8 cups popped popcorn
  • 1/4 cup butter
  • 3 tablespoons light corn syrup
  • 1/2 cup packed light brown sugar
  • 3 ounce package gelatin, your favorite flavor or color

Preparation:

Preheat oven to 300 degrees F. Line a 15x10x1-inch pan with aluminum foil. Place popcorn in large bowl. Heat butter and syrup in small saucepan over low heat. Stir in sugar and gelatin; bring to a boil over medium heat. Reduce heat to low and gently simmer for 5 min. Pour syrup immediately over popcorn, tossing to coat well. Spread evenly. Bake in preheated 300 F oven for 10 min. Cool. Remove from pan and break into small pieces.

U.S. Patriotic Popcorn

Triple the above recipe using 2 different flavors, such as Red and Blue. Layer them in a trifle bowl with plain popcorn in between. Serve any leftover popcorn at another time.

Everyone just loves my sister-in-law's recipe for Peanut Brittle. The last time I made the brittle I made it with cashews. Fabulous.

Prep Time: 15 minutes

Cook Time: 10 minutes

Total Time: 25 minutes

Ingredients:

  • 1-1/2 cup dry roasted or salted peanuts, coarsely chopped or cashews
  • 1 cup sugar
  • 1/2 cup light corn syrup
  • dash salt
  • 1 tablespoon butter
  • 1 tablesppon vanilla
  • 1 teaspoon baking soda

Preparation:

Lightly grease microwavable glass bowl, metal baking sheet* and utensil used for stirring.

Mix nuts, sugar, syrup and salt in glass bowl. Cook for 4 minutes in microwave on high. Stir. Cook** for 3-1/2 more minutes. It will be hot and bubbly.

Stir in butter and vanilla. Cook for 3 more minutes. Add baking soda. (It will foam.) Pour onto cookie sheet. Slightly shake sheet so that it’ll spread out a little.

Once cool, break into small pieces. Keep in an airtight container.

*When greasing the metal pan, I'm going to use butter or margarine. It's strange having spray grease on the bottom of the brittle.

**Cooking times for microwaves vary. When I made my Cashew Brittle I overcooked it slightly. The 3-1/2 minutes on the second time microwaving was too long. I needed to pay more attention to my nose and stopped the oven earlier.

Well, it's that time again for our annual open house. It'll start around 3:00pm and end around 9:00pm. We have had people show up at 1:00pm and not leave until midnight (not the same people, thank goodness). Open houses are great for the party season. It allows people the flexibility to go to more than one party that day. My prayer is the same before every party: "Please don't all show up at the same time." We always invite way more people than our house can hold. The more the merrier right? At this time of year, it is right. I just love all the hustle and bustle.

Good bread is the most fundamentally satisfying of all foods; and good bread with fresh butter, the greatest of all feasts. James Beard

Why should anyone make bread from scratch? A loaf of bread can be purchased for a dollar or so. Or take a mix, add some water and throw it in the bread machine to make a loaf. But good breads are more than that. They are a link to centuries past. Just about everyone has a special bread, or bread story, in their past. For me, making bread has become a very satisfying experience.

Bread has been around for over 10,000 years. The Egyptians are credited with inventing the oven and discovering leavening agents. Flour milling is credited to the Greeks. The Romans improved on the process, and then brought the art of bread making to Europe. From then until now, bread has developed a more festive quality. There are certain breads baked for special holidays. Even today, generations that have come to the new world, may not have passed on a language, but have shared the family bread recipe.

My history of bread making began with my father. He had a job that was very frustrating. Instead of taking his frustration out on Mom and me, he sent that energy another way. He got rid of it by kneading bread. Over the years he made many different types of bread. My favorite bread is Julekake, a Christmas bread from his Norwegian heritage.

There is nothing like making a loaf of bread from scratch. Unlike a quick bread, a bread made with yeast is so much more satisfying. Yes, it is time consuming, but it's worth every minute. It's extremely gratifying to mold and knead with your bare hands. It's a very basic, earth connecting experience. The suspense is exhilarating waiting to see if the dough will rise. Then the best, or almost the best part is the aroma. There is absolutely nothing that smells better from the oven than fresh baked bread. The smell can linger for days. Nothing says "home" like the fragrance of freshly baked bread. Of course, biting into a piece of warm bread with butter melting on it, isn't too bad either.

Ingredients:

  • 5 eggs
  • 3 cups sugar
  • 1 can sweetened condensed milk
  • 2 cups whipping cream
  • 2 pints half and half
  • 2 tablespoons vanilla
  • milk

Preparation:

Beat 5 eggs. Add sugar and combine completely. Stir in rest of ingredients. Pour into ice cream freezer. Freeze according to freezer directions. You can add any type of fruit or candy as long as it is finely chopped.

Total Time: 40 minutes

Yield: Two 9-inch Cake Rounds

Ingredients:

  • 2 cups cake flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 3 large eggs, room temperature
  • 2 teaspoons vanilla
  • 3/4 cup milk

Preparation:

Preheat oven to 350°F. Grease and flour 2 9-inch cake pans.

In bowl, combine flour, baking powder, and salt with a wire whisk.

Cream butter and sugar until light and fluffy. Beat in eggs, one at a time. Add vanilla and mix until completely combines. Slowly add flour alternately with milk. At end of addition batter should be smooth. Divide between 2 pans.

Bake Yellow Cake Recipe for 20 to 25 minutes. Cool 5 minutes in pan, then invert onto a rack and cool completely before frosting.

For a 9 x 13 pan - Baked at 350 degrees F. for 30 to 38 minutes.

The Bottom Line

This is the easiest rice cooker I've ever used, and I've been using rice cookers for over 20 years. I was pleasantly surprised when the dessert I made came out perfectly. By using the rice and steamed vegetable option, making dinner and cleaning-up was a snap.

There's a rule. If there aren't enough eggs for everyone, then it's time to make French Toast. Even better add to that I had an almost stale French Bread loaf half and some aging eggnog; voilà! it's Eggnog French Toast.

Prep Time: 15 minutes

Cook Time: 05 minutes

Ingredients:

  • 6 to 8-inch day old loaf French Bread, cut into 1-inch slices
  • 3 eggs
  • 3/4 cup (apprx.) eggnog
  • 1/4 teaspoon freshly grated nutmeg
  • oil for pan
  • maple syrup

Preparation:

Heat lightly oiled frying pan. Break eggs into measuring cup. Double liquid amount in cup by adding eggnog. Add nutmeg. Whisk together. Pour into shallow bowl. Dip bread into bowl; coating both sides. Fry until golden brown. Serve warm with syrup.

Servings depend on number of slices.

  • 2 eggs yolks

Preparation:

Preheat waffle maker. Put all ingredients, except egg whites, in a large mixer bowl. Beat on low until moistened. Increase to medium, mix until smooth. By hand, gently fold in beaten egg whites. Pour 1/2 cup batter over grids. Close waffle maker, bake until steam no longer escapes, about 3-5 minutes. Repeat. Serve Light and Crispy Belgium Waffles while hot with your favorite topping or homemade syrup.

Crumb Crust

Here is a recipe for a crumb crust. It is typically found on Dutch Apple Pies, but it can be used on the top of any baked fruit pie.

Prep Time: 15 minutes

Cook Time: 50 minutes

Total Time: 65 minutes

Ingredients:

  • 1/2 cup sugar
  • 1/2 cup flour
  • 1/2 cup butter, cold

Preparation:

Preheat oven to 425 degrees F. Use a food processor, a pastry blender or two knives in scissor fashion to combine the above ingredients. Once blended, the mixture should look like coarse crumbs.

Top fruit pie with crumbs. Bake pie for 10 minutes. Reduce temperature to 350 degrees F. and cook for 30 or more minutes until done. Tent pie during last 20 minutes, if necessary.

Chocolate Ice Cream is a favorite of many.

Prep Time: 25 minutes

Cook Time: 45 minutes

Total Time: 70 minutes

Ingredients:

  • 1 cup heavy cream
  • 1 cup light cream* (half and half)
  • 1/2 cup sugar
  • 3/4 teaspoon vanilla extract
  • 1 pinch salt
  • 1/4 cup chocolate syrup or 3 tablespoons cocoa
  • 1/8 teaspoon cinnamon (optional)

Preparation:

Combine ingredients. Stir until sugar dissolves. Freeze according to ice cream freezer's directions.

1/2 cup cream and 1/2 cup milk may be substituted for light cream.

You'll be addicted too. All it took for me was popping one Sugared Cranberry into my mouth and I was hooked. Who thought something so tasty could be good for you too? Be sure to take a bowl of these to that special New Year's Eve or Day party you're going to be attending. It's way above the normal chips and dips being served. Plus, can you imagine how nice that glass of champagne will look with a couple of these floating around in it?

Joanne says that she got this recipe from her aunt at a bridal shower in 1959. She says that the rolls freeze wonderfully and can be reheated in the microwave. Her other hint is that she also uses the dough as a refrigerator dough and bakes the rolls the next day.

Prep Time: 2 hours

Cook Time: 20 minutes

Total Time: 2 hours, 20 minutes

Ingredients:

  • The Roll
  • 1-1/2 packages (about 3-1/4 teaspoons) dry yeast
  • 1/4 cup warm water
  • 1/2 cup shortening
  • 1/3 cup sugar
  • 1-1/2 teaspoon salt
  • 1 cup milk
  • 1 egg
  • 4 to 5 cups sifted flour
  • melted butter
  • brown sugar
  • cinnamon
  • raisins (optional)
  • ---
  • Vanilla Frosting
  • 2 cups powdered sugar
  • 1 tablespoon butter, melted
  • 1 teaspoon vanilla
  • milk or cream (2 to 4 tablespoons)

Preparation:

Add the warm water to the yeast and soak 10 minutes.

Scald milk; pour over the shortening. Add sugar and salt and cool to tepid. Add the dissolved yeast and beaten egg. Add 4 cups flour adding one at a time beating after each addition.

Dough should be soft yet firm enough to handle. Knead on floured board until elastic and smooth. Avoid too much flour. Turn dough into well oiled bowl. Let rise for 1-1/2 hours.

Press dough down and divide into workable size. Roll dough out into a rectangle. Cover with melted butter. Layer with a generous thick layer* of brown sugar. Sprinkle on cinnamon* as desired. If you like raisins, layer on a layer of raisins. Roll up jellyroll fashion.

Using a scissors or a piece of string, cut off slices about 1 to 1-1/2 inches thick. Place slices in an 8 or 9 inch round greased cake pan. Place one slice in the middle and other slices around it. Press rolls down to even out and fill pan. Let rise until rolls fill the pan generously...about another hour.

Bake in a 350 degree F oven about 15 - 20 minutes. If rolls get too brown, cover with a piece of tine foil until the end of baking. Do not over bake rolls.

Remove immediately from pan by inverting onto a plate and then tip over onto another plate to right the rolls.

For the Frosting:
In a medium bowl, place sugar, butter and vanilla. Then stir in enough milk or cream to reach a thick, hardly-able to stir consistency.

Spread over warm rolls as soon as they are placed on a plate to let the frosting melt and run into the rolls.

* I was pretty generous with both the brown sugar and cinnamon. I ended up with about a 1/2 inch layer of brown sugar completely covered with cinnamon. - Carroll

When you combine tart apples with tart cranberries and you get this brillant holiday pie.

Prep Time: 25 minutes

Cook Time: 50 minutes

Total Time: 1 hour, 15 minutes

Ingredients:

  • pastry for 2 - 9-inch crust pie
  • 4 cups cored, peeled and sliced tart apples
  • 2 cups fresh or completely defrosted and drained cranberries
  • 3/4 cup brown sugar
  • 1/2 (plus) cup sugar
  • 1/3 cup flour
  • 1 teaspoon freshly ground nutmeg or cinnamon
  • milk

Preparation:

Preheat oven to 425º F. Cover cookie sheet with foil. Line pie plate with bottom pastry.

Combine all ingredients except milk. Mix well. Pour into prepared pie plate. Cover with top crust. Seal edges and cut several slits in top crust. Paint with milk and sprinkle with sugar.

Place pie on cookie sheet and bake 50 minutes or until golden brown. Cover edges with foil if browning too fast.
