Fruit Surprise Cheesecake

I you prefer dense cheesecakes this recipe is for you. It is made with 5 8-ounce bars of cream cheese.

Prep Time: 4 hours

Cook Time: 40 minutes

Total Time: 4 hours, 40 minutes

Ingredients:

  • 1-1/2 cups graham cracker crumbs, apprx. 21 crackers
  • 1-1/4 cup sugar, divided
  • 6 tablespoons butter, melted
  • 5 8-ounce packages cream cheese, softened
  • 3 tablespoons flour
  • 1 tablespoon vanilla*
  • 1 cup sour cream
  • 4 eggs
  • 1/3 cup seedless fruit jam or flavored curd

Preparation:

The day before or early in the day, preheat the oven to 325 degrees F. (25 degrees F less if using glass or dark metal pan). Lightly grease (spray and wipe out) 9x13 pan. In food processor, process graham crackers. Add 1/4 cup sugar. Mix. Run processor while drizzling in butter. Press crust mixture into pan. Bake for 12-15 minutes. While baking, beat cream cheese and 1 cup sugar. Add flour and vanilla*. Mix well. Add sour cream. Mix. Add eggs one at a time. Combine until just combined. Don't over beat. Pour mix over crust. Drop tablespoons of jam on top. Draw knife through mixture to create marble effect. Bake for 40 minutes or until done. Center should wiggle a little. Completely cool on wire rack. Refrigerate 4 hours or overnight.

*When making curd flavored cheesecakes, juice and zest of 1 lemon or orange maybe used instead.
