Chocolate Peanut Butter Fudge

Please enjoy this Dreamy Chocolate Peanut Butter Fudge Recipe from Hungry Girl, a cookbook by Lisa Lillien, published by St. Martin's Griffin 2008. Reprint permission granted.

Prep Time: 15 minutes

Cook Time: 40 minutes

Total Time: 55 minutes

Ingredients:

  • 18.3 ounce Betty Crocker Fudge Brownies Traditional Chewy Brownie Mix
  • 2 cups canned pure pumpkin
  • 2 tablespoons reduced-fat peanut butter, at room temperature

Preparation:

Preheat oven to 350 degrees F.

Combine pumpkin with the brownie mix in a large bowl and stir until smooth (batter will be very thick, but don't add anything else!)

Spray a square baking pan (9" x 9" works best) with nonstick spray and pour in the mixture. Spoon peanut butter on top and use a knife to swirl it around the top of the batter. Bake in the oven for 35 minutes. (The batter will remain very thick and fudgy, and it should look undercooked.) Allow to cool.

Cover pan with foil and place pan in the fridge for at least 2 hours. Cut into 36 squares.

Makes 36 Servings.

Per serving, if used exact same ingredients: 66 calories, 1gm fat, 57mg sodium, 14g carbs, 1g fiber, 9g sugars, 1g protein.

Notes in the margin: I couldn't find my 9" x 9" pan and used an 8" square pan instead. I also used regular Jiff peanut butter, so the calories were higher. My daughter and her best friend were home when I removed the pan from the oven. Needless to say, a couple of pieces didn't make it into the refrigerator. Just so you'll know, before refrigeration this recipe had the texture of a fudgy brownie, after refrigeration, it was like fudge. Magically, you just couldn't tell the recipe was made with pumpkin.

Spicy Ginger Pear Bread

Here is a recipe for Spicy Ginger Pear Bread. It's not as sweet as most quick breads, but it's still fabulous. We liked ours served warm and spread lightly with butter.

Prep Time: 25 minutes

Cook Time: 60 minutes

Total Time: 85 minutes

Ingredients:

  • 2 cups flour
  • 1/2 cup toasted wheat germ
  • 1/2 cup packed brown sugar
  • 1 tablespoon baking powder
  • 1-1/4 teaspoon salt
  • 1/2 teaspoon ground ginger
  • 1/2 cup chopped crystalized ginger
  • 2 cups chopped pears*
  • 2 eggs
  • 1/3 cup vegetable oil
  • 8 ounces sour cream
  • 1/4 cup pear juice*

Preparation:

Preheat oven to 350 degrees F. Grease 4-1/2 x 8-1/2 inch loaf pan. In a large bowl, combine first 6 dry ingredients with wire whisk. Hand stir in chopped ginger and pears. Set aside. In smaller bowl, combine wet ingredients, eggs, oil, sour cream and pear juice. Add wet ingredients to dry ingredients. Mix until moistened. Pour into prepared pan. Bake for 45 mintutes. Place a piece of foil over top of bread and continue to bake for 15 or more minutes. Test for doneness. Cool in pan on wire rack for 15 minutes. Carefully, remove bread from pan and finish cooling on rack. Once completely cool, wrap in plastic wrap and then foil. Set aside to eat the next day.

*Notes in the Margin:

I used a combination of fresh and canned pears. I did this so I could use the pear juice from the can. You can purchase bottled pear juice and use just fresh pears. I got just less than a cup of chopped pears from one fresh pear. It all depends on the pear size, but if you plan to use all fresh pears, purchase 3 just in case. F.Y.I., while eating the bread, no one was able to tell the difference between the fresh and canned pears.

There's one more note. My husband couldn't wait 24 hours to try the bread. Although, it did taste good that first day, it tasted much better the next.

Thanks to Trish for submitting this recipe

2 T. unflavored gelatin
1/4 C. cold water
1 C. boiling water
1/2 C. lemon juice
1 C. sugar
3 egg whites

Soak gelatin in cold water, dissolve in boiling water. Add sugar and lemon juice. Stir until mixture thickens, then add to stiffly beaten egg whites. Beat until thick enough to stack- be sure the gelatin mixture doesn't settle to the bottom!!! (or as Mom says "Beat like h---!").

Refrigerate.

Custard Sauce
1 C. milk
3 egg yolks
3 T. sugar
1/2 t. vanilla
pinch salt

Scald milk in double boiler. Add sugar and salt to slightly beaten egg yolks. Combine 2 mixtures and continue cooking until custard coats spoon.

To serve: Spoon "snow" into individual serving dishes. Top with custard. Custard can be served warm or chilled.

I like this Fresh Blueberry Cheesecake for a couple of reasons. One being it's a dense cheesecake, which is because there's more cream cheese in this recipe than most. I also like the fact that this cheesecake is made in an 9x13 rectangular pan. When many people will be cutting their own piece, it doesn't get as messy. The last reason I like this recipe is that you can never have too many blueberries.

Total Time: 38 minutes

Ingredients:

  • 1 cup butter, softened
  • 1 cup sugar
  • 1 cup powdered sugar
  • 1 cup vegetable oil
  • 2 eggs
  • 1 teaspoon almond extract
  • 3-1/2 cups flour
  • 1 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cream of tarter
  • 1 cup chopped almonds, lightly toasted
  • 8 ounce package red and green candy-coated chocolate pieces

Preparation:

Cream butter, sugars and oil. Add eggs and almond extract - mix well. Beat in the baking soda, salt, and cream of tartar. Gradually add the flour and whole wheat flour. Stir in almonds and the chocolate pieces. Shape into 1" balls, roll in sugar. Place on ungreased baking sheets. Flatten with a flat-bottomed glass. Bake in a 350 degree oven for 15 - 18 minutes or until lightly browned and cool on wire racks. Yield: about 8 dozen.

Got some day-old bread, a couple of eggs, a little milk and a non-stick frying pan? Well, then you can make this recipe for Basic French Toast.

Prep Time: 15�minutes

Cook Time: 3�minutes

Total Time: 18�minutes

Yield: 2 Servings

Ingredients:

  • 2 eggs
  • 1/2 cup milk
  • 1/4 teaspoon cinnamon, optional
  • butter or vegetable spray
  • 4 slices day-old bread*
  • Powdered sugar and syrup, optional

Preparation:

In a shallow bowl with a fork, combine eggs and milk. On medium, heat frying pan on stove. Either melt a little butter or spray pan with vegetable spray. Dip bread into bowl with egg mixture. Make sure both sides are wet. With fork, allow bread to drip over bowl. Place slice of bread in pan. Continue process with the other slices. Turn slices over when bread slightly brown. Cook final side. Remove cooked slices to a plate and keep warm. Sprinkle with powdered sugar and serve warm with syrup.

Notes in the Margin:
*If I've got some leftover thick-crusty bread like French bread, I much prefer using it over regular sliced bread. Also, when I make more French Toast than this, I prefer to mix my milk and eggs in a 4-cup measuring cup. Then, I only pour enough mixture in the shallow bowl to dip a couple of slices at a time.
