Please enjoy this recipe for Peanut Butter Cookie Bites. It's made with only 4 ingredients.

Prep Time: 15 minutes

Cook Time: 10 minutes

Total Time: 25 minutes

Ingredients:

  • 1 egg
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 1 cup crunchy peanut butter

Preparation:

Preheat the oven to 350 degrees F. Lightly grease large cookie sheet. Mix together egg and sugar. Add vanilla. Blend in peanut butter until all combined. Scoop heaping teaspoons onto prepared cookie sheet. Bake for 8 to 10 minutes.

Makes 30 to 36 Peanut Butter Cookie Bites.

Icebox Cookies are also known as Refrigerator Cookies and Slice-and-Bake Cookies. Making Icebox Cookie dough is not that different from making any other cookie dough. The day before, begin by mixing the dry ingredients (2 cups of flour, 1/4 teaspoon each of salt and baking powder) in a large bowl. In another bowl, cream 3/4 cup butter, 1/2 cup each granulated and powdered sugar. For this recipe, mix in the zest of 1 orange, 2 tablespoons orange juice and 1/2 teaspoon orange extract. Mix completely to form a stiff and slightly greasy ball of dough.

Kids of all ages will enjoy this simple recipe for Peanut Butter Bars.

Prep Time: 20 minutes

Cook Time: 35 minutes

Total Time: 55 minutes

Ingredients:

  • 1-1/2 cups rolled oats
  • 1/2 teaspoon salt
  • 14 ounce can sweetened condensed milk
  • 1/2 teaspoon vanilla
  • 1/2 cup crunchy or plain peanut butter
  • 1 cup peanut butter chips*

Preparation:

Preheat oven to 350 degrees F. Grease an 8-in square baking pan. Mix oats, salt, milk and vanilla. Stir in peanut butter and chips. Press into prepared baking pan. Bake for 35 minutes. Remove to rack to cool completely. Makes 9 large or 16 medium-sized bar cookies.

*May substitute semi-sweet chocolate chips.

How to Make Icebox Cookies with Photo Instructions

Prep Time: 1 hour, 15 minutes

Cook Time: 12 minutes

Chill Overnight or at least: 1 hour

Total Time: 2 hours, 27 minutes

Ingredients:

  • 1/2 cup sugar
  • 1/2 cup packed brown sugar
  • 1/4 cup butter, softened
  • 1/4 cup solid shortening
  • 1/2 cup peanut butter, plain
  • 1 egg, beaten
  • 1 teaspoon vanilla
  • 1-1/4 cup flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Preparation:

In a large bowl, cream sugars, butter, and shortening. Add peanut butter, egg, and vanilla. Mix thoroughly.

Combine flour, soda, baking powder, and salt in a medium bowl. Gradually add to peanut butter mixture until completely combined.

Cover bowl and chill for 1 hour or overnight.

Preheat oven to 375 degrees F. Lightly grease cookie sheet(s). Shape dough into 1-inch balls. Place on cookie sheet 3 inches apart. Flatten balls in a criss-cross pattern with a fork dipped in flour. A flour-dipped cookie press or the flat bottom of a small glass may also be used.

Bake 10 to 12 minutes.

Store in a loosely covered container, like a cookie jar, for harder-crisper cookies. For softer cookies, store in an airtight container.

All you need is whipping cream, artificial sweetener and cocoa to make this recipe for Low Carb Chocolate Mousse.

Prep Time: 05 minutes

Cook Time: 02 minutes

Total Time: 7 minutes

Ingredients:

  • 1/2 cup heavy or whipping cream (apprx. 8 carbs)
  • 4 teaspoons artificial sweetener (0 carbs)
  • 1 tablespoon cooca powder (2 carbs)
  • Optional: spray can real whipped cream (0 carbs)

Preparation:

Put all ingredients, in order, in a blender. Blend and eat. For that special touch, spoon into a crystal wine glass and top with a small squirt of spray can whipped cream and a sprinkling of cocoa powder

Note: I made this in the Magic-Bullet Blender System. Buzz, buzz and it was done. I also used Spenda for the artificial sweetener.

Ingredients:

  • 6-ounces (1 cup) semi-sweet chocolate chips
  • 1 cup creamy peanut butter
  • 1/2 cup butter
  • 1 cup sifted powdered sugar

Preparation:

Line an 8-inch square pan with foil and butter it. In a double boiler, melt chocolate, peanut butter and butter. Stir to combine. Stir in sugar until it melts. Pour into prepared pan. Cool and cut into squares. Store in refrigerator.

I will be the first one to admit that I hadn't decorated a sugar cookie since I was in elementary school. They seemed too much trouble. You spend all that time decorating to just go ahead and eat them. But times have changed, and I have an elementary-aged child who loves to dabble in the arts (painting and sculpting clay). Loretta also likes to show off her culinary skills (she's moved from stirring a pot of water on her little table to making supervised scrambled eggs). She also loves decorating sugar cookies with her friends. There's a lot of entertainment packed into flour, colored sugars and a few eggs.

Sugar cookies are a rolled cookie in which the dough is made ahead of time and refrigerated. The dough also freezes well. I always make mine ahead of time. Even if you don't have time to make the dough yourself, there are some good store bought versions out there. Kids don't notice any difference. I think the fun is in the decorating not the eating. Although, I must say this recipe for sugar cookies is pretty good. In fact one of Loretta's teachers says that my sugar cookies are "sturdy, yet tasty." Sturdy means perfect for decorating and tasty means good to eat too.

This is the most popular cake recipe on my site. Maybe because it's a tried-and-true recipe which makes the moistest cake. It's the one cake I know of that gets better as it ages. Although, most of the time it doesn't last very long. It's also the perfect cake for mailing. The rum acts as the perfect preservative. It freezes beautifully also.

  • 4 tablespoons butter, melted and cooled

Preparation:

Preheat oven to 350 degrees F. Place nuts in large bowl. Add butter and mix until coated. Add salt and stir again. Spread in single layer in large sided baking sheet. Bake to 15 to 20 minutes. Stir occassionaly. Cool in pan for 15 minutes on cooling rack. Transfer to paper towels to cool completely. Freezes beautifully.

Easy Crepes Suzette

Here is an easy way to make that old restaurant standard - Crepes Suzette.

Prep Time: 25 minutes

Cook Time: 10 minutes

Total Time: 35 minutes

Ingredients:

  • 1/4 cup butter
  • 15 ounce jar (apprx. 2 cups) orange marmalade
  • 10 crepes
  • 1/4 cup orange-flavored liquor
  • 2 tablespoons brandy

Preparation:

Heat butter and marmalade in skillet until just bubbling. Add 1st crepe. Allow for sauce to cover both sides. Fold in half and then half again. Push folded crepe to side of pan and repeat with the remaining crepes. *Sprinkle crepes with liquor and brandy. With a long match very carefully ignite** pan. Carefully, spoon liquid over crepes in pan or rotate pan until flames go out. Serve 2 warm crepes per person.

**If you prefer not to flame your crepes, add the liqueur and brandy with the butter. Allow to cook a little before adding marmalade. Most of the alcohol should burn-off with this method as well.

Preparation:

Make batter according to mix directions. Stir in chocolate syrup and liqueur/coffee flavor. Bake according to box directions.

Cook Time: 3 hours

Total Time: 3 hours, 20 minutes

Ingredients:

  • 1/2 cup sugar
  • 1/4 teaspoon freshly ground nutmeg
  • 2 cups milk
  • 2 eggs
  • 4 cups 1/2 inch cubes stale bread or cake
  • 1/4 cup raisins

Preparation:

Beat sugar, nutmeg, milk and eggs. Completely combine. Put cubes in buttered crockpot. Pour egg mixture over them. Allow to stand until liquid is absorbed. Mix in raisins. Cover and cook on high for 2 to 3 hours.

I've received many requests on how to use the Sunbeam's M'sieur Crepe Electric Crepemaker. Here are the same instructions that my father gave me many years ago. I still follow them today.
  1. Wipe the domed part of the crepe maker with oil. Wipe off any excess.
  2. Set the machine to low.
  3. Place the pan on unit.
  4. Preheat it for 4 minutes. (Dad used a stop watch; he was very precise.)
  5. Dip the inverted pan into the batter about 1/4 inch. (I make my batter in a blender, let it sit for an hour, hand stir slightly, pour it into a 9-inch glass pie plate.)
  6. Hold the pan in the batter for about 3 to 4 seconds.
  7. Bake for 1 to 1/2 minutes.*
  8. Invert crepe onto plate.
  9. Put the pan back on the burner for a couple of seconds (to reheat pan), and then dip back into the batter.
  10. Got holes in your crepe? While crepe is baking, I'm usually standing by with a spoon to quickly put a little batter over the hole. If you're serving your crepes wrapped around something, no one will notice the patches.

This Applesauce Cake is an old-fashioned from scratch cake recipe.

Total Time: 75 minutes

Ingredients:

  • 1 cup sugar
  • 1 cup cold applesauce
  • 1/2 cup butter, softened
  • 1 teaspoon baking soda (dissolved in 1 Tbsp warm water)
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla
  • 1 cup raisins
  • 2 cups flour

Preparation:

Preheat oven to 375 degrees. Grease and flour a 9x13 inch pan. In large bowl stir together all the above ingredients except the flour. Add flour; mix well. Pour into prepared pan. Bake for 45 minutes.
