These days, we're told it was just a fable that George Washington cut down the cherry tree. Too bad, because I still want cherries this time of year. I know you'll enjoy this recipe for Upside-Down Cherry Cobbler, especially when it's served warm with a scoop of ice cream.

Here is an easy recipe for Thick Chocolate Glaze.

Prep Time: 15 minutes

Cook Time: 15 minutes

Total Time: 30 minutes

Ingredients:

  • 1/2 cup semisweet chocolate chips
  • 1/4 cup dark chocolate*
  • 3 tablespoons butter
  • 1 tablespoon light corn syrup
  • 1/4 teaspoon extract (vanilla or one that better suits what is being glazed)

Preparation:

Place all ingredients in pan over top of pan of hot water. Stir occasionally until chocolate is melted and ingredients are combined.

Drizzle over bundt cakes, cookies, doughnuts etc.

Makes 1 Cup Thick Chocolate Glaze

Well, it's that time again for our annual open house. It'll start around 3:00pm and end around 9:00pm. We have had people show up at 1:00pm and not leave until midnight (not the same people, thank goodness). Open houses are great for the party season. It allows people the flexibility to go to more than one party that day. My prayer is the same before every party: "Please don't all show up at the same time." We always invite way more people than our house can hold. The more the merrier right? At this time of year, it is right. I just love all the hustle and bustle.

This Orange Poppy Seed Cake makes a delicious dessert or tasty afternoon treat served with hot tea or coffee. I even caught my husband sneaking a slice before having breakfast.

Prep Time: 20 minutes

Cook Time: 1 hour

Total Time: 1 hour, 20 minutes

Yield: 12 to 16 servings

Ingredients:

  • zest and juice of 1 orange
  • 1-1/2 cups (+,-) orange juice, divided
  • 18 ounce yellow cake mix
  • 4 serving-size orange gelatin
  • 4 eggs
  • 1/2 cup vegetable oil
  • 2 tablespoons poppy seeds
  • ---Glaze---
  • 1/4 cup butter, softened
  • 1/2 cup powdered sugar, sifted

Preparation:

Zest the orange and set aside zest. Juice the orange into a 2-cup measuring cup. Add enough additional orange juice to make 1-1/2 cups. Set aside.

Preheat oven to 325 degrees F. Grease and flour bundt cake pan. In a large bowl, combine cake mix, powdered orange gelatin, eggs, oil and 1 cup orange juice. Mix with an electric mixer for until just moistened. Continue to mix for 2 minutes. Hand stir in poppy seeds. Pour batter into prepared pan. Bake for 50 to 60 minutes. Remove cake from oven and cool on wire rack for 10 minutes. Remove from pan to rack.

While Orange Poppy Seed Cake is cooling, prepare glaze by melting butter in saucepan. Add remaining 1/2 cup orange juice and powdered sugar. Stir until combined. Cook until mixture boils. Remove from heat and hand stir in 1/2 of orange zest. Place still warm cake on serving plate. Drizzle glaze over cake. Sprinkle top of Orange Poppy Seed Cake with remaining orange zest.

Total Time: 40 minutes

Ingredients:

  • 2 cups flour
  • 1/4 cup sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 6 tablespoons cold butter, cut into pieces
  • 1 large egg
  • 1/2 cup heavy cream, plus
  • 1 cup raspberries
  • 1/2 cup 1-inch chunks from bar of white chocolate

Preparation:

Preheat oven to 400 degrees F. Lightly grease baking sheet. Mix together first flour ingredients in large bowl with wire whisk. Sprinkle 2 tablespoon of dry mixture over raspberries and gently mix. With a pastry blender, or two knives in scissor-fashion, cut the butter into remaining flour mixture. In a small bowl, whisk together egg and cream. Make a well in center of dry ingredients. Add egg mixture and stir until just combined. Gently fold the berries and chocolate into the flour mixture. Knead dough carefully with floured hands on lightly floured board. Try not to crush berries. Form into 8-inch circle, 3/4 inched tall approximately. Place on a lightly greased baking sheet; brush with extra cream. Cut into 8 wedges. Bake for 20 minutes or until lightly browned. Serve warm with real butter.

Ingredients:

  • 3 cups sugar
  • 1/2 of 14 ounce can sweetened condensed milk
  • 4 ounces (125 grams) butter
  • 1 teaspoon vanilla
  • 1/2 cup milk
  • 1 tablespoon golden syrup
  • pinch salt
  • 1 cup chopped and lightly toasted nuts

Preparation:

Place all ingredients except nuts in a very large microwavable bowl. Stir to mix & cook on high for 15 to 17 minutes stirring well every 3 minutes.

Remove from oven and beat until thick, approx, 5 minutes. Add nuts and pour into a greased tin, and cut when set. For chocolate fudge: Add 6 ounces chocolate chips with nuts.

I get asked all of the time, "is it time for pumpkin bread yet?" Of course, in the United States, we generally only eat pumpkin in the fall. What most people don't realize is that canned pumpkin is usually carried in their grocery stores year-round.

Prep Time: 25 minutes

Cook Time: 40 minutes

Total Time: 1 hour, 5 minutes

Yield: Two Loaves or 24 Muffins

Ingredients:

  • 4 eggs
  • 2-1/3 cups sugar
  • 1 cup vegetable oil
  • 1 - 15 ounce can solid pack pumpkin
  • ----
  • 3 cups flour
  • 1 teaspoon salt
  • 1-3/4 teaspoons baking soda
  • 2-3/4 teaspoons ground cinnamon*
  • 3/4 teaspoons ground nutmeg*
  • 3/4 teaspoon ground cloves*
  • 1/4 teaspoon ground allspice*
  • ----
  • 1 cup chopped raw nuts (walnuts, pecans, etc), lightly toasted
  • 1/3 cup golden raisins**
  • ----
  • 1/4 cup sugar
  • 1 teaspoon ground cinnamon

Preparation:

Preheat the oven to 375 degrees F. Grease two loaf pans or 24 muffin cups. Combine the eggs, sugar, oil, and pumpkin in a large bowl, and stir until smooth.

In a medium bowl, mix the second set of ingredients with a wire whisk. Add the nuts and raisins**. Add to the egg mixture and mix thoroughly. Fill the loaf pans or muffin cups with the batter.

Mix the last 2 ingredients in a small bowl. Sprinkle over bread loaves or muffin batter.

Bake the bread at 375 degrees F for 1 hour and 10 minutes, or the muffins for 35 to 40 minutes. When the bread is done, a toothpick inserted in the center will come out clean.

Yields 2 loaves or 24 muffins.***

Notes:
* You may substitute 4 1/2 teaspoons of pumpkin pie spice for the starred ingredients. Be sure to note that you still need cinnamon for the topping.
** I don't care for raisins so I add 1/3 cup more nuts instead.
***I've only made the loaves of bread so I don't know if this makes 24 small or large muffins. If you prefer large muffins: fill the cups just to the top with batter. If you have any empty muffins cups, fill half full with water.

Yield: 24 pieces

Ingredients:

  • 6 tablespoons butter
  • 1 cup brown sugar, packed
  • 20 ounce can pineapple slices
  • marachino cherries
  • 1 yellow cake mix
  • 3 eggs
  • 1/3 cup vegetable oil or melted and cooled butter
  • 20 ounce can crushed pineapple - UN-DRAINED

Preparation:

Preheat oven to 350 degrees F. Melt 6 tablespoons butter in 9 x 13 pan in oven. Remove pan from oven and sprinkle bottom with brown sugar. Decoratively arrange pineapple slices. Fill in spaces with cherries. In a bowl, combine cake mix, eggs, oil and crushed pineapple. Mix for 2 minutes. Pour over pineapple slices. Bake for 40 minutes or until done. Remove from oven. Very carefully invert onto serving platter. Serve warm or room temperature topped with whipped cream.

Ingredients:

  • 2 cups butterscotch chips
  • 1 cup peanut butter
  • 2 cups chow mein noodles
  • jelly beans or other colorful Easter candy resembling eggs
  • doughnut holes for one large nest

Preparation:

Cover a baking sheet or pan with waxed or parchment paper. Either melt the butterscotch chips and peanut butter in the top of a double boiler or in the microwave (heat 1 minute, stir, continue heating in 10 second increments until melted and smooth.) Stir in chow mein noodles. With buttered fingers shape mixture into one big nest or individual ones. Place on prepared pan. Refrigerate until firm. Fill with jelly beans or other candy.

Doesn't matter if you call them Flapjacks, Hotcakes or Griddlecakes, they are all just Pancakes to me. Pancakes are one of America's oldest and favorite types of quick breads. Here are the basic cooking and freezing directions.

Pancakes are so simple to make. All you need is a griddle or a flat bottomed skillet. Heat griddle until a drop of water sizzles on it. Once hot, lightly grease it. Combine pancake ingredients until large lumps are gone. Don't over mix. Fluffy pancakes are made by leaving small lumps in the batter. For a uniform pancake size, use a 1/4 or 1/3 cup measurer to ladle batter onto griddle. Turn the pancakes when there are bubbles all over the top and the edges are lightly browned. Flip the pancakes and bake the other side for just a few minutes. To maintain a fluffy pancake, do not flattened them with the spatula. Remove pancakes to a plate to keep warm until the entire batch is made.

Store leftover pancakes in the freezer. Line a cookie sheet with wax paper. Make pancake stacks of two each with a teaspoon of butter in between. Once all of the stacks are on the cookie sheet, put them in the freezer. As soon as they are frozen, move individual stacks into a resealable freezer bag. Reheat them for about 1 to 2 minutes* on a plate in the microwave. (*Timing is dependent on the type and size of pancake.)

Cook Time: 5 minutes

Total Time: 20 minutes

Yield: Makes 16 4-inch Pancakes

Ingredients:

  • 1-3/4 cups flour
  • 2 tablespoons sugar
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 2 eggs
  • 1-3/4 cups milk
  • 1/4 cup oil

Preparation:

In a large bowl, combine dry ingredients with wire whisk. In a small bowl, with an electric mixer, combine eggs, milk and oil. Slowly add wet ingredients to dry ingredients. Hand mix only until large lumps are gone.

Heat griddle or frying pan. Lightly grease pan. Using a 1/4 cup measuring cup to form each pancake in pan. Bake until bubbles appear and edges are brown. Flip pancakes and cook for a minute or so longer.

Makes about 16 4-inch pancakes.

I hope you enjoy this Easy Orange Cake. It's been the hit of several potluck luncheons.

Prep Time: 15 minutes

Cook Time: 25 minutes

Total Time: 40 minutes

Yield: One 9x13 Cake

Ingredients:

  • one 18-ounce yellow, white or butter cake mix
  • 11-ounce can Mandarin Oranges with juice
  • 4 eggs
  • 1/2 cup melted and cooled butter or vegetable oil
  • 12 ounce can whipped vanilla frosting
  • 1 teaspoon orange extract*
  • zest from one orange, optional

Preparation:

Preheat oven to 350 degrees F. Grease one 9x13 pan. Combine cake mix, Mandarin oranges including juice, 4 eggs and butter. Beat on low for a few minutes until all ingredients are wet. Continue to mix for an additional two minutes on medium until well combined. Pour mixture into pan. Bake for 20 to 25 minutes or until cake tester comes out clean. Cool completely in pan on wire rack.

For frosting, open can of frosting and stir with knife or cake spatula. Stir in orange extract. Frost cake and sprinkle orange zest over top for optional decoration.

Notes in the Margin:
*Juice from your zested orange may be used instead of the extract. If the frosting becomes too thin, add sifted powdered sugar, a tablespoon at a time, to get the right spreading consistency.

When I was growing up in Birmingham, my favorite restaurant was the Magic Pan. They specialized in crepe dishes. Right near the front door was an employee totally encircled by hot crepe pans. You could watch each crepe being carefully prepared. Ever since I went to that place, I've been in love with crepes. You can make the most elegant and easiest desserts with crepes.

Making crepes is quite simple; all it takes is a little practice. I must confess, I have never made crepes the traditional way, in a crepe or frying pan. I have an electric crepe pan, Sunbeam's M'sieur Crepe Electric Crepemaker. It's about twenty years old, and I love it. I don't know if Sunbeam still makes an electric crepe pan, but I have seen others in stores. With an electric crêpe maker, you don't have to cook both sides. The pan, which is inverted, is actually dipped in the batter instead of pouring the batter into the pan. There is no rolling the pan around to get the batter even. If there happen to be holes in the crepe, I immediately spoon a little batter over them. Since crepes are either covered with a sauce or folded in some way, you never see the mistakes.

Crepes are versatile. Once you make a basic recipe, like the one below, you can do many things with them. They can be eaten plain with powdered sugar on them. Orange Chess Pie

I brought this Orange Chess Pie to a potluck luncheon. Several of the women had never even heard of a chess pie. Never the less, they all loved it. I kept hearing over and over, it was perfect because it's not too sweet. Unfortunately for my family, I was only allowed to bring home a tiny sliver. It didn't matter, because this Orange Chess Pie is so easy to make that I can make another one in no time.

Prep Time: 25 minutes

Cook Time: 40 minutes

Total Time: 1 hour, 5 minutes

Yield: Makes One - 9-inch Pie

Ingredients:

  • 2 cups sugar
  • 1 tablespoon flour
  • 1 tablespoon cornmeal
  • ---- 4 tablespoons butter, melted and cooled
  • 5 eggs, slightly beaten
  • 1 cup milk
  • zest and juice of 1 orange
  • 1/4 cup* orange juice
  • ----
  • 9-inch pie shell

Preparation:

Preheat the oven to 375 degrees F. Combine first set of ingredients with a wire whip. Mix in butter, eggs and milk. Zest the orange. Add the zest to the pie filling. Juice the orange into a measuring cup. Add additional orange juice to make 1/4 cup. Add juice and mix. Pour into prepared pie shell. Bake Orange Chess Pie for 25 minutes. Tent crust edges to avoid burning. Continue to bake Orange Chess Pie for 10 to 15 minutes more or until pie filling stops jiggling.

Easy Pineapple Bread Pudding

Looking for an easy warm dessert to make on a cold winter evening? This recipe for Easy Pineapple Bread Pudding could be just what you want.

Prep Time: 15 minutes

Cook Time: 45 minutes

Total Time: 1 hour

Yield: 4 to 6 servings

Ingredients:

  • 1/2 cup butter, room temperature
  • 3/4 cup sugar
  • 4 eggs
  • 5 slices white bread, crusts removed and cubed*
  • 20 ounce can crushed pineapple, drained

Preparation:

Preheat oven to 350 degrees F. Grease 9-inch square pan or souffle dish. Cream butter and sugar. Add eggs one at a time. Stir in bread cubes and pineapple. Place in prepared dish. Bake Easy Pineapple Bread Pudding for 40 to 45 minutes.

Notes in the Margin:
*I've even used leftover hot dog buns that I just tore with my hands.

Cheddar and Bacon Bread

This bread machine recipe for Cheddar and Bacon Bread is great for a brunch or with a salad for dinner.

Prep Time: 20 minutes

Cook Time: 2 hours, 30 minutes

Total Time: 2 hours, 50 minutes

Ingredients:

  • 1-1/3 cups water
  • 2 tablespoons vegetable oil
  • 1-1/4 teaspoon salt
  • 2 tablespoons plus 1-1/2 teaspoons sugar
  • 4 cups bread flour
  • 3 tablespoons nonfat dry milk
  • 2 teaspoons dry active yeast
  • 2 cups shredded cheddar or swiss cheese
  • 8 slices bacon, crumbled
  • -or- 3 tablespoons bacon bits*

Preparation:

Place ingredients in bread pan in order listed or according to manufacturer's directions. The cheddar cheese and bacon are added at the fruit and nut signal. Depending on your machine this could be anywhere from 30 to 40 minutes into the cycle. Remember, when adding the yeast last, make a small well with your finger to place the yeast. This will insure the proper timing of the yeast reaction. This bread is processed at the Basic (Standard) cycle or according to manufacturer's directions. (Note: I've done it on the Rapid Cycle, but the cheese and bacon is completely incorporated into the bread. You still get the great flavor, but the nice texture is gone.

* Imitation or real bacon bits may be used. They can be found in the salad dressing section of the grocery store. If you use real bacon bits, use 1/2 cup.
