Apple Cake

More than one apple is used to make this cake mix recipe for this delicious Apple Cake. I served it to company one night and they wanted it for breakfast the next day.

Prep Time: 20 minutes

Cook Time: 40 minutes

Total Time: 60 minutes

Ingredients:

  • Cake:
  • 1/4 teaspoon cinnamon*
  • 1/4 teaspoon ground cloves*
  • 1/4 teaspoon ground nutmeg*
  • 2 medium or 3 small apples, cored, peeled and thinly sliced
  • ----
  • One 18 ounce box yellow or white cake mix
  • 1 cup apple juice or cider
  • 2 eggs
  • 1/4 cup vegetable oil
  • 3/4 cup apple butter or sauce
  • ----
  • Crumb or Streusel Topping:
  • 2/3 cup flour
  • 2/3 cup brown sugar
  • 1/4 teaspoon cinnamon*
  • 1/4 teaspoon ground cloves*
  • 1/4 teaspoon nutmeg*
  • 2/3 cup cold butter

Preparation:

Preheat oven to 350 degrees F. Grease 9x13 baking pan. Measure first 3 ingredients in a resealable plastic bag. Add apple slices and shake. Set aside. Combine rest of cake ingredients and mix until moistened. Then mix on medium for 2 more minutes. Pour cake batter into prepared pan. Place apple slices in rows over top of cake batter. Press down each slice until just the top shows. Bake for 20 minutes.

While cake is baking, prepare crumb/streusel topping. Place all ingredients in a mixing bowl. Use a pastry blender to combine ingredients. When finished, mixture should resemble coarse crumbs. Carefully, remove cake from oven and sprinkle crumbs over the top. Return to oven and bake for another 20 minutes. Place on rack for cooling.

Notes in the Margin:

Pumpkin, Apple Pie or Mixed Spice may be substituted for the total amount of the cinnamon, ground cloves and nutmeg.
