Easy Peach CobblerWith fresh peaches being so prevalent this time it's easy to have a few past the point of eating plain. It only took seven small to medium peaches to fill a 9x13 pan for this cobbler recipe. If you only have 3 peaches, half the recipe by using a single layer cake mix and half of the other ingredients.

The Perfect Chocolate Filling

Chocolate Pastry Cream can be a lovely filling for your next pastry or cake.

Prep Time: 25 minutes

Total Time: 25 minutes

Ingredients:

  • 2-1/4 cups milk
  • 4 egg yolks
  • 2/3 cups sugar
  • 1/4 cup cornstarch
  • 1/4 cup flour
  • 2 tablespoons vanilla extract
  • 3 ounces semisweet chocolate, melted
  • 1 ounce unsweetened chocolate, melted

Preparation:

Boil 2 cups of milk. Beat yolks with sugar and remaining milk. Whisk until smooth. Add cornstarch and flour until combined. Gradually whisk hot milk into egg mixture. Return to saucepan. Cook over medium heat, stirring constantly until mixture boils and thickens. Reduce to low and stir for 2 minutes longer. Remove from heat. Stir in vanilla and melted chocolates. Pour into a shallow disk. Cover with plastic wrap. (Make sure wrap touches surface to prevent a skim from forming.) Cool to room temperature. Refrigerate for 2 hours or overnight. Makes approximately 3 cups.

A Slump is similar to a Cobbler or a Grunt. They are all fruit covered with dough and baked in the oven. The only difference is that this slump is served inverted on a serving platter.

Prep Time: 25 minutes

Cook Time: 25 minutes

Total Time: 50 minutes

Ingredients:

  • 8 cups peeled, pitted and thinly sliced peaches (about 8 medium peaches)
  • 2 tablespoons light brown sugar
  • 1/2 teaspoon almond extract
  • 1/2 teaspoon nutmeg
  • -----
  • 1-1/2 cup flour
  • 2 teaspoons baking powder
  • 2 tablespoons sugar
  • 1/3 cup butter
  • 1/2 cup milk
  • 1/4 cup buttermilk
  • 1 egg

Preparation:

Preheat oven to Preheat the oven to 400F. Lightly butter a 1-1/2 quart baking dish.

Combine first set of ingredients. Spread in the bottom of dish. Stir together flour, baking powder, and sugar with wire whisk. Cut the butter into the flour mixture, until it forms coarse crumbs. Combine milk, buttermilk, and egg. Add to flour mixture. Do not knead; the dough will be sticky, stiff, and lumpy. Drop by the spoonful over the peaches.

Bake for 25 minutes or until the top is golden and the juices are bubbling. Cool on a wire rack for about 5 minutes. Then loosen the biscuit from the sides of the pan and invert onto a serving platter.

This recipe for a chocolate chip cheese ball is the perfect appetizer served with graham crackers or ginger snaps.

Prep Time: 25 minutes

Total Time: 25 minutes

Ingredients:

  • 1 8-ounce package cream cheese, softened
  • 1/2 cup butter, softened
  • 1/4 teaspoon vanilla
  • 3/4 cup powdered sugar
  • 2 tablespoons brown sugar
  • 3/4 cup miniature semi-sweet chocolate chips
  • 3/4 cup finely chopped and lightly toasted pecans, walnuts, almonds or hazelnuts

Preparation:

In a mixing bowl, beat the cream cheese, butter and vanilla until fluffy. Gradually add sugars, beat just until combined. Stir in chocolate chips. Cover and refrigerate for 2 hours. Place cream cheese mixture on a large piece of plastic wrap; shape into a ball. Refrigerate for at least 1 hour. Just before serving roll cheese ball in nuts.

Fruits of the Forest Berry Pie

For Thanksgiving, I wanted to bake a Blackberry Pie for a dear friend and neighbor. Unfortunately, I was in a hurry and was only able to find one 1/2 pint of blackberries. Since she loves all berries, I was able to improvise and came up with this multi-berry Fruits of the Forest Berry Pie.

Prep Time: 20 minutes

Cook Time: 45 minutes

Total Time: 65 minutes

Ingredients:

  • double 9-inch pie crust pastry
  • 1/2 pint blackberries
  • 1/2 pint raspberries
  • 1/2 pint blueberries
  • 1- 21 ounce can strawberry pie filling
  • milk
  • sugar

Preparation:

Preheat oven to 425 degrees F. Wash and drain berries. Press bottom pie dough into glass pie plate. Place berries in pie crust in even amounts. Pick strawberries out of pie filling. Spread out strawberries amoung other berries. Fill pie shell with rest of can filling. Only fill to just under inside rim of pie plate. (Save remaining filling for other uses.) Cover with either latticed or vented top crust. Paint pie crust with milk and sprinkle with sugar. Bake Fruits of the Forest Berry Pie for 40-45 minutes. Tent edges of pie crust if necessary.
