Chocolate Peanut Butter Pie uses Tagalongs® - Peanut Butter Patties® Girl Scout Cookies.

Prep Time: 25 minutes

Cook Time: 4 hours

Total Time: 4 hours, 25 minutes

Ingredients:

  • 1-1/3 cups Tagalongs®/ Peanut Butter Patties®, crushed
  • 5 tablespoons butter, melted
  • 1 package (3-1/2 ounce) vanilla pudding
  • 1-1/2 cups milk
  • 1/3 cup peanut butter, creamy or crunchy

Preparation:

Early in the day combine crumbs and butter. Press into a 9-inch pie plate. Combine pudding and milk. Stir in peanut butter. Pour into pie shell. Keep in the refrigerator until ready to serve.

Tagalongs®/ Peanut Butter Patties® Girl Scout Cookies are a regular cookie with soft Peanut Butter and coated with chocolate that comes in a 7 ounce box.

All About Girl Scout Cookies

It’s that time of year again. Well, at least it is in my part of the United States anyway. Yes, it’s cookie time. For those of you who don’t know, cookie time is referring to that special time of year when you can buy Girl Scout cookies. There is a special mystique to Girl Scout Cookies. I believe part of that is due to the fact that you can only buy Girl Scout Cookies once a year and you can only get them from cute little girls in brown (Brownies), green (Junior Girl Scouts) or khaki (Girl Scouts) uniforms.

In the Beginning...

Under Juliette Gordon Low, the woman who brought the Girl Scouts of the USA, cookie sales began back in 1917 to help finance Girl Scout troop activities. At that time the cookies were homemade by the scouts. It wasn’t until 1934 that Girl Scouts began selling commercially baked cookies. By 1937 there were 125 Girl Scout Councils nationwide selling cookies. Today there are over 300 councils selling cookies at different times all year long.

What's in a Name?

Ever wondered why the same cookie may have two different names? And why can't you get the same cookies everywhere? The answer is simple. Girl Scout Cookies are baked in two different bakeries, ABC/Interbake Foods and Little Brownie Bakers. Although, there are some differences you should always be able to find Thin Mints, Do-Si-Dos (Peanut Butter Sandwiches) and Trefoil (Shortbread) cookies.

Which Flavor is Your Favorite?

According to the Girl Scouts of the USA, Thin Mints is the favorite closely followed by Samoas®/Caramel deLites, then it's Peanut Butter Patties®/Tagalongs®, Peanut Butter Sandwich/Do-si-dos™ and then the rest. Thin Mints were my favorite for the longest time. I just love the fact I can eat a chocolate cookie and cleanse my breath at the same time. Last year, I discovered Caramel deLites (Samoas). I just love the caramel, coconut and chocolate combination. This year it’s Animal Treasures. It has such a great taste, a shortbread cookie on top with chocolate on the bottom.

What Do You Do With the Leftover Cookies?

My usual answer to that question is "What leftover cookies?" Yes, the first year my daughter sold them I bought too many boxes. She just had to have that t-shirt. By her third year of selling, she built up a good cliental and we only bought what we’d eat. If you do have leftover cookies, I’ve been told they keep well in the freezer. Another way to use those leftover cookies would be to use them in cooking. I’ve found that the recipes are all pretty much the same. They only seem to change with the cookie type. Question: Why make and bake desserts and breads with nuts?

Answer: These days everyone is looking to make healthier desserts and breads. The best way to do that is to make them with nutriently rich natural super foods like nuts (tree and peanuts) instead of artifical chemicals. According to United States Department of Agriculture's (USDA's) National Agricultural Library nuts are chocked-full of nutrients like Omega-3 and Omega-6 fats, protein, fiber, calcium, iron, maganesium, zinc, copper, folate, vitamins C, B, A, K and so on.

*Note: Not all nuts offer the same nutrients. Check the USDA's website for specific information on nuts such as almonds, walnuts, pecans, macadamia, peanuts, hazelnuts plus many more.

Be sure to serve this wonderful recipe warm topped with Caramel Rum Sauce and a good quality ice cream like homemade Royal Crown Vanilla.

Prep Time: 25 minutes

Cook Time: 35 minutes

Total Time: 60 minutes

Ingredients:

  • 5 tart (like Granny Smith) apples, cored, peeled and sliced
  • 1 cup brown sugar, packed
  • 3/4 cup long cooking oats
  • 3/4 cup flour
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg, freshly ground
  • 1/4 cup butter, softened
  • 1/4 cup apple cider or juice

Preparation:

Preheat oven to 375F. Grease a 9" x 9" pan. Put half of the apples in pan. Blend together remaining ingredients, except juice. Crumble half the sugar mixture over the apples. Cover with remaining apples and sugar mixture. Pour juice over top. Bake 35 minutes.

Serve warm topped with Caramel Rum Sauce and a good quality ice cream like homemade Royal Crown Vanilla.

These Oatmeal Walnut Cookies have a wonderfully chewy texture and a want-at-least-one-more taste.

There are a couple of reasons my family and I just love this recipe. First of all, it's the perfect company dish. Guests are always amazed when I serve them this recipe for Baked Oatmeal on a cold morning. Secondly, this is a recipe with some versatility. You get to choose which fruit or fruit combination goes in this dish. You can see some of our favorites below.

I knew I wanted to make No-Bake Oatmeal Cocoa Cookies for my daughter's church group. Since these were for kids, I didn't want a recipe with nuts or peanut butter in it. This was the perfect recipe.

Oatmeal Bread, a heavy bread, is outstanding when it's either served warm from the oven or toasted with peanut butter on it. This is one of the breads my dad used to make for me.

6. Homemade Granola

There is nothing like homemade granola. It can be used dry as a snack, in a bowl with milk for cereal or baked to make bars.

Although, you can make these Oatmeal Cookies into regular drop cookies, I prefer making them into bar cookies. They are better than any store-bought breakfast bar.

This is one of the simplest desserts you can make. This Apple Crisp is made with layered apples topped with an oatmeal/spice and butter mixture.

Here is a recipe for Easy Cinnamon Rolls. It only has 6 ingredients and one of them is store-bought crescent rolls.

Prep Time: 15 minutes

Cook Time: 12 minutes

Total Time: 27 minutes

Ingredients:

  • 1 - 8 ounce tube crescent rolls
  • 1/4 cup butter, melted, divided
  • 1/4 cup brown sugar, packed
  • 2 tablespoons ground cinnamon
  • 1 cup powdered sugar
  • 2 tablespoons milk

Preparation:

Preheat oven to 375 degrees F. Butter 8 or 9-inch round cake pan. Open crescent rolls can. Pinch seams together to make large rectangle. Brush 1/2 of melted butter over dough. Sprinkle with brown sugar and cinnamon. Roll tightly from long end of rectangle. With serrated knife, cut into 8 rolls. Place in prepared pan. Bake for 10-12 minutes or until tops are lightly browned. Stir together remaining butter, powdered sugar and 2 tablespoons milk to make icing. Spoon icing over rolls just out of oven. Serve cinnamon rolls warm.

This Cinnamon Bundt Cake is lighter than most Bundts and the glaze tastes like the inside of a cinnamon roll.

Prep Time: 25 minutes

Cook Time: 55 minutes

Total Time: 80 minutes

Ingredients:

  • 18 ounce yellow or white cake mix
  • 4 serving size instant vanilla or French vanilla pudding
  • 4 eggs
  • 3/4 cup vegetable oil
  • 3/4 cup milk or water
  • 1 tablespoon cinnamon
  • ----
  • Glaze
  • ----
  • 1/3 cup water
  • 1/2 cup sugar
  • 6 tablespoons butter
  • 1 tablespoon cinnamon

Preparation:

Preheat oven to 350 degrees F. Grease and flour Bundt or tube pan.

Combine cake ingredients. Mix for 2 minutes. Place batter in cake pan. Bake for 50 minutes to 1 hour.

Remove from oven and cool cake in pan on wire rack for 10 minutes.

Combine glaze ingredients over low to medium heat, stirring occasionally, until sugar and butter are melted.

Carefully dump cake onto serving place. Poke holes in top of cake. Evenly pour glaze over warm cake. Use spoon or pastry brush to completely cover cake with glaze that has dripped onto the plate.

Don't cover cake while still warm.

Serve with whipped cream.

Serves 24 or less depending on slice size.

These Blueberry Pancakes will brighten-up even the darkest mornings.

Prep Time: 15 minutes

Cook Time: 05 minutes

Ingredients:

  • 1-3/4 cups flour
  • 2 tablespoons sugar
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 2 eggs
  • 1-3/4 cups milk
  • 1/4 cup vegetable oil
  • 1 cup fresh or frozen (thawed and drained) blueberries

Preparation:

In a large bowl, combine dry ingredients with wire whisk. In a small bowl, with an electric mixer, combine eggs, milk and oil. Slowly add wet ingredients to dry ingredients. Hand mix only until large lumps are gone. Gently fold-in blueberries.

Heat griddle or frying pan. Grease pan lightly. Using a 1/4 cup measuring cup to form each pancake in pan. Bake until bubbles appear and edges are brown. Flip pancakes and cook for a minute or so longer.

Makes about 16 4-inch pancakes.

Be sure to serve them with Homemade Blueberry Syrup

All you need is whipping cream, artificial sweetener and cocoa to make this recipe for Low Carb Chocolate Mousse.

Prep Time: 05 minutes

Cook Time: 02 minutes

Total Time: 7 minutes

Ingredients:

  • 1/2 cup heavy or whipping cream (apprx. 8 carbs)
  • 4 teaspoons artificial sweetener (0 carbs)
  • 1 tablespoon cooca powder (2 carbs)
  • Optional: spray can real whipped cream (0 carbs)

Preparation:

Put all ingredients, in order, in a blender. Blend and eat. For that special touch, spoon into a crystal wine glass and top with a small squirt of spray can whipped cream and a sprinkling of cocoa powder

Note: I made this in the Magic-Bullet Blender System. Buzz, buzz and it was done. I also used Spenda for the artificial sweetener.

Cinnamon is one of my favorite dessert spices. Not only does it make everything taste better, but it can also help warm you up in the cold months. Adding cinnamon food and drinks is being touted as a super food and/or super ingredient, which can be beneficial to people with high cholesterol and diabetes.

All birthdays are special.

Being someone born within 9 days of Christmas, I am considered a Christmas baby. You may either be one or know of us, but birthdays, to Christmas babies, are an often-sore subject. We are the ones who usually don't have too many birthday parties. (I've had three, maybe four). It either interferes with holiday parties, or in my case, everyone's already been to too many parties. We are also the ones who get the famous Christmas/birthday gifts. Either we get one gift, which is for both days or we get that extra gift bought, while Christmas shopping. After decades of birthday neglect, I have resigned myself to a state of absolutely no expectations. This way if something wonderful does happen, I'll be overjoyed. I haven't, though, lowered my expectations for my daughter, who is not a Christmas baby but a summer baby. She's had a party every year. This year her birthday was on a Wednesday. The whole day was special, and she got to do whatever she wanted to do. That night I cooked her favorite meal: grilled cheese sandwich, carrot sticks, French fries, and chocolate milk. Her party was the following Saturday.

It's the thought that counts.

Most people just don't understand that quote. It doesn't relate to what kind of gift bought. It means you are thinking about someone on his or her birthday. I've noticed that once a card or gift is mailed, the birthday "obligation" is over. Wrong. A birthday is just once a year. That is the day to remember someone. To me, you can keep all the gifts and cards, just call to wish me a happy birthday on my birthday, not the day before or the day after. As I said earlier, I still have expectations for my daughter. When she celebrated her 4th birthday, two of our relatives called a couple of hours after her bedtime. Both even said they would call back the next day to wish her a happy birthday. They didn't. We were the ones that called them, a few days later. I realize most people would say a 4-year-old wouldn't notice the difference, but she did. Even 9 years later, we do the best we can do to make-up for all those that forget. Yes, we all have busy lives, but birthdays are just once a year.

Birthday Cakes.

When most people think of birthday cakes, they think of the bakery-type cakes: two-layers, frosted with buttercream icing. The sky or the oven is the limit, when it comes to different types of birthday cakes. Most kids beg for character cakes. The pans are a face, or whole body, of a favorite character. These cakes are very easy to make. Each pan comes with complete instructions, which are easy to follow. My daughter loves the Checkerboard Cake. Adults' tastes vary to their favorite birthday cakes. I know mine has changed from a chocolate cake with chocolate icing to carrot cake. Ever since he saw Steel Magnolias, my husband prefers a Red Velvet Cake. I refuse to make it in the shape of an armadillo like in the movie. I don't know many people who would want to eat gray icing.

Vanilla Ice Cream

This recipe for Royal Vanilla Ice Cream is made from a custard.

Prep Time: 45 minutes

Cook Time: 45 minutes

Total Time: 90 minutes

Ingredients:

  • 5 egg yolks
  • 2/3 cup sugar
  • 1 cup half and half* or light cream
  • 2 tablespoons butter
  • 1 cup whipping or heavy cream
  • 2 teaspoons vanilla

Preparation:

Beat yolks and sugar until blended. Pour in top of double boiler. Stir in half and half. Cook and stir over boiling water until thickens. Set aside - stir in butter. While cooling on a rack, stir occasionally until room temperature. Stir in whipping cream and vanilla. Freeze according to manufacturer's directions.

*Bought too much cream? Exchange 1/2 cream and 1/2 milk for the half and half.

Below is my list of ten -10- common sense suggestions for low carb, low fat, low calorie and diabetic desserts. Yes, you can have your cake and eat it, too! Enjoy and stay healthy!

Nutritional Values of Most Desserts

1. Read all package labels very carefully.

You don't want to add unknown fats and sugars to your diet.

2. Try the milk step-down.

If a recipe calls for cream, try whole milk. If it calls for whole milk, try 2 percent and so on.

3. Use less whole eggs.

If a recipe calls for 3 eggs, try using 1 whole egg and two egg whites.

4. In baking, substitute 1 cup of applesauce for 1 cup of margarine or butter.

For better results, don't substitute all of the fat for applesauce just half or less of it.

5. Substitute artificial sweeteners for sugar.

6. Make all of your own desserts.

7. Make Them With Super Foods

Super Foods are ingredients that provide additional health benefits. These foods will counteract the ingredients some people try to avoid such as sugar.
