Fresh Peach Ice Cream

Enjoy this recipe for Fresh Peach Ice Cream. The peaches in this ice cream are not only pureed, but they are in chunks, too.

Prep Time: 20 minutes

Total Time: 20 minutes

Yield: Makes 1 Quart

Ingredients:

  • 1 pound, 6 ounces skinless peach slices (about 1-1/2 pounds whole), divided
  • juice of one lemon
  • 2 teaspoons peach or vanilla extract
  • 2/3 cup sugar
  • 2 cups light cream (half and half)

Preparation:

In a food processor, combine half the peach slices, lemon juice, extract and sugar. Process until totally smooth. Coarsely chop remaining peach slices. In a large bowl, combine puree and light cream with a mixer. Mix until combined. Stir in peach chunks and place in refrigerator for an hour. Make ice cream according to the ice cream maker's instructions.
