This Orange Poppy Seed Cake makes a delicious dessert or tasty afternoon treat served with hot tea or coffee. I even caught my husband sneaking a slice before having breakfast.
Zest the orange and set aside zest. Juice the orange into a 2-cup measuring cup. Add enough additional orange juice to make 1-1/2 cups. Set aside.
Preheat oven to 325 degrees F. Grease and flour bundt cake pan. In a large bowl, combine cake mix, powdered orange gelatin, eggs, oil and 1 cup orange juice. Mix with an electric mixer for until just moistened. Continue to mix for 2 minutes. Hand stir in poppy seeds. Pour batter into prepared pan. Bake for 50 to 60 minutes. Remove cake from oven and cool on wire rack for 10 minutes. Remove from pan to rack.
While Orange Poppy Seed Cake is cooling, prepare glaze by melting butter in saucepan. Add remaining 1/2 cup orange juice and powdered sugar. Stir until combined. Cook until mixture boils. Remove from heat and hand stir in 1/2 of orange zest. Place still warm cake on serving plate. Drizzle glaze over cake. Sprinkle top of Orange Poppy Seed Cake with remaining orange zest.
