Top Cake Mix Recipes
Feb 2nd 2012, 11:05

Wondering what to do you do with all of those cake mixes you bought for a great price at your local warehouse club? You'll find some of the most popular cake recipes, and more, made with a cake mix listed below.

Want more ideas? Try these tips for a little Cake Mix Magic.

Bacardi Rum Cake

The is the most popular recipe on my site that begins with a cake mix. If you like rum, you'll enjoy this cake. It's one of those cakes that are perfect for mailing, too. Many of these cakes have gone overseas to American soldiers. The rum not only keeps the cake moist, but it keeps it from spoiling, too.

Pistachio Cake

Cool and green is the best way to describe this cake. Not only does it start with a cake mix, but the recipe, including the frosting, uses two boxes of instant pudding. I love nuts, and so I add a lot to this recipe.

I get tons of email on this cake recipe as well. A lot of people grew-up with this cake. It's a very lights and creamy cake.

Mom's Piña Colada Cake

This was my mother's favorite recipe. It's another light cake. Don't let the name fool you; you won't get tipsy from this cake. There's only 2 tablespoons of rum in it.

Pineapple Upside Down Cake

Dump cakes use the cake mix in a different way. The cake mix is sprinkled on top of the other ingredients. Then something wet like melted butter is poured on top of the mix. Once baked, the cake mix turns into a crust.

Lisa Lillien, Hungry Girl, was so "obsessed with foods that taste great but don't pack on the pounds" that she started a very popular recipe website called Hungry Girl. Between the success of that website and requests from her readers, Lisa decided to write this cookbook.

A Low Fat / Low Calorie Cookbook

If you're looking for a low fat, low calorie recipe book, this cookbook is for you. Recipes high in fiber are an additional health benefit to be found. Plus, as an extra added bonus, many of the recipes contain very few ingredients, which makes them quick and easy to make.

Personal Favorites from the Cookbook

There are little tidbits of fun and thought-provoking information spread throughout the entire cookbook. I learned that it wasn't the food on my latest cruise that made me gain 5 pounds. It was the 650 calories and 20 grams of fat in each of those piña coladas I enjoyed. Did you know it would take an hour and one-half of me battling seaweed and jellyfish in the ocean to burn just one piña colada off?

The Survival Guides are another thing I just love about this cookbook. I learned how to better survive my next cruise on the page aptly named "Cruise Control." In the section called "Hit the Road, Jack!" (for surviving road trips, of course) I learned you could get reduced-calorie Slurpees. She's also got restaurant survival guides such as ones for Italian and Mexican cuisine.

The Major Dessert Chapters and Sample Recipes

Desserts and other sweet treats are spread all through this cookbook. Here are the main three dessert chapters.

Chocolate 911

Fruity Call
  • Topless Triple Berry Pie
  • Layered Berry Custard Crostata
  • Ice Creamless Banana Split
Oven Lovin' (Baked Goods and Other Treats)
  • Tremendous Tiramisu
  • Coconut Patty Pudding
  • Ginormous Creamy Frozen Caramel Crunchcake

Other Chapters to Enjoy

Dreamy Chocolate Peanut Butter Fudge

Besides chapters that feature more interesting low fat/low calorie recipes for breakfast, lunch, soups, salads there's also:
Junk Food Junkie
Manly Meals
Party Time
Zappuccino (special coffees, shakes and smoothies)
Happy Hour
Fun with... (You'll be amazed with what can be done with pumpkin, butternut squash and tofu shirataki noodles.)
Survival Guides (There are 10 guides, each with several subsections, to help you "tackle food challenges - anytime, anywhere.")

Super Bowl Party Desserts
Jan 31st 2012, 11:05

"Are You Ready for Some Football?" A Super Bowl Party wouldn't be complete without some tasty desserts and other homemade treats. Here are several party food suggestions just for you.

Be sure to check out this Planning Guide for Super Bowl Parties on our site to Entertaining

1. Brownies

Cream Cheese Brownies Photo © 2010 Carroll Pellegrinelli, licensed to About.com, Inc.Cream Cheese Brownies Photo © 2010 Carroll Pellegrinelli, licensed to About.com, Inc.

Some will say that a Super Bowl party is not complete without at least one person bringing brownies. There are tons of recipes out there, but why not bring a brownie that's a little different. I doubt more than one person will be bringing Cheesecake Brownies.

2. Cheesestraws

Cheese Straws Photo © 2010 Carroll Pellegrinelli, licensed to About.com, Inc.Cheese Straws Photo © 2010 Carroll Pellegrinelli, licensed to About.com, Inc.

I'm sure these are eaten everywhere, but they, like the boiled peanuts, are very popular in the southern U.S. Cheese Straws are another wonderful treat to bring to a Super Bowl party.

3. Peanut Brittle

2010 Chocolate Peanut Brittle Photo by Carroll Pellegrinelli, licensed to About.com2010 Chocolate Peanut Brittle Photo by Carroll Pellegrinelli, licensed to About.com

Crunchy-foods seem to fit the ticket as far as Super Bowl Parties go. Chocolate Peanut Brittle is crunchy and sweet.

4. Jalapeno Cornbread

2010 Jalapeno Cornbread Photo by Carroll Pellegrinelli, licensed to About.com2010 Jalapeno Cornbread Photo by Carroll Pellegrinelli, licensed to About.com

Nay chili, nay football. Nay chili, nay cornbread. It all means you can't have football without chili, and you definately can't have chili without cornbread. Cornbread is one of the easier quick breads you can make.

5. Raspberry Red Velvet Cake

2010 Raspberry Red Velvet Cake Photo by Carroll Pellegrinelli, licensed to About.com2010 Raspberry Red Velvet Cake Photo by Carroll Pellegrinelli, licensed to About.com
The best part about this Raspberry Red Velvet Cake is the layer of Raspberry Jam just below the icing.

6. Salted Pecans

It's all in the butter. That's what makes these Salted Pecans taste so fabulous.

7. Cut Fruit Plates

Plate of Tropical Fruit Photo © 2010 Carroll Pellegrinelli, licensed to About.com, Inc.Plate of Tropical Fruit Photo © 2010 Carroll Pellegrinelli, licensed to About.com, Inc.

Okay I know, Super Bowl parties only come once a year, but there's got to be some kind of balance. Between all of the alcohol, salt, fat and sugar consumed during one party, having a little fruit won't hurt them.

8. Pecan Tassies

2010 Pecan Tassies Photo by Carroll Pellegrinelli, licensed to About.com2010 Pecan Tassies Photo by Carroll Pellegrinelli, licensed to About.com
I like Pecan Tassies because you can just pop them in your mouth. There are also Step by Step Photo Instructions for Making Pecan Tassies.

9. Boiled Peanuts

Boiled PeanutsPhoto © 2010 Carroll Pellegrinelli, licensed to About.com, Inc.

Maybe it's just a southern-thing, but we just love our Boiled Peanuts. A special note here, they can be a little messy, so I'd ask the host or hostess if it would be okay to bring them.

10. Sweet and Salty Fudge

Then, there's always fudge. With all the recipes out there, this recipe for Sweet and Salty Fudge is my favorite.
