Easy Orange Cake

I hope you enjoy this Easy Orange Cake. It's been the hit of several potluck luncheons.

Prep Time: 15 minutes

Cook Time: 25 minutes

Total Time: 40 minutes

Yield: One 9x13 Cake

Ingredients:

  • one 18-ounce yellow, white or butter cake mix
  • 11-ounce can Mandarin Oranges with juice
  • 4 eggs
  • 1/2 cup melted and cooled butter or vegetable oil
  • 12 ounce can whipped vanilla frosting
  • 1 teaspoon orange extract*
  • zest from one orange, optional

Preparation:

Preheat oven to 350 degrees F. Grease one 9x13 pan. Combine cake mix, Mandarin oranges including juice, 4 eggs and butter. Beat on low for a few minutes until all ingredients are wet. Continue to mix for an additional two minutes on medium until well combined. Pour mixture into pan. Bake for 20 to 25 minutes or until cake tester comes out clean. Cool completely in pan on wire rack.

For frosting, open can of frosting and stir with knife or cake spatula. Stir in orange extract. Frost cake and sprinkle orange zest over top for optional decoration.

Notes in the Margin:
*Juice from your zested orange may be used instead of the extract. If the frosting becomes too thin, add sifted powdered sugar, a tablespoon at a time, to get the right spreading consistency.
