Spicy Pumpkin Pound Cake

Please enjoy this recipe for Spicy Pumpkin Pound Cake. I like mine topped with whipped cream.

Prep Time: 20 minutes

Cook Time: 1 hour

Total Time: 1 hour, 20 minutes

Ingredients:

  • 3 cups flour
  • 1/2 teaspoon salt
  • 2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 2 teaspoons cinnamon*
  • 1 teaspoon freshly ground nutmeg*
  • 1/2 teaspoon allspice*
  • 1/2 teaspoon ground cloves*
  • 1/2 teaspoon ground ginger*
  • ----
  • 1 cup butter, softened
  • 3 cups sugar
  • 3 eggs
  • ----
  • 1 (16 oz.) can pumpkin

Preparation:

Preheat oven to 350 degrees. Grease and flour 10-inch bundt/tube pan or 2- 9x5-inch loaf pans.

Combine 1 set of ingredients in large mixing bowl with wire whisk. Set aside. Cream together butter and sugar. Add eggs, one at a time, beating well after each addition. Gradually add flour mixture. Mix in pumpkin until well combined.

Pour batter into prepared pans. Bake tube pan for 1 hour or loaf pans for 45 to 50 minutes.

Cool in pans for 10 minutes. Remove to wire racks for complete cooling. Serve plain or topped with whipped cream.

Notes in margin: * May use 4-1/2 teaspoons pumpkin pie, apple pie or mixed spice instead.
