Thanks to Lynn B. for submitting this recipe for Hearts-Filled-With-Love Cookies, a double layer, rolled cookie filled with either raspberry or strawberry jam.

Prep Time: 24 hours

Cook Time: 10 minutes

Total Time: 24 hours, 10 minutes

Ingredients:

  • 2-1/2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup shortening
  • 1 cup sugar
  • 1 well-beaten egg
  • 2 tablespoons evaporated milk
  • 1-1/2 teaspoon vanilla
  • Strawberry or seedless Raspberry Jam
  • powdered sugar

Preparation:

Sift flour, baking powder and salt. Set aside. Cream together shortening and sugar. Add egg, evaporated milk and vanilla. Mix well. Gradually add flour mixture until completely combined. Form into a ball. Put in an airtight container overnight in the refrigerator.

Preheat oven to 350 degrees F. Roll-out dough and cut-out with a heart-shaped cookie cutter. Bake on lightly greased cookie sheets for 8 to 10 minutes.

When cool, assemble cookies. Place a teaspoon of jam on the bottom of a cookie, then cover with another cookie. The tops of the cookies should be facing outward on both top and bottom. Sprinkle with powdered sugar.
