Gourmet Kumquat Cookies

Here is a recipe for Gourmet Kumquat Cookies which also have white chocolate chips and macadamia nuts in them.

Prep Time: 25 minutes

Cook Time: 15 minutes

Total Time: 40 minutes

Ingredients:

  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2/3 cup butter, softened
  • 2/3 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla
  • 2/3 cup kumquat puree*
  • 2/3 cup white chocolate chips
  • 1/2 cup coarsely chopped macadamia nuts
  • 1 cup rolled oats

Preparation:

Preheat oven to 375 degrees F. Lightly grease cookie sheet(s). In a medium-sized bowl with a wire whisk, combine flour, baking soda and salt. In large bowl, cream butter and sugar. Add eggs one at a time. Beat in vanilla and *Kumquat Puree . Gradually add flour mixture beating until combined. Hand stir-in chips, nuts and oats.

Drop by tablespoonful onto prepared cookie sheet(s). Baked for 10 to 15 minutes or until golden brown.

Makes approximately 2 dozen cookies.
