Prep Time: 25 minutes

Cook Time: 55 minutes

Total Time: 80 minutes

Ingredients:

  • 1 cup butter, softened
  • 2 cups sugar
  • 2 cups flour
  • 5 eggs, slightly beaten
  • juice and zest of 1 lemon

Preparation:

Preheat oven to 325 degrees F. Grease and flour tube or Bundt cake pan. Cream butter and sugar. Alternately add eggs and flour. Add lemon juice and zest. Bake for 45 to 55 minutes.

Serve with Fresh Lemon Glaze.

I'll admit it. I just can't leave a recipe alone. I've got to "fine-tune" it. The first moment I heard about this candy, I knew it was what we'd be using as teacher gifts. Well, not only was it a hit with the teachers, but visiting family have devoured them. Thanks Betty for the original recipe.

Prep Time: 1 hour

Cook Time: 3 hours

Total Time: 4 hours

Ingredients:

  • 2 pounds (2 - 16 ounce jars) dry roasted peanuts, salted*
  • 48 ounces almond bark white chocolate
  • 4 ounces sweet German chocolate
  • 10 - 12 ounces dark chocolate**

Preparation:

Place all ingredients in crockpot. Cook on low for 3 hours***. Don't touch. Turn pot off and let sit for 20 minutes. Cover a large surface (about 3 square feet) with waxed or parchment paper. Stir mixture completely. Drop by teaspoons full (I used iced tea teaspoons) onto paper. Let harden and store in airtight containers.

Notes in the Margin:

*Betty's recipe originally called for 1/2 salted and 1/2 unsalted dry roasted nuts. I much prefer using all salted nuts.
**Using almond bark tends to make the chocolate nuts very sweet. To tone-down the sweetness and increase the chocolate-flavor, I used dark chocolate.
*** On the first time making this, you may wish to look at your mixture at 2 hours. I've made this recipe many, many times in two different types of crockpots and never had a problem. Unfortunately, I did have a friend whose crockpot may have cooked hotter than the low setting. Her chocolate dried-out. So when you peek, if possible try not to lift the lid, the chocolate should look slightly melted and not dry. If it looks okay, continue cooking until 3 hours is reached.

Crockpot Banana Bread

There isn't that much cooking time added to making this loaf of banana bread. Besides it's worth it if you don't have access to an oven or it's too hot to use yours.

Prep Time: 30 minutes

Cook Time: 2 hours

Total Time: 2 hours, 30 minutes

Ingredients:

  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 cup cropped pecans, lightly toasted
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 4 small ripe bananas, mashed
  • 2 tablespoons plus 2 teaspoons milk
  • 1 teaspoon vanilla

Preparation:

Turn crockpot on high. Grease and flour manufacturer's insert or 2 pound metal container. Mix flour, baking soda and salt in medium bowl. Add nuts and set aside. In another bowl, cream butter with sugar. Add eggs, one at a time. Add milk and vanilla. Mix completely. Stir in bananas until well mixed. Gradually add flour mixture. Stir until just combined. *Place insert into crockpot. Carefully add batter. Cover. Put lid on crockpot and bake for 2 to 3 hours or until done. Be sure not to check on bread until it's cooked at least 2 hours.

*If using other metal container, either place a rack or crumpled aluminum foil at bottom of crockpot. Place container on top. After adding batter, top container with several paper towels. Make sure crockpot lid is loose and bake for regular amount of time.

This recipe for Tiramisu is more of an original recipe in that is uses egg whites. Thanks Ailene for the recipe.

Prep Time: 25 minutes

Total Time: 25 minutes

Ingredients:

  • 8 eggs
  • 1-1/2 cup sugar
  • 24 ounces mascarpone cheese
  • 1 teaspoon vanilla
  • 2-1/2 boxes of Lady Fingers (apprx. 60 cookies)
  • 1 cup espresso
  • 1/4 cup Kahlua
  • 1/4 cup Amaretto
  • cocoa powder

Preparation:

Separate eggs. In large bowl beat egg whites until frothy then slowly add ¾ cup sugar beating until soft but firm peaks form. Set aside. In another large bowl beat egg yolks and ¾ cup sugar until thick and pale yellow in color. Add vanilla. Fold marscapone cheese into egg yolk mixture. Gently fold egg whites into marscapone mixture 1/3 portion at a time. In a small bowl stir together espresso, Kahlua, and Amaretto. Dip the lady fingers in the espresso mixture for a moment and line the entire bottom of the 9x13 pan. Pour 1/2 the marscapone mixture over the lady fingers, then dust with cocoa. Repeat a second layer of soaked lady fingers, marscapone mixture, and cocoa. Refrigerate.

May be made the day before or several hours before.

Servings: apprx. 24.

Use the best ingredients for the best results in this recipe for Gourmet Chocolate Covered Nuts. My husband took a large container of these to a silly Santa gift exchange. This was the gift that was the most fought-over.

Prep Time: 15 minutes

Cook Time: 3 hours

Total Time: 3 hours, 15 minutes

Yield: 6 pounds

Ingredients:

  • 2 pounds fancy mixed nuts (or other premium salted nut)
  • 1 pound dark or bittersweet chocolate
  • 48 ounces bark, white or chocolate flavored

Preparation:

Want the perfect gift for your college-bound child? Buy them a crockpot. Not only can you make meals in it, but desserts and breads can be made in there as well. Crockpots are perfect for anyone who wants to bake, but doesn't can't wait around for it to be done. You'll find the simple crockpot baking instructions below.

Besides a Crockpot (slow cooker or electric cooker), you'll need:

  • The manufacturer's baking insert with a lid and baking rack.

    - OR -

  • An 1, 2 or 3 pound coffee or nut can or any metal mold that holds 4, 8 or 12 cups. (copper gelatin molds, baking pans, etc.)
  • A double thickness of paper towels.
  • Aluminum foil.

Crockpot Baking is so simple that all you have to do is:

  • Grease insert or can with solid vegetable shortening.
  • Only half fill the insert or can. This allows for rising.
  • Heat needs to be able to circulate around the insert. If a baking rack isn't available, crumple up enough aluminum foil to raise the can about an inch from the bottom of the crockpot.
  • If there is not lid, cover the can with a double thickness of paper towels.
  • Place lid on crockpot for baking.
  • Generally, baking is done on high heat, but you should follow the recipe instructions.
  • Only lift lid to check for doneness. Lifting the lid too often will let necessary heat escape.
  • Use pot holders or folded paper towels to remove can or insert from crockpot.
  • To more easily remove cake or bread from a can, open bottom of can with can opener and push food out.

Baking TubesLike many grandparents these days, my next door neighbor is in charge of taking her granddaughter to preschool each day. She's also signed-up to provide snack a couple of times during the school year. She was just telling me how she was going to use cookie cutters to cut pieces of bread to make sandwiches. Instead of cutting bread, why not make your own shaped-breads in these shiny metal baking tubes. The little children will be thrilled to see sandwiches made in heart, flower or star-shapes.

It takes place between two men in a restaurant. They're talking about dating and one of the men just blurts out: "Tiramisu." The other doesn't know what Tiramisu is. He still doesn't get to find out even after pleading: "Some woman is gonna want me to do it to her and I'm not gonna know what it is!"
