Looking for a stellar party treat for that upcoming awards ceremony or ultimate sporting event like the Super Bowl? I promise they won't be able to keep their hands off of this Red Carpet Corn. Executive Pastry Chef Zac Young of Flex Mussels created this special recipe.

Total Time: 20 minutes

Yield: 8 Cups Red Carpet Corn

Ingredients:

  • 1 cup sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup corn syrup
  • 1/2 cup water
  • 1 tablespoon rendered bacon fat
  • 2 teaspoons baking soda
  • 2 teaspoons kosher salt
  • 7 cups popped popcorn
  • 1 cup roasted unsalted peanuts
  • 2 pounds of bacon, fat rendered and crisped in the oven

Preparation:

Scatter bacon, popcorn and unsalted peanuts on silpat-lined (or parchment paper-lined) sheet tray. In a large sauce pan cook sugars, corn syrup, and water to 280 F. Add the bacon fat and cook to 300 F. Stir in salt and baking soda. CAUTION: Very HOT!!!! Pour evenly over the popcorn, bacon and peanuts. Let the mixture cool and harden before breaking off into a serving bowl.
