Aunt Wanda's Ginger Cookies

Here's a recipe for my Aunt Wanda's Ginger Cookies. It's a great one to add to your Christmas Cookie collection.

Ingredients:

  • 3/4 cup shortening or softened butter
  • 1 cup plus sugar
  • 1 egg
  • 4 tablespoons molasses
  • 2 cups flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1-1/2 teaspoons ginger
  • 1 teaspoon cinnamon

Preparation:

Preheat oven to 350 degrees F. Lightly grease cookie sheet. Cream shortening and/or butter with sugar. Add egg and mix. Mix in molasses. Combine rest of ingredients with a wire whisk in separate bowl. Gradually add to sugar mixture until well combined. Shape into 1-inch balls. Roll in sugar and place on prepared cookie sheet. Bake for 12 minutes.

Makes approximately 3 dozen ginger cookies (a.k.a. gingersnaps)
