Blackberry and Apple Crumble

Here is a recipe for Blackberry and Apple Crumble as submitted by Fiona Moore in the Best Old Fashioned Baking Recipe Contest.

Prep Time: 25 minutes

Cook Time: 40 minutes

Total Time: 65 minutes

Ingredients:

  • 1/2 pound (1-3/4 cups) blackberries (picked from hedgerow)
  • 1 pound (3 or 4 medium) apples (windfalls will do)
  • 1/4 pound (1/2 cup) shelled and husked hazelnuts
  • 6 ounces (3/4 cup) whole meal flour (whole wheat)
  • 4 ounces (1/2 cup packed) soft brown sugar
  • 4 ounces (1/2 cup) butter

Preparation:

Wash and hull Blackberries. Peel, core and thickly slice Apples. Finely chop hazel nuts. Rub together flour and butter and stir in sugar (can all be put in food processor for this) stir in nuts. Butter shallow casserole dish and layer blackberries and apples (you can add a sprinkle of sugar at this stage but I add a sprig of Sweet Cicely) Top with Crumble topping and bake in 180 degrees centigrade/Gas mark 4/5 oven (350 degrees F.) for 30 to 40 minutes until top is lightly browned and crisp and fruit is soft. Serve with fresh cream.
