They have all of the necessary components like being sweet and slightly salty, but also the oats will "stick-with-you" for a while.

I grew-up shopping on the day after Thanksgiving. It was a joy shopping with my grandmother and then with my friends as I grew older. The stores went from opening at regular time, and then it got earlier and earlier as the years went on. I didn't complain too much at having to get up at 4:00am to be at a store a 5:00am. We'd shop, have breakfast and be home by lunch. I'd take a nap and then have all of my gifts wrapped by dinnertime. This year, they've finally, and totally ruined it for me. What is the point of the day-after-Thanksgiving shopping taking place Thanksgiving night? How many diehards will be shopping at one store at 10:00pm, then another at midnight, while others don't open until 5:00am. Some store somewhere is going to lose out.

I will confess that I will be going this year, but only as the chauffeur to my daughter and her friends. While they shop, I'll be in the car with a cup of coffee and one of these Oatmeal Bar Cookies, while reading the latest Janet Evanovich novel, Explosive Eighteen. Hopefully, the latest antics of Stephanie and Lula will keep me awake. Just so you know, I've already done most of my shopping online and at a couple of smaller local stores.

On Being Thankful

I made these Banana Muffins. Hum? One dozen muffins. I ate two and there are only two left. There are three girls. You do the math.

Next up: Cranberry Relish. Then,� there are the two pies. I'll blog try to blog later. I want to get a head start on the casseroles today, too.

Plus, the girls are here to "help" decorate for Christmas. It's just been no fun with a bum knee. You've just got to be careful doing Zumba in an 50 plus-year-old, overweight body. The knees will object. Thank goodness for knee braces or I wouldn't be able to cook at all.

No one will miss the sugar in this recipe.

Prep Time: 30 minutes

Cook Time: 55 minutes

Total Time: 85 minutes

Ingredients:

  • 9-inch pie pastry
  • 16-ounce can pumpkin
  • 12-ounce can evaporated milk
  • 3 eggs
  • 3/4 cup artificial sweetener
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon*
  • 1/2 teaspoon ground ginger*
  • 1/4 teaspoon ground nutmeg*
  • 1/8 teaspoon ground cloves*

Preparation:

Preheat oven to 425 degrees F. Beat pumpkin, milk and eggs. Beat in rest of ingredients. Pour into pastry lined pie pan. Bake for 15 minutes. Reduce heat to 350 degrees F. Bake for 40 minutes or until knife inserted near center comes out clean. Cool on wire rack. Serve with sugar free whipped cream.

* Or 2 teaspoons pumpkin pie spice

Pumpkin or Mincemeat, that is the question. Whether it be nobler to eat a pie made from a vegetable or one from dried fruit? This is the controversy that has probably been going on since that first Thanksgiving with the Indians. You either love or hate these pies. The in between is knowing you only have to tolerate them once a year. If you're lucky, you may be at, or host, a dinner with lots of guests. This way both pies are made, and you can pick your favorite. Or, like in politics, choose the lesser of two evils.

When I was growing up, we didn't have Pumpkin or Mincemeat Pies for Thanksgiving Dessert. Mom and I could never agree... She liked Mincemeat (I didn't) and I liked Pumpkin (and she didn't). Sweet Dad would go either way, if we'd let him. But, we never let him, and we either had to have an Apple or a Pecan Pie that day. (Who's to say you can't do the same? I promise not to tell.)

It seems like everyone gets what they want in one of my favorite foodie movies - What's Cooking?. I just love this movie because it centers around four ethnically-different families celebrating Thanksgiving. A huge portion of this movie shows the families preparing their traditional Thanksgiving meals. Everyone had a turkey, but they also served them with dishes from their ethnic backgrouds. Warning: This movie will make you very hungry.

Cranberry Crunch is a wonderful bar cookie anytime of year.

Prep Time: 15 minutes

Cook Time: 45 minutes

Total Time: 60 minutes

Ingredients:

  • 1-1/2 cups uncooked rolled oats
  • 1/2 cup flour
  • 3/4 cup brown sugar
  • 1/3 cup butter
  • 1-16 ounce can Jellied or Whole Berry Cranberry Sauce*

Preparation:

Preheat oven to 350 degrees F. In a bowl, mix together oats, flour and brown sugar. Cut in butter until crumbly. Use half of the mixture in a greased 8 inch square baking dish. Spread with cranberry sauce. Top with remaining crumb mixture. Bake 45 minutes. Serve wam topped with ice cream. Makes 9 servings.

*You could substitute any jam/jelly or pie filling for the cranberry sauce.

America's Original Budget Dessert:

Chess Pies are very sweet pies that originated on the farm, especially the Southern farm. They are a natural farm dessert because everything necessary for the simple chess pie can be found easily: eggs, sugar, butter, and cream. Flour is also needed for the crust. When the farmers had more access to different ingredients these pies were flavored. Two other ingredients you are also likely to find are vinegar and cornmeal. Vinegar adds a sweet and sour flavor and cornmeal enhances the texture of the pie. A Lemon Chess Pie is very common, and is made with either the addition of lemon extract or lemon juice. Other pies evolved like chocolate and the more exotic, coconut.

A chess pie is a wonderful surprise, and so easy to make. The ingredients are simply mixed together, put in the unbaked pie shell and then baked for a half-hour or so. It's amazing how something so simple can taste so good. The flavorings are up to the baker. To me, a Pecan Pie is similar to a Chess Pie. The custard-like portion under the pecans is just like the texture of the Chess Pie.

Just as Jimmy Buffett music conjures up images of Florida, so does Key Lime Pie. We just spent a fantastic week on the Florida gulf coast. I noticed, while dining out at some of the most wonderful seafood restaurants, that they all had one common dessert: Key Lime Pie. Every restaurant down there seems to serve this refreshing dessert. It reminded me of the greatness of this pie, which is easy to make, too!

Key Limes are indigenous to southern Florida, especially Key West. Unlike regular limes, they are smaller, juicier, and have a yellow skin. Even though the outside is yellow, the inside is green. They have a distinct flavor, as they are more tart and acidic. If you are unable to travel to south Florida for a key lime, you might find them in your local Latin grocery store. Bottled Key lime juice can be ordered from directly from Florida. Nellie and Joe's Famous Key West Lime Juice is carried in my regular supermarket. I've gotten good results from their brand.

Key Lime Pie recipes have few variations. The most common variations are the topping and the crust. The toppings are either a meringue or whipped cream. Using a meringue topping has two advantages. The first is economical. Most Key Lime pies fillings call for egg yolks. The leftover egg whites can be used to make the meringue. The second advantage is meringue always makes a beautiful presentation, those lovely peaks broiled slightly to a golden brown. Whipped cream works for me, because I don't like meringue. It is also easier to make whipped cream, because there is little room for error unlike the meringue. Traditionally, a regular piecrust is used, but a graham cracker crust is becoming more popular. Since a Key Lime Pie is kept and served cold, the regular crust tends to get soggy, but a graham cracker crust does not. Puritans will argue that the graham cracker crust takes away some of the flavor the Key Lime Pie filling. I'll leave the choice up to you.

When you combine tart apples with tart cranberries and you get this brillant holiday pie.

Prep Time: 25 minutes

Cook Time: 50 minutes

Total Time: 1 hour, 15 minutes

Ingredients:

  • pastry for 2 - 9-inch crust pie
  • 4 cups cored, peeled and sliced tart apples
  • 2 cups fresh or completely defrosted and drained cranberries
  • 3/4 cup brown sugar
  • 1/2 (plus) cup sugar
  • 1/3 cup flour
  • 1 teaspoon freshly ground nutmeg or cinnamon
  • milk

Preparation:

Preheat oven to 425º F. Cover cookie sheet with foil. Line pie plate with bottom pastry.

Combine all ingredients except milk. Mix well. Pour into prepared pie plate. Cover with top crust. Seal edges and cut several slits in top crust. Paint with milk and sprinkle with sugar.

Place pie on cookie sheet and bake 50 minutes or until golden brown. Cover edges with foil if browning too fast.

Here is a recipe for New York - Style Cheesecake, which has a sour cream topping.

Prep Time: 35 minutes

Cook Time: 1 hour, 05 minutes

Total Time: 1 hour, 40 minutes

Ingredients:

  • 9 whole graham crackers, about 1-1/2 cups crumbs
  • 1-1/4 cups sugar, divided
  • 1/4 cup butter, melted
  • 2 pounds (4 - 8 ounce packages) cream cheese, softened
  • 4 eggs
  • 2 teaspoons vanilla, divided
  • 16 ounces sour cream, divided

Preparation:

Preheat oven to 325 F. In food processor, process graham crackers and 2 tablespoons sugar. While processing, drizzle in butter. Press mixture into 9-inch springform pan. Bake for 10 minutes. Beat cream cheese and 1 cup sugar. Add eggs one-at-a-time. Stir in 1 teaspoon vanilla and 1 cup sour cream. Combine until well-blended. Pour over crust. Bake for 45 minutes. While baking, stir together remaining sour cream, sugar and vanilla. Remove cheesecake from oven and carefully spread sour cream mixture on top. Bake for additional 10 minutes. Remove from oven and take a knife around the edges. Cool completely before removing rim of pan. Refrigerate for at least 4 hours or overnight. Store leftover cheesecake in the refrigerator.

If you want an exquisite cake perfect for adults, try this recipe for Blueberry Limoncello Cake with a Limoncello Glaze. Luckily, I was able to take a photo of it before my husband took it to a pool party. There wasn't even a single piece left to photograph.

Prep Time: 20 minutes

Cook Time: 35 minutes

Total Time: 55 minutes

Ingredients:

  • 3 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups fresh blueberries
  • 1-1/2 cups butter, room temperature
  • 2 cups sugar
  • 3 eggs, room temperature
  • 1/4 cup plus 1 tablespoon limoncello, divided
  • 2 tablespoons lemon zest, divided
  • 2 cups powdered sugar

Preparation:

Preheat oven to 350 degrees F. Grease 9x13 cake pan. In a large bowl, combine flour, baking soda and salt with a wire whisk. Set aside. Place blueberries in a small bowl. Add 2 tablespoons of dry ingredients. Toss gently and set aside. (This is done so blueberries don't sink to bottom of cake.) In an another bowl, beat butter and sugar until fluffy. Beat in eggs, one at a time. Add 1 tablespoon limoncello. Add the dry mixture and combine completely. Fold in 1 tablespoon zest and blueberries. Carefully add batter to prepared pan. Bake for 30-35 minutes. Cool pan on rack for 15 minutes before adding glaze. Cool completely before serving.

Glaze: With a wire whisk, stir together powdered sugar, 1/4 cup limoncello and 1 tablespoon lemon zest. Drizzle over cake, then spread for even consistancy.

Yes butter, because butter (good butter, not a cheap store brand) is $2.50 a pound at my local grocery store. That's more than $1.00 under the normal price. I'm going to buy at least 10 pounds. I'll keep a pound or two in my fridge and the rest goes into the freezer. It can be frozen for up to a year! Baked goods always taste better made with real butter.

This is the bread pudding my mother just loved to make and eat.

Prep Time: 30 minutes

Cook Time: 25 minutes

Total Time: 55 minutes

Ingredients:

  • 1/2 cup butter, softened
  • 1 cup plus 2 tablespoons sugar, divided
  • 2 (12 ounce) cans evaporated milk (apprx. 3 cups)
  • 3 eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 teaspoon freshly ground nutmeg
  • 1/2 teaspoon salt
  • 1/4 teaspoon cream of tarter
  • 1/4 teaspoon ground ginger
  • 7 slices, stale, white sandwich bread, toasted and torn into small pieces
  • ---
  • HARD SAUCE
  • ---
  • 3 tablespoons butter
  • 3/4 cup powdered sugar, sifted
  • 3 tablespoons rum or Brandy, heated

Preparation:

Cream butter and sugar with an electric mixer. Add the rest of the ingredients except the bread and Hard Sauce. Mix for 3 more minutes.

Preheat the oven to 450 degrees. Line the bottom of a ungreased 8 by 8 inch baking dish evenly with toasted bread. Pour mixture over bread and let set for 1 hour, patting down bread as it floats up.

Bake for about 20-25 minutes or until well browned and the mixture shakes like a bowl of jelly. Remove from oven and let cool before serving.

Makes 8 - 10 servings.

Optional: You can add 1 cup of raisins, coconut or toasted nuts.

Hard Sauce

Melt butter in a small sauce pan. Remove from heat and stir in sugar and liquor. Beat until smooth. Serve over bread pudding.

Yield: 4 cups Cranberry-Orange Relish

Ingredients:

  • 4 medium oranges*, washed
  • 2 pounds fresh cranberries, rinsed and drained
  • 4 cups sugar
  • 1 heaping teaspoon cinnamon**

Preparation:

Early in the day, cut unpeeled oranges into quarters. Remove seeds. Put oranges and cranberries into food processor. While processing, add sugar. Divide between 2 containers. Place one in the refrigerator and the other in the freezer.

Notes in the Margin -

* I'm really lucky in that my brother and sister-in-law always give me a big bag of tangerines from their tree in Florida at this time of year. Needless to say, more than once I've made this relish with tangerines instead of oranges. It still tastes just as good. Depending on the size of tangerines, I used 1 and 1/2 tangerines to each orange required in the recipe.
**I think it was Needlepoint 142 that first told me about adding the cinnamon. It heightens the flavor of the cranberries and oranges.
Typically, I make my relish just before Thanksgiving. Half is eaten then and the other is frozen for Christmas.
Otherwise, I'll use any leftover Cranberry-Orange Relish in two of my favorite breakfast dishes: Baked Oatmeal and Fruited French Toast.

Trail Mix Bread Pudding

Here is a delightful recipe for a bread pudding made with your favorite trail mix.

Ingredients:

  • 1 loaf French bread, torn into 1-inch pieces
  • 1 cup firmly packed trail mix*
  • 1/2 cup butter, melted and cooled
  • 3-3/4 cups milk
  • 3 eggs
  • 2 cups sugar
  • 2 teaspoons coconut extract
  • 1 teaspoon pineapple extract
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon cinnamon
  • ---
  • Rum Sauce
  • ---
  • 1/2 cup butter, melted
  • 1 cup sugar
  • 1 egg
  • 1 cup (or to taste) rum

Preparation:

Preheat oven to 350 degrees F. Lightly grease 10 x 13 glass pan. Spread half of bread in pan. Sprinkle with half trail mix. Cover with rest of bread and then trail mix. Mix butter, milk, eggs, sugar and extracts. Pour over bread. Use back of spoon or fingers to get liquid mixture into bread. Sprinkle with cinnamon. Bake for 45 minutes or until set. Serve warm with rum sauce.

Rum Sauce


In small pan over low to medium heat, stir sugar into melted butter. Stir in egg. Continue to stir until sugar dissolves and mixture is thickened. Add rum and continue to stir until incorporated.

* I used a trail mix with dried cranberries, apricots, nuts and coconut.

Cook Time: 45 minutes

Total Time: 60 minutes

Yield: Makes 18 servings

Ingredients:

  • 1 loaf French bread, torn into 2-inch pieces
  • 1/2 cup butter, melted and cooled
  • 3-3/4 cups chocolate milk
  • 3 eggs
  • 2 cups sugar
  • 2 teaspoons vanilla extract
  • ---
  • 6 whole graham crackers, broken into 1-inch pieces
  • 1-1/2 cups miniature marshmallows
  • 8 (1.5) ounce milk chocolate candy bars, coarsely chopped

Preparation:

Preheat oven to 350 degrees F. Lightly grease 10 x 15 glass pan. Spread bread in pan. Mix butter, milk, eggs, sugar and extract. Pour over bread. Use back of spoon or fingers to get liquid mixture into bread. Bake for 30 minutes. While baking, mix together graham cracker pieces, marshmallows and candy bar pieces. Remove from pan from oven and sprinkle with marshmallow mixture. Continue baking for another 15 minutes or until set. Serve warm.
