Baked OatmealThere are a couple of reasons my family and I just love this recipe for Baked Oatmeal. First of all, it's the perfect company dish. Guests are always amazed when this is served on a cold morning. Secondly, this is a recipe with some versatility. You get to choose which fruit or fruit combination goes in this dish. I've listed some of our favorites at the bottom of the recipe.

Pumpkin Bars with Cream Cheese

Pumpkin Bars with Cream Cheese Frosting is perfect for those fall gatherings.

Prep Time: 25 minutes

Cook Time: 25 minutes

Ingredients:

  • 4 eggs
  • 1 cup vegetable oil
  • 2 cups sugar
  • 1 can (15 ounces) pumpkin
  • 2 cups flour
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon*
  • 1/2 teaspoon ginger*
  • 1/2 teaspoon ground cloves*
  • 1/2 teaspoon ground nutmeg*
  • 4 ounces cream cheese, softened
  • 1/2 cup butter, softened
  • 1 teaspoon vanilla
  • 2-1/4 cups powdered sugar

Preparation:

Preheat oven to 350 degrees F. Combine first four ingredients in a large bowl. Using a wire whisk, mix together flour, baking powder, baking soda, salt, and spices; add to pumpkin mixture and mix well. Pour into greased and floured jelly roll pan. Bake for 20 to 25 minutes. Cool. Beat together the cream cheese, butter, and vanilla extract, gradually add powdered sugar. Frost cooled cake. Cut into bars.

* May substitute all these ingredients with 1 tablespoon and 1/2 teaspoon pumpkin pie spice.

Baking blind means baking an unfilled pie crust. Already baked pie crusts are used with unbaked pies like cream and ice cream pies. Use the following methods to insure your crust will hold its shape during baking.

Begin by making your homemade pie crust. In a medium to large mixing bowl, cut the chilled shortening into the chilled flour/salt mixture with a pastry blender. Two knives being used in a scissors fashion will work as well. A food processor or stand mixer may also be used according to the appliance manual. The mixture should resemble little pearls.

1 refrigerated ready-to-bake pie crust

TOPPING:
1/2 cup plus 2 tablespoons all-purpose flour
1/2 cup packed light-brown sugar
1/3 cup granulated sugar
1 teaspoon ground cinnamon
1 stick (1/2 cup) cold butter, cut in small pieces

FILLING:
7 medium to large tart apples (about 3-1/4 lb), such as Granny Smith, Pippins or Greenings
1 tablespoon lemon juice
1/2 cup granulated sugar
3 tablespoons all-purpose flour
1/2 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg

1. Have ready a 9-in. pie plate and a baking sheet. Place oven rack in lowest position in oven. Heat oven to 450°F.

2. Line pie plate with pie crust as package directs. Flute or crimp edge.

3. Topping: Mix flour, sugars and cinnamon in a medium bowl. Cut in butter (or rub in with fingertips) until mixture forms moist, coarse crumbs that clump together easily.

4. Filling: Peel, halve and core apples. Cut in 1/8-in.-thick slices by hand (or with the slicing disk of a food processor). Place in a large bowl, add lemon juice and toss to coat. Mix remaining ingredients in a small bowl, sprinkle over apple slices and toss to coat.

5. Layer apple slices in pie shell, mounding them higher in center. Pat topping evenly over apples to form a top crust. Place pie on the baking sheet to catch any drips.

6. Bake 15 minutes. Reduce oven temperature to 350°F and bake 45 minutes longer or until a skewer meets some resistance when center of pie is pierced (apples will continue cooking after pie is removed from oven) and topping is golden brown. (If topping browns too quickly, drape a piece of foil loosely over the pie.) Cool completely on a wire rack before serving.

Serve with whipped or ice cream.

In doing a lattice crust, you could place half of pastry strips going in one direction, and then the other. But if you take time to weave the pastry strips, you'll end up with a better looking pie. To begin weaving your pastry strips, place the third strip of pastry. Be sure to lift the opposite piece of pastry to lay it on top.

Easy Mincemeat Pie

Easy Mincemeat Pie is made with store-bought mincemeat.

Prep Time: 24 hours, 25 minutes

Cook Time: 40 minutes

Total Time: 24 hours, 65 minutes

Ingredients:

  • 1-8 ounce jar preparted mincemeat (apprx. 2 cups)
  • 1-1/2 cups chopped walnuts, lightly toasted
  • 2 large apples, peeled, cored and diced
  • 1/2 cup packed brown sugar
  • 1/4 cup rum or brandy
  • 1 tablespoon fresh lemon juice
  • pastry for double crust 9-inch pie

Preparation:

The day before:
Combine all ingredients, except pastry, until well mixed. Cover and refrigerate overnight.

The Next Day:
Preheat oven to 425 degrees F. Line pie plate with pastry. Prick with fork or fill with pie weights. Prebake for 15 minutes. Remove from oven. Lower oven temperature to 350 degrees F. Add undrained mincemeat to pie crust. For top crust, either prepare a lattice top or a full crust with slits. Seal and flute edges. Brush top with milk and sprinkle with sugar. Bake for 30 to 40 minutes or until golden. Serve warm with flavored whipped cream.
