Little Brownie Bakers call their cookie a Samoas®. ABC Bakers call their version of the same cookie a Caramel deLites™. Doesn't matter what they are called, I love these vanilla cookies which are covered in caramel, rolled in caramel and then striped with chocolate. You get approximately 15 cookies* per 7 ounce box.

When most people think of Girl Scout Cookies, they think of Thin Mints. Thin Mints are a thin chocolate-peppermint cookie coated in chocolate. You get about 32 cookies in an 10 ounce box.

Do you remember when the cookie inside wasn't chocolate? I do. To age myself, I remember I could buy a box with only one sleeve of cookies in it, and it only cost 50 cents.

Hamburger Cookies are practically a legend in the cookie world. Thin Mints are used as the "meat".

It all started when a friend said you've just got to get that new Sweet Potato Queens’ cookbook. "I don't remember the last time I laughed out loud while reading a book," she said. My first thought was what could be so funny about a cookbook devoted to sweet potatoes written by some beauty queen. Boy, was I wrong. After buying the cookbook, I quickly realized I just had to have the other two books as well. These are the three funniest books I’ve read in a very long time.

The Sweet Potato Queens (SPQ), led by Jill Conner Browne, started out 20 years ago as a group of Southern “belles gone bad” who decided to participate in Jackson, Mississippi’s St. Patrick’s Day parade. Today, there are over 2000 SPQ all over the world. In fact, the three books reveal their true stories, “much to the chagrin of" their “Collective Mothers.” Sprinkled among these hilarious tales are just the right recipes to suit your mood.

These are my kind of recipes. You know you can’t go wrong when the four major food groups for the Queens are “sweet, salty, fried and au gratin”. If the recipes don’t have a couple of sticks of butter then there’s at least a pound of bacon in them. Nearly all of the recipes are quick and easy to make too. Just be sure you have plenty of real vanilla on hand when you make the dessert recipes. Almost every one has a “heaping” teaspoon-full of vanilla in them.

I’ve given so many of the cookbooks as gifts that I’ve lost count. But these books may not be for everyone. In fact, if these books were in the library at Hogwarts they would be in the restricted section. I would say the typical reader is at least 40 years old or got married very young. Typically, it would be a woman, but not necessarily. My husband has loved some of the passages I’ve read to him. (He especially can’t wait for March 29th to come around again.) Someone who doesn’t take everything, especially themselves, too seriously would really enjoy these books.

When you read Jill Conner Browne’s Sweet Potato Queen books, you need to be prepared to laugh and to cry. Most importantly, you need to be prepared to be comforted. The recipes are the ultimate in comfort food. Now it’s your turn to be comforted. Enjoy!

(Chocolate cake concoction), Sweet Potato Biscuits, Sissy Mae’s Sweet and Salties, Pig Candy (you won’t believe what’s in this one), Queen Dip, Yam Yomp, Chocolatopoulous and Stinky Bread (a garlic, mozzarella cheese bread that makes me happy just reading the recipe. I’m planning to serve it this week with a salad and call it dinner.)

Want to make someone smile? Just offer them a Whoopie Pie. It's a cookie. It's a cake, but I can't think of it as a pie. It's also known as the official treat of Maine. Typically, it's top and bottom are chocolate cake with a middle fluffy frosting often made with marshmallow fluff. These days you can find fancier versions made of Red Velvet Cake, Pumpkin and/or Gingerbread Cake both with a cream cheese frosting filling.

You'll note that I've included both a from-scratch cake and a cake mix recipe on this page. You could also make yours with a more traditional buttercream frosting. Personally, I prefer the taste and texture of the marshmallow cream frosting.

Prep Time: 45�minutes

Cook Time: 12�minutes

Total Time: 57�minutes

Yield: Makes 8 individual servings

Ingredients:

  • From-Scratch Whoopie Pies
  • 2 cups flour
  • 1/2 cup cocoa
  • 1-1/4 teaspoons baking soda
  • 1 teaspoon salt
  • 1 teaspoon salt
  • 1/2 cup butter, softened
  • 1/2 cup sugar
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 1 cup buttermilk*
  • Filling
  • 1 cup butter, softened
  • 7-ounce jar marshmallow fluff
  • 1 cup powdered sugar
  • 1 teaspoon vanilla
  • Cake Mix Version
  • one 18-ounce chocolate or Devil's Food cake mix
  • 1/2 cup vegetable oil or softened butter
  • 3 eggs
  • 3/4 cup water

Preparation:

For From-Scratch Recipe -
Preheat the oven to 350 degrees. Line baking sheet with parchment paper. In a small bowl, mix flour, cocoa, baking soda and salt with a wire whisk. Set aside. In a large bowl, cream butter and sugars. Mix in egg. Slowly add flour mixture alternately with buttermilk. Ending with the buttermilk. Scoop 1/4 cup of batter into rounds on prepared baking sheet. You should be able to get 16 cakes. Bake for 12 minutes. Remove from oven and let sit on baking sheets for 2 minutes, then remove to wire racks for cooling. Cool completely.

For Cake Mix Recipe -
Mix ingredients in a bowl with a electric mixer to just moisten. Then, on medium for 2 minutes until well combined. Finish by following the above baking instructions.

Filling Instructions -
Cream the butter and marshmallow fluff. Slowly add in the powdered sugar. Add vanilla and beat until smooth.

To Assemble Whoopie Pies -
Place a couple of tablespoons of filling on the flat bottoms of half of the pies. Top the filling with the flat bottoms of the other pies.

Notes in the Margin:
*Don't have buttermilk? Take a glass mixing cup and add one tablespoon of white vinegar. Fill the rest of the cup with milk. Stir and use instead of the buttermilk.

Friendship Bread Starter is what is used to make Amish Friendship Bread. It's called Friendship Bread Starter because it's typically divided among friends.

On Making Friendship Bread

Please Note:

For a successful fermentation process, the starter cannot come in contact with any metal (spoons, bowls, etc.)

Prep Time: 25 minutes

Total Time: 25 minutes

Ingredients:

  • 1/4 cup warm water (110 degrees F.)
  • 1/4 ounce envelope active dry yeast (apprx. 2-1/4 teaspoons)
  • 1 cup sugar
  • 1 cup flour
  • 1 cup warm milk (110 degrees F.)
  • Four 1 gallon-sized resealable plastic bags

Preparation:

In a glass measuring cup, add 1/4 cup warm water. Add yeast. Allow yeast to dissolve. This takes about 10 minutes. Stir to combine. Set aside. In a large non-metal bowl, combine sugar and flour with wire whisk. Slowly add milk and then yeast. Stir until combined.

Place 3/4 cup of the starter in each of the plastic bags. (The excess will go into the bag you're keeping.) Give the other 3 bags to friends with a copy of these instructions. This is Day One of the Amish Friendship Bread instructions.

There are a lot of flavor choices when making this Cookie Ice Cream Pie. You can combine your favorite Girl Scout with a coordinating ice cream and candy.

Prep Time: 25 minutes

Cook Time: 4 hours

Total Time: 4 hours, 25 minutes

Ingredients:

  • 1-1/3 cups cookie* crumbs
  • 5 tablespoons butter, melted
  • 1 quart ice cream*, softened
  • 3/4 cup crushed candy*, divided

Preparation:

Early in the day or the day before:

Combine cookie crumbs and butter. Press into 8 or 9-inch pie pan. Chill.

Combine ice cream and 1/2 cup candy. Spoon into crust. Freeze completely in airtight container.

Garnish with the rest of the crushed candy.

*Flavor Suggestions:
Do-Si-Dosâ„¢ - Peanut Butter Sandwiches with chocolate ice cream and chocolate-covered peanut butter candy.

These Oatmeal Walnut Cookie have a wonderfully chewy texture and a want-at-least-one-more taste.

Prep Time: 25 minutes

Cook Time: 14 minutes

Total Time: 39 minutes

Ingredients:

  • 1-1/2 cups flour
  • 1 teaspoon baking soda
  • 1-1/2 teaspoon cinnamon
  • 1 teaspoon salt
  • ----
  • 1-1/4 cups butter, softened
  • 3/4 cup packed brown sugar
  • 1/2 cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • ----
  • 3 cups rolled oats
  • 1-1/4 cups coarsely chopped and lightly toasted walnuts

Preparation:

Preheat oven to 375 degrees F. Lightly grease cookie sheets. Combine first set of dry ingredients in a large bowl with a wire whisk. In a separate bowl, cream the butter and sugars. Add egg and vanilla. Combine completely. Slowly add flour mixture until combined. Hand stir-in oats and walnuts.

Drop 2 tablespoons of dough on prepared cookie sheets. Bake for 12-14 minutes. Take from oven and allow to cool on cookie sheets for 1 to 2 minutes. Remove Oatmeal Walnut Cookies to wire rack and cool completely before storing them in a cookie jar with a loose lid.

Makes 3 dozen Oatmeal Walnut Cookies.

The recipe which follows is from the kitchen of Mrs. Bee Mannix-Walsh, a well known local chef who, for many years, ran the Cookery Centre of Ireland in Dalkey.

Cake Recipe

Lower Tier:
15 oz raisins
15 oz sultanas
20 oz currants
10 oz mixed peel
5 oz prunes
5 oz dates
5 oz cherries
1 apple
3 oz chopped almonds
3 oz ground almonds
1/2 tsp. grated nutmeg
1/2 tsp. mixed spice
Grated ring of 1 lemon
15 oz butter
15 oz sugar (Barbados)
10 eggs
19 oz flour
Cover with
Almond paste 1-1/2 lb.
Water icing 3/4 lb.
Royal icing 2 1/2 lb

Middle Tier:
9 oz raisins
9 oz sultanas
12 oz currants
6 oz mixed peel
3 oz prunes
3 oz dates
3 oz cherries
1/2 apple
3 oz chopped almonds
3 oz ground almonds
1/4 tsp. nutmeg
1/4 tsp. mixed spice
Grated rind of 1/2 lemon
9 oz butter
9 oz sugar
6 eggs
11oz flour
Cover with
Almond paste 1 lb.
Water icing 1/2 lb.
Royal icing 2 lb.

Top Tier:
3 oz raisins
3 oz sultanas
4 oz currants
2 oz mixed peel
1 oz. prunes
1 oz dates
1 oz cherries
1/2 apple
1 oz chopped almonds
1 oz ground almonds
1/4 tsp. nutmeg
1/4 tsp. mixed spice
Grated rind of 1/4 lemon
3 oz butter
3 oz sugar
2 eggs
4 oz flour
Cover with
Almond paste 6 oz
Water icing 4 oz
Royal icing 3/4 lb.

Instructions:
Prepare fruit and mix it with spice, nuts and lemon rind. Cream butter and sugar. Break in an egg and beat until mixture thickens, mix in a little sieved flour. Continue in this way until all eggs have been added.  Add remainder of flour.  Stir in prepared fruit and mix thoroughly. Put into prepared tin and bake in very moderate oven.

Lowest Tier
: 12-inch tin
  About six hours
Middle Tier: 9-inch tin
  About 3 1/2 hours
Top Tier: 6-inch tin
  About 1 3/4 hours

Almond Paste Recipe

1 lb. ground almonds
1 tbs. sherry
1/4 tsp. ratafia (liqueur) essence
1 tbs. whiskey
1/4 tsp. almond essence
1 tsp. orange flower water
1 lb. caster sugar
2 eggs

1.Crush lumps out of almonds and sieve castor sugar, mix both well together.
2.Beat eggs, add flavouring, sherry and whiskey. Keep a little of the egg white back for brushing over cake.
3.Pour slowly into almonds and sugar and mix to stiff paste. Turn onto sugared board and knead well. Roll out and use as required.

Water Icing Recipe

1/2 lb. icing sugar
Flavouring and colouring as desired
Boiling water

1.Sieve icing sugar and put into bowl.
2.Add boiling water slowly until it is the consistency of thick cream.
3.Add flavouring and colouring and beat until smooth and glossy.

Royal Icing Recipe

1 lb. icing sugar
Juice of 1 lemon
2 whites of eggs
1 tsp. glycerin

1.Roll out sugar on kitchen paper. Put through wire sieve.
2.Mix with half beaten white of egg, lemon juice and glycerin.
3.Beat for fifteen minutes.

oz. = Ounce tsp. = Teaspoon lb. = Pound

Deep Fried Twinkies are fun to eat on the fairway at your local carnival.

Prep Time: 25 minutes

Cook Time: 02 minutes

Total Time: 27 minutes

Ingredients:

  • 4 twinkies
  • 1 cup flour
  • 1 tablespoon malt vinegar
  • 1 teaspoon salt
  • 1-1/2 cup water

Preparation:

Chill Twinkies. Completely combine other ingredients. Dip Twinkies in batter and fry in hot oil in deep fryer. Only cook until golden brown about 1 or 1-1/2 minutes.

In the past, each area would offer eight types of cookies. This year you may get the full eight, or like in our area, we're only getting the Super Six: Samoas®, Thin Mints, Do-Si-Dos™, Trefoils, Lemon Chalet Cremes™ and Tagalongs®.

How to Zest and Juice a Lemon

I used to use a small zester for zesting. Once I found the Microplane my other zester went into the trash. Using the Microplane is effortless.

If either zester isn't available, just use a paring knife to peel the lemon. Be sure to not get the pith, or white portion of the lemon. (The white portion is very bitter.) Then cut the lemon peel into very small pieces.

Summer Vacation Ends - New Clothes - School Supplies - Going to Bed Early - Alarm Clocks - Rushing Around the House - Packing Backpacks - Heading Out Door - Hurrying to Catch the School Bus - New Beginnings - Moving On - First Day of School

The day's finally come. With excitement and great sadness, our lives have entered a new dimension. Once my baby put her foot on that first step, she rode out of my life (until 2:40 p.m.) on a big yellow school bus. It's the beginning of 13 years of first days back to school. Will she have a good time? Will she learn a lot? Will she make new friends? Will she be scared? Will she remember I still love her? Of course, she will, because I've put a little love in her lunch box for her first day back to school.

It doesn't take much to say "I love you" in their lunch boxes, lunch bags or brown bags. Here are a few ideas just for you:

Let Them Choose Their Own Lunch Box

Making decisions help make children more confidant. Even better than choosing a lunch box, why not have them help you make one. It's so easy. Just follow these simple step-by-step instructions complete with photos from our guide to Sewing, Debbie Colgrove.

Adding a little note or photo will do the trick.

Make sure it isn't so small they'll miss it, but not too large so that their classmates won't laugh at them. Photographs work good, too. Pictures of your child at an event having fun or them with the family pet, all say love.

Another way to show your love is in the presentation of what's in the lunch box.

Cookie cutters are not just for sugar cookies anymore. Use them to make creatively shaped sandwiches. Even the meat or cheese can be cut in this manner, as well. I've also used them to cut shapes from banana bread. Other quick or sweet breads will work, too. Use colorful (rose, purple, yellow, green and so on) plastic wrap to wrap the food. Colorful napkins add a nice touch.

Any child will feel special when you bake for them.

Here are just some of the goods I plan to add to my daughter's lunch box:
  • Bread
    Whether it's from scratch or a machine, it's still made with love.
  • Brownies
    Nothing beats chocolate and brownies are the best way to get it.
  • Cake Mix Cookies
    There's a tremendous variety of flavors that can be made with this recipe.
  • Golden Treasure Cookies
    Your child will feel treasured with these cookies made with chunks of chocolate and lots of brown sugar.
  • Granola Bars
    These are a healthy and very satisfying treat for any lunch box.
  • Peanut Butter Cookies
    These are my favorite mood food cookies.
  • Scottish Shortbread
    These are a great little treat for the little ones in your life.

Hamburger Cookies

Kids just love Hamburger Cookies.

Prep Time: 25 minutes

Total Time: 25 minutes

Ingredients:

  • vanilla wafers (hamburger buns)
  • icing - yellow, red and white (cheese, catsup and mayonnaise)
  • green-tented coconut (lettuce)
  • Thin Mints* (hamburger)
  • sugar water or egg white
  • sesame seeds (top of bun)

Preparation:

Place 2 vanilla wafers top side down. Put a small amount (1/4 teaspoon) of white icing on one cookie. On the other cookie put red and then yellow icing. Sprinkle a little coconut. Place Thin Mint on top of coconut. Place cookie with white icing on top. Turn cookies over. Paint top with a little sugar water or egg white. Sprinkle with a few sesame seeds. Let dry before serving.

*Thin Mints are sold by your local Girl Scouts.

Chocolate Mint Cheesecake

Chocolate-Chocolate Mint Cheesecake uses your leftover Girl Scout Cookies.

Prep Time: 30 minutes

Cook Time: 1 hour

Total Time: 1 hour, 30 minutes

Ingredients:

  • 1 box Thin Mints*, divided
  • 5 tablespoons butter, melted
  • 4 â€" 8 ounce packages cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon peppermint extract
  • 8 ounces semi-sweet chocolate, melted and cooled
  • 4 eggs

Preparation:

Preheat oven to 325 degrees F. Crush enough cookies to make 1-1/3 cups crumbs. Cut remaining cookies into quarters and set aside. Mix crumbs with butter and press into 9-inch springform pan. Bake for 10 minutes.

Beat cream cheese and sugar. Stir in extract and chocolate. Add eggs, one at a time. Combine until just blended. Stir in quartered cookies. Pour over crust. Bake 50 minutes to 1 hour or until all but very center is set. Run knife around edge of pan. Cool on wire rack. Once cooled remove pan rim. Refrigerate for at least 4 hours.

*Thin Mints are a mint-flavored chocolate cookie covered in chocolate.
