I used to use a small zester for zesting. Once I found the
Microplane my other zester went into the trash. Using the
Microplane is effortless.
If either zester isn't available, just use a paring knife to peel the lemon. Be sure to not get the pith, or white portion of the lemon. (The white portion is very bitter.) Then cut the lemon peel into very small pieces.
